SPINACH, SAUSAGE, AND EGG CASSEROLE
This is a recipe I created after my boyfriend described an egg casserole I couldn't find a recipe for. He took this with him on a hunting trip and everyone loved it.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
- Beat eggs and milk together in a large bowl. Stir sausage, Cheddar cheese, spinach, and oregano into egg mixture; pour into prepared baking dish.
- Bake in the preheated oven until a knife inserted into the center of the casserole comes out clean, 30 to 40 minutes.

White beans, Italian sausage, spinach and tomatoes make a flavorful and surprisingly sophisticated casserole. Casseroles might have a humble reputation, but this one is special enough to serve at your next dinner party.

Steps:
- Heat oven to 375°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
- In 12-inch skillet, heat 1 tablespoon of the oil over medium-high heat. Add sausage; cook 5 to 7 minutes, stirring frequently, until no longer pink. Add onion, garlic, salt, black pepper and red pepper flakes; continue to cook 3 to 4 minutes, stirring frequently, until vegetables have softened slightly. Sprinkle flour over top, and cook 2 minutes, stirring constantly.
- Add half of the spinach to sausage mixture; cook and stir about 1 minute or until wilted. Add remaining half of the spinach; continue to cook and stir about 1 minute or until wilted. Add tomatoes and beans; cook about 1 minute, stirring and scraping bottom of pan, until combined. Remove from heat; transfer to baking dish.
- In small bowl, mix bread crumbs and remaining 2 tablespoons oil. Sprinkle over top. Bake 25 to 30 minutes or until bubbly around edges and brown on top.

ITALIAN SAUSAGE AND SPINACH CASSEROLE
Steps:
- In a large non-stick sauté pan, sauté the veggies (onions, carrots, and mushrooms) and cook until the moisture has evaporated from the mushrooms and the vegetables have softened - about 7 - 10 minutes. Season with salt and a pinch of pepper. Stir to incorporate and then transfer to a greased baking pan.
- Decrease the heat to medium, and add the Italian sausage to the now-empty skillet. Break up the meat with a spatula and cook, until it's no longer pink - about 5 to 7 minutes.
- Add the spinach and stir to combine. Sauté for about 2-3 minutes. Add the minced garlic and cook for about 1 minute.
- Pour in the tomato sauce and add the oregano. Season with salt and pepper and stir well to incorporate. Then transfer the sausage mixture in the casserole pan.
- Pour in the whisked eggs to the casserole pan and stir to combine. Bake for approximately 20-25 min or until the eggs are browned on the edges.
- Serve warm, garnished with extra fresh herbs and black pepper if desired

- In skillet, remove sausage from casings, mush down to little cubes, cook sausage over medium heat until entirely cooked, drain.
- In large bowl, mix spinach, parmesan cheese, onions and garlic.

- Unroll dough into 1 large rectangle on greased cooking dish.
- Spoon sausage mixture in 4-inch-wide strip lengthwise down center of rectangle.

- Heat oven to 375 degrees Fahrenheit.
- In large skillet, brown beef and onion then drain.
- Return meat to pan; add spaghetti sauce.
- Meanwhile, in a medium bowl combine mozzarella cheese and sour cream.
- Pour hot meat into an ungreased 12 x 8 inch dish.
- Spoon cheese mixture over meat.
- Unroll crescent roll dough over the top of the mixture.
- Mix parmesan cheese and butter together, then spread over the top of the dough.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with nonstick spray. Line the bottom of the pan with crescent roll dough, pinching the perforated seams together.
- Heat a large skillet over medium-high heat. Cook and stir sausage, bell pepper, and both onions in the hot skillet until sausage is browned and crumbly, 5 to 7 minutes. Remove any extra oil from the pan. Stir in cream cheese and black pepper; cook until cream cheese is melted, 2 to 3 minutes. Remove from the heat and let cool slightly.
- Arrange sausage-cream cheese mixture evenly over the dough and sprinkle Cheddar cheese over top. Beat eggs and milk together and pour over the cheese.
