ITALIAN SWISS STEAK IN THE PRESSURE COOKER
Steps:
- Set Pressure Cooker on Saute mode. Add butter let melt half way. Add cut up round steak and saute on both sides until lightly brown. Remove from Pot and set aside. DO NOT drain the butter and drippings from the meat.
- Add tomato puree, and one can of water. Add basil, garlic, peppers and onions
- Set Pot on High Pressure 10 minutes. YES, peppers and all. They will not disappear, I promise. Quick release.
- Add meat back to the pot and tomato paste, and 1/4 cup water. Set pot on High Pressure for 10 minutes. Let natural release.
- Serve over rice, or noodles of choice, top with mozzarella cheese and parm. ENJOY. NOTE: You will have sauce left over that you can use the next day for another recipe, or freeze for another time.

- Sprinkle steak with salt and pepper. Place onion in a 6-qt. electric pressure cooker. Top with celery, tomato sauce and steak. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 20 minutes. Let pressure release naturally for 5 minutes; quick-release any remaining pressure. A thermometer inserted in steak should read at least 145°.

SWISS STEAK WITH PRESSURE COOKER
This recipe has been used and loved for many years in my family. The meat comes out so very tender! My husband, who a real hearty meat & potatoes man absolutely loves this. This makes its own gravy to serve over the meat and with mashed potatoes or rice.

- 1. Mix flour,salt, pepper & any additional seasonings to your taste. Dredge meat, cut in portion size pieces, in the flour mixture.
- 2. Put enough oil in the bottom pressure cooker and heat. Add floured meat pieces and brown on both sides. Drain if there seems to be an excess amount of oil left after browning, but usually not necessary, and return meat to cooker.
- 3. Mix mushroom soup and tomato soup with the water in a bowl. Whisk well to combine and make smooth. Pour over the meat that is in the cooker.
- 4. Put the pressure cooker on and let seal. Cook for 20 minutes while under pressure. Remove from heat and let pressure drop completely before trying to open lid.
- 5. The soups should have thickened during the cooking time to make a nice gravy to put over the meat and potatoes - which I cook while the meat is in the pressure cooker.
INSTANT POT® SWISS STEAK

- Dry steak well with paper towels and cut into four 4-inch pieces. Season with salt and pepper.
- Place flour into a shallow bowl. Dredge steak pieces in flour, shaking off excess.
- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Once the pot is hot, add 1 tablespoon avocado oil. Brown the steak in batches, so you don't crowd the pot, 2 minutes per side. Transfer browned meat to a warm plate and set aside.
- Add 1 tablespoon of avocado oil to the pot and cook onion, carrot, celery, and bell pepper until onions are soft and translucent, 3 to 4 minutes. Stir in garlic and cook until fragrant, about 1 minute. Deglaze the pot with Merlot. Mix in tomatoes, Worcestershire sauce, 1 teaspoon salt, oregano, and paprika. Return steak to the pot and push down into the tomato mixture.
- Close and lock the lid. Select manual pressure according to manufacturer's instructions; set timer for 30 minutes. Allow 10 to 15 minutes for pressure to build.
- Allow pressure to release naturally according to manufacturer's instructions for 5 minutes. Carefully open the valve to release the remaining pressure, about 5 minutes more. Unlock and remove the lid.
