This casserole goes way back. I have altered it a little. from HELEN'S PANTRY

1 pound(s) italian pork sausage
1 1/2 - zucchini cut and cubed with peel on
2 cup(s) green peppers cut into 1 inch pieces
2 cup(s) chopped onion
1 tablespoon(s) chopped garlic
1 large can italian tomatoes peeled
2 cup(s) uncooked rice
2 cup(s) chicken stock
1 cup(s) parmesan cheese

Steps:

  • Cook sausage in a skillet until brown.
  • Cook zucchini, green pepper, onion, and garlic in oil from sausage for 10 minutes. Put in 1/2 cup parmesan cheese rice and mix well
  • Put all ingredients in a casserole dish cover and bake for 1 to 1 1/2 hours. The last 15 minutes top with the other 1/2 cup parmesan cheese and return to oven.
  • Serves 6-8

All in one dish casserole of Italian sausage, peppers and potatoes in a tomato sauce that goes together quickly and is delicious!

2 lbs Italian sausage, hot or mild
4 potatoes, cut in chunks
1 green bell pepper, seeded and sliced
2 cloves minced garlic
1 small onion, diced
1 (28 ounce) can crushed tomatoes
1 teaspoon dried basil
salt and pepper

Steps:

  • Brown sausage in saute pan, then place in 9x13 baking dish.
  • Place potatoes, peppers, onion and garlic on top of sausage.
  • Pour crushed tomatoes over and sprinkle with basil, salt and pepper to taste.
  • Cover and bake at 350 degrees for 50 minutes or until done.
  • Remove cover and bake 20 minutes more.

I was looking for something easy to make for Sunday dinner and put together this casserole and let the oven do the work. The sausage was so juicy and really flavored the cabbage, potatoes and carrots beautifully.

4 links Italian sausage (about 1 lb)
1 tablespoon olive oil
1/2 head cabbage
1 cup chicken stock
12 baby carrots
8 baby red potatoes
2 garlic cloves, sliced
black pepper

Steps:

  • In a heavy Dutch oven pan, saute sausage in olive oil until browned.
  • Remove sausage to a plate and set aside.
  • Slice cabbage into fairly large pieces and add to Dutch oven; stir to mix.
  • Add chicken stock, baby carrots and potatoes and mix.
  • Add sliced garlic and pepper and mix again.
  • Add sausages to top of casserole, cover and bake at 350° for 30 minutes.
  • Stir once during baking, leaving sausages on top of ingredients.
  • After 30 minutes, remove cover and raise oven temperature to 400° and bake for 15 more minutes to brown the sausage.

1 lb mild Italian sausage, cut into slices
1 large sweet onion, chopped
2 apples, peeled and quartered (I use Mcintosh)
1 (27 ounce) can sauerkraut, undrained
1 cup water
1/2 cup brown sugar, packed
2 teaspoons caraway seeds

Steps:

  • In large skillet or Dutch oven, cook sausage and onion until sausage is brown and onion is tender Drain fat, stir in apples, sauerkraut, water, sugar and caraway.
  • Put in a 21/2 quart covered baking dish and bake one hour.
  • (I sometimes put this in the slow cooker on low for 3 0r 4 hours).

6 ounces pckg of stove top savory herb seasoned stuffing mix
1 lb hot Italian sausage, cut into slices
1 green pepper, sliced
1 red pepper, sliced
1 onion, sliced
1 cup tomato sauce
1 tablespoon basil
1 tablespoon oregano
1 tablespoon italian seasoning

Steps:

  • Preheat oven to 400.
  • Add hot water to stuffing mix; stir just until moistened. Set aside.
  • Cook and stir sausage, peppers, and onion in a large skillet until sausage is browned.
  • Place in a 13x9 baking dish.
  • Pour tomato sauce over sausage mixture and then sprinkle spices over top.
  • Top with stuffing.
  • Bake 25min.

1 (28 ounce) can of your favourite spaghetti sauce
3 garlic cloves, minced
1 1/2 cups shredded mozzarella cheese
1/2 cup freshly grated parmesan cheese

Steps:

  • Preheat oven to 400°F.
  • Lightly grease 13x19-inch baking dish.
  • Place bread in single layer over bottom of prepared baking dish.

2 cups macaroni, cooked and drained, and tossed with
2 tablespoons butter
1 lb sage sausage, browned, broken into chunks and drained of grease (Weber brand was my Mom's favorite, but I prefer Jimmy Dean's)
1 (16 ounce) jar spaghetti sauce (Classico was the only brand Mom would use for this.)
1 (6 ounce) jar sliced button mushrooms, drained
1 (16 ounce) package shredded mozzarella cheese
1/2 cup romano cheese, grated (Kraft)

Steps:

  • In a 2 quart, ungreased casserole dish, layer twice: 1/2 cooked macaroni, 1/2 cooked sausage, then 1/2 sauce, 1/2 mushrooms, 1/2 shredded cheese. Do the same layering again.
  • Sprinkle Romano cheese on top.
  • Bake in a preheated 350 degree oven for 30-40 minutes, until cheese is slightly browned and casserole is bubbly.

1/4 cup butter
1 cup chopped celery
1/2 medium onion, chopped
1/4 cup green bell pepper, chopped

6 cups herb seasoned bread stuffing mix (cube type)
1/4 cup parmesan cheese
1/2 teaspoon black pepper
2 cups chicken broth
1 egg, lightly beaten

Steps:

  • Preheat oven to 325ºF.
  • Butter a 2 quart baking dish.
  • In a large skillet, cook sausage over medium heat until no longer pink; drain & remove from skillet. Set aside.
  • Pour any grease from skillet & melt butter.
  • Add celery & onion and saute until slightly tender, 2-3 minutes. Stir in the green pepper & garlic and continue to saute until all veggies are tender.
