PENNE PASTA WITH PEAS AND PROSCIUTTO

Penne Pasta with Peas and Prosciutto image

Inspired by depression-era pasta and peas, I decided to do my own take on this meager macaroni. I hope I'm wrong, but I think the next big thing in the food world is going to be these types of 'frugal fabulous' recipes.

Categories     Meat and Poultry Recipes     Pork

Time 35m

Yield 4

Number Of Ingredients 14

1 tablespoon olive oil
1 onion, diced
3 thin slices prosciutto, chopped
3 cloves garlic, sliced
1 teaspoon salt
1 pinch red pepper flakes, or to taste
freshly ground black pepper to taste
6 cups chicken broth
½ cup tomato sauce
1 teaspoon dried thyme
1 pound frozen peas, thawed
1 (15 ounce) can white beans, drained
1 (14.5 ounce) package penne pasta
½ cup grated Parmesan cheese

Steps:

  • Heat oil in a large saucepan over medium-high heat. Saute onion and prosciutto in hot oil until onion is soft, 5 to 6 minutes. Stir garlic, salt, red pepper flakes, and black pepper into onion mixture; saute until fragrant, about 1 minute.
  • Pour chicken broth, tomato sauce, and thyme into onion mixture. Add peas and beans; bring to a boil. Stir penne into broth mixture and cook for 7 minutes; remove from heat.
  • Stir Parmesan cheese into penne mixture, cover the saucepan with a lid, and let sit until the pasta absorbs most of the liquid, about 5 minutes.

Aglio e Olio with Peas and Prosciutto image

Provided by Giada De Laurentiis

Time 25m

Yield 6 servings

Number Of Ingredients 8

Kosher salt
1/2 cup olive oil, plus more for serving, optional
4 ounces thinly sliced prosciutto, cut across into 1/4-inch slices
6 cloves garlic, smashed and peeled
1 1/2 cups frozen peas, thawed
3/4 teaspoon crushed red pepper flakes
1 pound fusilli lunghi or cavatappi pasta
2 cups freshly grated Parmigiano-Reggiano, plus more for serving

Steps:

  • Bring a large pot of salted water to a boil.
  • Heat a large skillet over medium-high heat. Add the oil and heat. Add the chopped prosciutto and cook, stirring constantly, until crispy and deep golden brown, about 4 minutes. Using a slotted spoon, remove the prosciutto to a paper towel-lined plate. Reduce the heat to low. Add the garlic to the oil and cook, stirring often, until lightly golden, about 3 minutes. Add the peas, pepper flakes and 1/8 teaspoon salt and turn off the heat.
  • Add the pasta to the boiling salted water and cook for 2 minutes less than package directions, about 9 minutes.
  • Return the skillet with the garlic oil to medium heat. Using tongs, remove the pasta from the water and add directly to the skillet with the oil. Sprinkle the bare pasta with 1 cup Parmigiano-Reggiano. Add 1/2 cup pasta water and toss well to coat the pasta and form a creamy sauce. Add the remaining 1 cup Parmigiano-Reggiano and up to 1/2 cup more pasta water to maintain a creamy sauce. Serve sprinkled with the crispy prosciutto, more Parmigiano-Reggiano and another drizzle of olive oil, if desired.

  • In a pot, set water to boil for pasta. When boiling, add a pinch of salt and cook according to package instructions, about 12 minutes. BEFORE draining, reserve a cup of the starchy pasta cooking water. A coffee cup works well for this.
  • Meanwhile, in the time it takes to cook the pasta, make the sauce. In a large round bottomed pan or pot, big enough to toss the pasta with the sauce, melt butter over medium heat. Saute bell pepper and prosciutto about 5 minutes, stirring often. Add garlic and season with salt and pepper. Stir well to combine.
  • Add cream and reduce heat to medium low. Simmer until the sauce starts to reduce and thicken and the pasta is ready, about 10 minutes.
  • Add the frozen peas, drained pasta, and Parmesan cheese to the sauce and mix well to combine with the burner still on low. Add in the pasta water a ¼ cup at a time as needed to reach the desired consistency, (total about ¼ to 1 cup). Turn off heat and serve with more Parmesan cheese and a side salad.

  • First, cut the slices of ham into small pieces; then finely Mince the onion. In a large saucepan, sauté the onion in olive oil over medium / low heat. Stir the onion with a spoon to avoid burning, until it is soft and translucent, then add the double concentrated tomato paste and continue cooking for 5 minutes
  • Add the prosciutto with the onions and mix them cooking for a couple of minutes, then raise the heat to maximum, add the wine and continue cooking over high heat stir-frying until all the alcohol has evaporated . Now, lower the heat to medium level, and add the peas, and stir-fry for 5 minutes. When the peas will be well seasoned, add 3 tablespoons of hot vegetable stock, lower the heat at minimum, cover the saucepan with a lid and cook for about 45 minutes, until the peas are cooked but not mushy.
  • Meanwhile the sauce is cooking, heat 5 qt of salt water in a large pot. When the sauce is ready, and the water starts to boil, pour the pasta and cook it "al dente", then drain and add it into the sauce. Stir-fry the pasta with the sauce for a few minutes on high heat, then serve it piping on the table.
  • For this recipe I have chosen the Penne, a classic Italian pasta; But there are other types of pasta perfect for this recipe; For example Sedanini, small macaroni long and thin; the Garganelli, a traditional Emilian pasta that can be found in the best Italian grocery; Or if it's Sunday, you can prepare fabulous tagliatelle, you will see what a success!
