Categories     Pastries

Time 43m

Number Of Ingredients 5

16 oz. - cream cheese
4 cups - cold heavy cream
1 cup - powdered sugar ((regular sugar works well too))
½ tsp. - vanilla extract
Pinch of sea salt

Steps:

  • Preheat oven to 400 F.
  • Unfold and place thawed one sheet at the time of dough onto a dusted with flour working surface.
  • Roll out the dough into a square. Use a pizza cutter to slice the dough into ¾ inch wide strips.
  • Place them onto a greased pan.
  • Bake then in preheated oven for 18 minutes or until light golden brown.
  • Remove from the oven.
  • Remove each horn from the mold hot to prevent from horn sticking to the mold. Use a towel to hold the end of the mold so you don't burn your hands. Let the horns cool completely before filling with cream.
  • Beat softened cream cheese until smooth and creamy in texture.
  • Add powdered sugar and mix it together increasing mixer speed gradually (unless you want to stand in a dust cloud of powdered sugar) until all combined and smooth to texture with no lumps.
  • Scrape down the mixer bowl to remove stuck cream cheese and beat on high until thickens.
  • Scrape down the mixer bowl again, to make sure all the cream cheese is removed from the walls of the bowl and beat the cream once more for about 15 seconds.
  • Finally, add liquid heavy whipping cream to the cream cheese mixture, start beating on low gradually increasing mixing speed. As the heavy whipping cream gets combined with the cream cheese it will liquefy more. The frosting will thicken during the mixing process. Do not overbeat the frosting! As soon as it starts to hold its shape the frosting is ready.
  • Fill a decorating bag and Wilton 32 attachment with cream halfway (it's easier that way to squeeze the cream into horns). Pipe the cream into each end of the horn.
  • Place them into an airtight container and refrigerate for at least 8 hours. Dust horns with powdered sugar before serving. If you like horns crunchy, omit to refrigerate part.

ITALIAN CREAM STUFFED CANNONCINI (PUFF PASTRY HORNS)

Italian Cream Stuffed Cannoncini (Puff Pastry Horns) image

Crispy and buttery puff pastry cannoncini filled with velvety and rich custard cream

Categories     lunch, salad

Time 1h45m

Number Of Ingredients 9

3 egg yolks
3 tablespoons (30 gr) of all-purpose flour
1/2 cup (100 gr) of sugar
1 teaspoon of vanilla extract
8 oz (235 ml) of milk
1 sheet of puff pastry, defrosted (about 8 oz, 225 gr)
1/4 cup (50 gr) of sugar
1 egg (for egg wash)
powdered sugar to decorate

Steps:

  • Warm up the milk until hot (not boiling).
  • In a medium sized pan, whisk the egg yolks with the sugar, vanilla extract and flour, until light and fluffy.
  • Add the milk some at a time while whisking, making sure there are no lumps.
  • Place the pan over medium heat and stir continuously until it reaches a slow boil. The cream will thicken, so be careful not to let it stick to the bottom. Lower the flame and cook for a couple of more minutes, until you reach the desire thickness.
  • Pour the cream in a glass bowl, cover with plastic wrap and let it cool down. Refrigerate for at least one hour.
  • Preheat the oven to 400°F (200°C).
  • Sprinkle some sugar on the counter and on top of the puff pastry and roll it out to a rectangle about 9 by 12 inches.
  • Cut into 12 stripes (about 1 inch thick). Easy way to do it: cut the pastry in three parts, and then each part into four strips.
  • Roll each strip onto a horn mold (conical in shape). The pastry has to overlap (about half of the length).
  • Place on a baking sheet lined with parchment paper with seem (end of the strip) side down.
  • Beat one egg with one tablespoon of water. Brush lightly each pastry cone with the egg wash.
  • Make sure you keep the egg wash away from the mold. It will make it harder to remove the pastry horn from the mold once baked.
  • Bake at 400°F (200 °C) for about 15-20 minutes until golden on top.
  • Let them cool down for a couple of minutes and gently remove from the mold. If the pastry sticks to the mold, you can press in the mold a little (to make the circumference smaller) and very gently turn it inside the pastry until it comes off.
  • Before serving, fill with the cream using a piping bag. Sprinkle with powdered sugar if you like, and enjoy!

Yield 16 cookies

Number Of Ingredients 14

3 tablespoons warm water (110 to 115 degrees F)
4 cups flour
1/2 teaspoon salt
1 1/4 cups butter, softened
3 egg yolks
1/2 cup sour cream
1 teaspoon vanilla extract
powdered sugar
3 egg whites
1 cup granulated sugar
1/2 cup finely chopped pecans
1 teaspoon vanilla extract
powdered sugar

  • Cut each circle of dough into 16 triangular pieces or wedges.
  • For filling: Beat egg whites until foamy. Gradually add sugar; beat until stiff. Fold in pecans and vanilla.
  • Spread 1/2 teaspoon filling on each triangle of dough; roll up, beginning with largest end. Place roll, small end down, on greased cookie sheet.
  • Bake in a 350 degrees F oven 10 to 12 minutes, or until slightly browned on bottom. Immediately transfer to racks to cool.
  • Sift powdered sugar over cooled cookies. Store in airtight container. Yield: About 10 dozen cookies.

OLD WORLD BUTTER HORNS

Old World Butter Horns image

Light and flaky filled cookie. One of my mother's dear friends, a woman of German heritage, shared this recipe with her more than 40 years ago. At the time, it had been in her family for more than 100 years! It has always been my favorite cookie for special occasions and still is. We use two variations for the filling: the traditional orange date nut filling provided here or, mincemeat, a family favorite, during the holiday season. The filled cookies freeze well and can be baked off straight from the freezer. For best results, be certain that the dough is thoroughly chilled before rolling out and that the filling has cooled completely before use.

  • Roll each ball into a 8-10 inch circle on a well floured surface.
