I like to add Italian sausage as a topping on my homemade pizza. Came up with this blend after much experimentation. I fry it all and freeze in portions for use as pizza topping. It's ground pork with all fixings to make a simple sausage you can prepare at home.

Steps:
- In a small bowl, combine the ground black pepper, parsley, Italian-style seasoning, garlic powder, crushed red pepper flakes, anise, paprika, minced onion flakes and salt; mix well.
- Place pork in a separate large bowl and add the spice mix to it. Mix this thoroughly with your hands.
- In a large skillet over medium high heat, saute the seasoned pork for 10 minutes, or until well browned and crumbly.

- Divide dough in half. With greased fingers, pat each half onto an ungreased 12-in. pizza pan. Prick dough thoroughly with a fork. Bake at 400° until lightly browned, 10-12 minutes. BEST ITALIAN SAUSAGE PIZZA BURGERS
Steps:
- Preheat grill (or grill pan) to medium/high.
- In a large bowl, mix together the sausage, pepper, garlic powder, oregano, and basil.
- Divide the meat mixture into 8 equal portions and shape each portion into burger patties.
- Grill the patties on a preheated grill (or grill pan) for approximately 7-8 minutes per side (cover for half of the cooking time).
- Meanwhile, in a grill basket (or a large stovetop skillet), season and cook the green peppers and onions with the salt and olive oil until they are slightly wilted and no longer crunchy. Stirring occasionally.
- Place the cheese on the burgers and cook just until the cheese has melted. Remove from the grill and keep warm.
- Spread the softened butter on both sides of the buns and season with garlic powder to taste.
- Place the buns (butter side down) on the grill, or skillet, and cook until they're browned and lightly crispy.
- Place a burger on a bun, top with prepared warmed marinara sauce, and the sauteed green pepper and onions.
- Serve hot.

- Mix yeast and water in a large bowl; place in warm spot for about five minutes.
- Sift flour, salt, and sugar into the yeast. Mix well, then add olive oil and form a soft ball.
- Knead on floured surface until soft and elastic (about five minutes).
- Shape into ball and place in a lightly oiled bowl.
- Cover with a clean towel and place in a warm spot for about one hour.
- Punch down dough and reshape into ball. Cover and let sit another 20 minutes, or until it rises again.
- Preheat oven to 375 degrees.
- Shape dough into flat round shape and stretch onto pizza pan or hand toss and place on floured surface.
- Press fingertips into surface of dough until entire surface is dimpled.
- Brush olive oil over entire surface of pizza dough.
- Combine tomatoes, basil, 1 tsp salt, garlic and onion powder, and garlic together.
- Divide and spread evenly over dough.
- In layers add sausage, onion, mushroom, and cheeses.
- Sprinkle crust with left over parmesan cheese.
- Bake in oven for 25 minutes or until crust is golden and cheese is gooey.
- Remove from oven and let rest for 5 minutes before slicing.

- Melt butter in a large skillet over medium heat. Add onion slices; stir to separate the slices into individual pieces. Cook until onions just begin to brown - about 5 minutes stirring occasionally. Reduce heat to medium-low and cook until onions are tender and caramelized, about 15 to 20 minutes. Remove to a bowl; set aside.
- Preheat oven to 500 degrees F.
- Using the same skillet, add Italian sausage and return heat to medium. Cook until sausage is browned and cooked through, about 5 to 8 minutes. Drain; set aside.
- Roll out pizza dough to a 14 to 16" round {depending on your baking sheet/pizza stone size}, and place on baking sheet or pizza stone.
- Bake dough for 5 mins. Carefully remove crust from oven.
- Top with a thin-ish layer of marinara to within 1/2-inch of the dough edge.
- Then top with sausage and almost all the onions. Sprinkle pizza evenly with cheese, and the remaining onions.
- Bake for another 8 to 12 minutes until cheese is bubbly, crust edges are golden brown and the bottom is crispy. Remove from oven, slice, and eat!

- For the dough:
- To a bowl add the warm water, honey and olive oil. Mix until the honey is dissolved.
- Add the flour, baking powder and salt to a large mixing bowl. While drizzling in the water, mix with a fork until the dough comes together. If it is too dry, add a little more water until it holds together to form a ball. You can switch to using your hands.
- Flour your counter and turn out the dough. Knead, sprinkling lightly with flour so it doesn't stick to your hands. Knead for 3-4 minutes until the dough is no longer sticky.
- Coat the mixing bowl with a little oil and put the dough back in the bowl and cover with a towel. Place in a warm place. This can be the microwave or oven (both turned off) for 30 minutes to allow the dough to rest after kneading and make it easier to roll and keep the dough tender. Remove from the oven after 30 minutes.
- Position the oven rack on the top ¾ portion of the oven and preheat to 450°F/230°C.
- Place the dough onto a 12-inch (31 cm) round pizza pan or large baking sheet. Use your hands to press into a pizza shape.
- For the toppings:
- Spread the mozzarella all over, top with the cherry tomatoes, crumble the Italian sausage all over and finish with an even layer of caramelized onions.
- Bake for 20 until the crust is golden brown and the sausage is cooked.
