3 cups uncooked penne pasta (9 ounces)
1 pound uncooked Italian sausage links
1/2 cup Progresso™ beef flavored broth (from 32-ounce carton)
1 medium yellow summer squash, cut lengthwise in half, then cut crosswise into 1/4-inch slices
2 cups grape or cherry tomatoes, cut lengthwise in half
1/4 cup chopped fresh or 1 tablespoon dried basil leaves
6 green onions, cut into 1/2-inch pieces (1/2 cup)
2 tablespoons olive or vegetable oil

Steps:

  • Cook and drain pasta as directed on package.
  • Meanwhile, cut sausage crosswise into 1/4-inch slices. Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Add sausage; stir-fry 4 to 6 minutes or until brown. Stir in broth. Cover and cook over medium heat 5 minutes.
  • Stir in squash, tomatoes and 2 tablespoons of the basil. Heat to boiling; reduce heat. Cover and simmer 5 minutes, stirring occasionally. Stir in onions. Simmer uncovered 1 minute.
  • Toss pasta, oil and remaining 2 tablespoons basil. Divide pasta among bowls. Top with sausage mixture.

This penne pasta recipe includes a quick and easy pasta sauce recipe, rich with garlic and herbs. Surprisingly, it doesn't take hours to simmer, but really is a 30 minute meal.

1 pound Italian sausage (hot or sweet )
1 pound penne pasta ( or cork-screw pasta)
1 teaspoon vegetable oil (or olive oil)
1 onion (large chopped)
3 cloves garlic (minced)
28 ounces canned diced tomatoes (undrained)
2 teaspoons basil (dried)
1 teaspoon oregano (dried)
1/2 cup parsley (chopped fresh, optional)
Pepper to taste
2 tablespoons parmesan cheese (freshly grated)

Steps:

  • In a large pot of boiling water, cook the pasta until tender, but firm. Drain and return the pasta to the pot.
  • While the pasta is cooking, heat the oil over medium heat in a non-stick pan. Cook the sausage until it is just a bit pink in the centre, about 15-20 minutes. Drain well and cut it into thin round slices. Cook the onion until tender, about 5 minutes. Add the garlic, tomatoes, basil, oregano and the sausage slices. Simmer uncovered for 10 minutes. Pour the mixture over the cooked and drained pasta and toss to mix it all together.

1 green bell pepper (chopped)
2 tablespoon tomato paste
28 ounce diced tomatoes (canned)

1 teaspoon basil (dried)
1/2 teaspoon thyme (dried)
1/2 teaspoon fennel seed

Steps:

  • Cook Pasta: Cook the pasta according to package instructions. Drain and transfer to a large bowl.
  • Preheat oven to 350 F degrees.
  • Make Sauce: Crumble the sausage meat into a large skillet over medium heat and brown, stirring often for about 5 minutes, until it's no longer pink.
  • Add the onion, pepper and continue cooking for another 3 minutes, or until the onion and pepper have softened and the onion is translucent.
  • Stir in the tomatoes, oregano, tomato paste, basil, thyme, fennel seeds, salt and pepper. Add the chicken broth and stir. Bring to a boil, reduce the heat and cook for another 20 minutes, stirring often as needed.
  • Stir in the peas. Remove the sauce from heat.
  • Toss penne with sauce: Pour the sauce over the cooked pasta and stir. Stir in about 1 cup of cheese.
  • Assemble: Transfer the pasta to a large casserole dish. Top with remaining mozzarella cheese.
  • Bake: Transfer the casserole dish to the preheated oven and bake until the cheese has melted and the casserole is bubbling, for about 20 minutes.

1 lb sweet Italian sausage, casings removed, then discarded
1 red bell pepper, cut into 1/2-inch pieces

1 (28- to 32-oz) can whole tomatoes in juice
1/4 teaspoon black pepper
1 lb penne

  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then add sausage meat and cook, stirring to break up large chunks, until meat is browned and just cooked through, 5 to 7 minutes. Transfer meat to a bowl using a slotted spoon and add bell pepper and garlic to fat in skillet. Reduce heat to moderate and cook, stirring occasionally, until pepper is just tender and garlic is golden, 5 to 6 minutes.

one 14.5-ounce can petite diced tomatoes (I used Hunt's no-salt added, tomato basil oregano flavor)
2 1/2 cups water
2 cups penne pasta (another small-shaped pasta may be substituted)

2/3 to 3/4 cup freshly grated Parmesan cheese
1/2 cup loosely packed fresh basil, chiffonaded
freshly ground black pepper, to taste if desired

Steps:

  • To a large skillet at least 4-inches deep or large pot, add the sausage, 1 to 2 tablespoons olive oil if desired, and brown sausage over medium high heat. Crumble sausage as it cooks; do not drain.
  • Add the garlic, optional oregano, stir, and cook for about 1 minute, or until fragrant; stir nearly constantly.

  • In a saucepan cook the sausage until almost finished and remove from the saucepan. To the saucepan add 1/4 cup of olive oil and heat. Then add 1 cup of onions, oregano and garlic and saute for 2 minutes. Then add 6 cups of tomatoes, parsley and 1/4 cup of basil. Simmer for 5 minutes than add back to the sausage and simmer for 10 minutes then add the peas. Cook the pasta in a large pot of boiling salted water until al dente. Italian Sausage Pasta with Cherry Tomatoes (30 Minute Dinner!) image

This 30 minute weeknight meal comes together so easy! Italian Sausage Pasta with Cherry tomatoes is perfect for using up those summer vegetables coming from your garden! Swap the veggies for whatever you have on hand. It's absolutely delicious; who can say no to sausage and pasta?

water and 1/2 tablespoon salt (for pasta)
3 cups pasta (about 9 ounces, any kind (I used cavatappi))
2 tablespoons olive oil
1 pound Italian sausage links
1-2 teaspoons oil
1 cup good quality beef broth
2 medium yellow summer squash
2 cup cherry tomatoes
1/2 teaspoon salt
1/4 cup fresh basil (chopped and divided)
1/2 cup green onions (chopped)
more fresh basil (to garnish)

Steps:

  • Bring a medium pot of water to boil. Add 1/2 tablespoon salt (it should taste like the ocean). When it boils, add the pasta and stir occasionally until al dente (check the pasta package instructions).
  • When the pasta is al dente, drain and return to the pot. Add 2 tablespoons olive oil, stir, and set aside (keep warm by covering with lid).
  • Meanwhile, prepare the sausage by slicing is crosswise into large coin shapes.* This is kind of a pain because the sausage kind of wants to spill out of the casing and mush about. But I really like the crispy edges that form when you use the slicing method. I've found that slicing in one confident motion with a sharp non-serrated chef's knife works best for me.
  • Heat a large 12 inch skillet over medium high heat. When the pan is hot, add 1 or 2 teaspoons oil, just enough to coat the bottom of the pan. Add the sausage coins one at a time, placing them in the pan with space in between each one. This will make sure that each one gets seared and brown, instead of steaming (which is what would happen if you dumped it all in together.)
  • Sear the sausage for 3-4 minutes, until the bottoms are nice and brown, then use tongs to flip each one.
  • Sear the other sides for 2-3 minutes until brown.
  • Add 1 cup beef broth (or 1 cup water + 1 teaspoon Better Than Beef Base), stir it all together, and cover. Turn the heat to medium and set a timer for 5 minutes.
  • Chop up the veggies. Slice the yellow squash lengthwise (the long way) and then dice into half rounds. Slice half of the cherry tomatoes in half, or all of them (I prefer to leave some whole). Chop 1/4 cup of basil. Add half of the basil to the pasta that you set aside earlier.
  • Stir the squash, tomatoes, and remaining basil into the pan with the sausage. Turn the heat to high and bring to a boil. Once it boils, cover and reduce the heat to medium. Set a timer for 5 minutes.
  • Remove the lid and add 1/2 cup chopped green onions. Turn off the heat.
  • Serve in shallow pasta bowls, spooned over the top of the pasta with plenty of broth.
  • Garnish with more fresh basil. This is also great with fresh Parmesan on top, but it's not necessary.

This recipe is from the Milk Calendar which I receive annually. It is a one pot recipe which I made often when I was working, and still come back to when I need a "comfort food" dish. The ingredients can be varied to suit your family's taste. I don't use the chili powder and usually let simmer for about 25 min over med low heat with occasional stirring.

2 cups milk
1 (19 ounce) can diced tomatoes (I used seasoned Italian style 540ml)
250 g penne pasta
1 cup part-skim mozzarella cheese (grated)

Steps:

  • Cut sausage into 1" pieces, easier if slightly frozen.
  • In large fry pan (I used electric) cook sausage over medium-high meat until browned on all sides.
  • Add onion, garlic, Italian seasoning, crushed red pepper and chili powder if using.
  • Cook until onion is tender.
  • Stir in cornstarch.
  • Add milk, stir until mixture comes to a boil and thickens.
  • Add tomatoes and penne pasta.
  • Return to boil, cover and simmer 15 min or until pasta is tender or to your preference.
  • Stir in mozzarella cheese and serve.

  • Add in the fresh basil; cover and simmer until the veggies are very tender, stirring occasionally.
  • Continue to simmer for about 45-50 minutes, adding in more broth by about 1/4 cup if the liquid evaporates to quickly, and cook until the Ragu thickens to desired consistency.
  • Season with salt and pepper to taste.
  • Cook the pasta in a large pot of boiling salted water until just firm-tender; drain but reserve about 1/2 cup cooking water.
  • Return the pasta to the pot; add in the Ragu; mix to combine.
  • Add in about 1/2 - 3/4 cup Parmesan cheese and 2-3 tablespoons olive oil; mix to combine.
  • If the mixture seems too dry then add in some of the reserved cooking water from the pasta.
  • Season with more salt and pepper.
  • Divide on plates and top with more cheese.

1 lb Italian sausage
1 lb penne pasta
1 teaspoon olive oil
1 large onion, chopped
3 garlic cloves, minced
28 ounces tomatoes, undrained and coursely chopped
2 teaspoons dried basil
1 teaspoon dried oregano
1/2 cup fresh parsley, chopped (I don't always use)
pepper
2 tablespoons parmesan cheese, freshly grated (optional)

Steps:

  • In skillet, cook sausage over medium heat until no longer pink in centre, about 15 to 20 minutes. (I boil first to get rid of some of the fat).
  • Drain well; cut into thin round slices.
  • In large pot of boiling water, cook pasta until tender but firm; drain and return to pot.
  • In nonstick pan, heat oil over medium heat; cook onions until tender, about 5 minutes.
  • Add garlic, tomatoes, basil and oregano;.
  • Simmer uncovered for 10 minutes.
  • Add cooked sausage.
  • pour over pasta; toss to mix.
  • Sprinkle with parsley, pepper to taste and parmesan if using.
  • toss again and serve.

3/4 lb Hot Italian pork sausage (broken into pieces )
1/2 onion (minced)
1 1/4 cup water
1 can Diced Tomatoes (Seasoned with basil, garlic, oregano, undrained)
1 cup tomato sauce
8 oz penne pasta (uncooked)
1/8 tsp red pepper flakes
1/4 cup parmesan cheese (grated )

Steps:

  • Heat a large skillet over medium-high heat. Add broken sausage and minced onion; cook about 5 minutes. With a wooden spoon keep the sausage in pieces. Drain and return to skillet.
  • Add the undrained tomatoes, sauce, water, red pepper flakes, and penne pasta to the pan. Stir to combine and bring the liquid to a boil. Cover the pan and reduce the heat.
  • Cook for 15 minutes or until pasta is tender.
  • Sprinkle with Parmesan cheese. Serve with more parmesan cheese, if desired.

2 garlic cloves, thinly sliced
1 cup canned diced tomato
salt & freshly ground black pepper
1/2 lb cooked Italian pork sausage (hot, sweet, or a combination)
2 cups penne pasta
1/4 cup chopped basil
2 tablespoons chopped flat leaf parsley

Steps:

  • In a large non-stick skillet, heat the oil.
  • Sauté the onion, bell peppers, and fennel until the vegetables turn golden, 8-10 minutes.
  • Add the garlic and sauté 1-2 minutes longer.
  • Stir in the tomato, salt, and pepper.
  • Reduce the heat and simmer, stirring occasionally.
  • Add the sausage; simmer covered, stirring occasionally, until the flavors are blended, about 20 minutes.
  • If the sauce becomes too dry, add 1-2 tablespoons of water.
  • Meanwhile, cook the penne according to directions; drain.
  • Add the basil, parsley, and penne to the sausage mixture; toss to combine.

1 tablespoon olive oil
1 medium onion, chopped
4 Italian hot sausages, casings removed
1/4 teaspoon dried red pepper flakes
1/3 cup dry red wine
1 28-ounce can crushed tomatoes with added puree
2 teaspoons dried marjoram, crumbled
8 ounces penne pasta
Salt and freshly ground pepper
Freshly grated Parmesan or Romano cheese

Steps:

  • Heat oil in heavy large saucepan over medium heat. Add onion and cook until tender, about 8 minutes. Add sausage and cook until no longer pink, breaking up with fork, about 6 minutes. Stir in pepper flakes. Add wine and boil until absorbed. Mix in crushed tomatoes. Bring to boil, reduce heat and simmer 25 minutes. Stir 2 tablespoons marjoram into sauce.
  • Cook penne in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain well. Return penne to pot. Add half of sauce and stir to coat. Season with salt and pepper. Transfer to large bowl. Serve, passing Parmesan separately. (Freeze remaining sauce up to 2 months in covered container.)
