3 lbs mild Italian sausage, links
enough water, to cover sausage
1 large chopped onion
1 green pepper, sliced
48 ounces chunky spaghetti sauce

Steps:

  • Place water and sausage in a skillet.
  • Bring to a boil for 10 minutes.
  • Place sausage without water in crock pot.
  • Place onion and green pepper on top of sausage and then pour spaghetti sauce over everything.
  • Cook on low for 6 to 8 hours.
  • Serve with your favorite bread.

Italian sausage and vegetables all ready together in a crockpot ready to serve atop a pile of pasta or stuffed into hoagie rolls for sandwiches. A good meal for a big family or just what you need when you've got a hungry crowd over on game day or race day. Easy to halve for a smaller crowd.

4 lbs mild Italian sausage
2 lbs frozen chopped spinach, thawed
2 lbs frozen yellow squash, thawed or 2 lbs fresh yellow squash, sliced
2 onions, quartered and thinly sliced
2 quarts spaghetti sauce (I prefer Classico)
1 lb bow tie pasta, cooked

Steps:

  • Prick sausage all over.
  • Put sausage into large pot, cover with cold water, and simmer for 10 minutes to extract excess grease. This can be done the night before.
  • In 6-quart oval crockpot layer half the sausage and half of each other ingredient. Repeat.
  • Cook on high for 3 hours then on low for 3-4 hours.
  • Serve over favorite pasta (I used bowties tonight), topped with parmesan. Its low-carb if you control the pasta quantities.

1 -1 1/2 lb italian link sausage, cut in 1 inch chunks
2 garlic cloves, minced
3 onions, chopped
1 (28 ounce) can whole tomatoes, mashed
2 (14 ounce) cans beef broth
1 teaspoon basil
1/2 teaspoon oregano
1 tablespoon fresh parsley, chopped
1 green bell pepper, seeded and chopped
2 zucchini, sliced
1 -2 cup water
parmesan cheese

Steps:

  • In skillet, brown sausage; drain well.
  • Add all ingredients except cheese to crock pot; stir well.
  • Cover and cook on low for 12-14 hours.
  • Serve topped with cheese.

1 tbsp olive oil
8 Italian sausages
2.8l hot chicken stock
400g penne pasta
2 carrots , thinly sliced
2 onions , thinly sliced
3 celery sticks, thinly sliced
140g green beans , cut into 5cm/2in lengths
handful flat-leaf parsley , chopped

Steps:

  • Heat the oil in a large pan and fry the sausages until brown all over. Pour in the hot chicken stock and simmer with a lid on for 10 mins.
  • Add the pasta to the pan, mix well and bring to the boil. Stir in the carrots and onions, cook for 5 mins, then add the celery and beans, and cook for a further 4 mins. Check that the pasta is cooked - if not, cook for a few minutes longer. Finally, stir in chopped parsley, season, and serve in large bowls.

1 pound Italian sausage
¾ cup chopped onion
1 slice pancetta bacon, diced
1 ¼ teaspoons garlic, minced
1 cube chicken bouillon
4 cups water
2 potatoes, cubed
2 cups kale, rinsed and julienned
⅓ cup heavy cream

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Place sausage links on a sheet pan and bake for 15 to 20 minutes, or until done. Cut each link in half lengthwise, and then into 1/2 inch slices. Set aside for later.
  • In a 4 quart saucepan over medium heat, saute the onions and the pancetta for 10 minutes, or until onions are almost clear. Add the garlic and saute for one more minute. Add the chicken base OR bouillon, water and potatoes and bring to a simmer for 15 minutes. Add the kale, cream and reserved sausage, simmer for 5 more minutes and serve.
