ITALIAN SAUSAGE AND PEPPER STRATA



Italian Sausage and Pepper Strata image

Bake up breakfast, lunch or dinner with this cheesy, eggy sausage-and-pepper casserole.

Unsalted butter, at room temperature, for the baking dish
1 tablespoon olive oil
12 ounces sweet Italian sausage, casings removed
2 red bell peppers, chopped
Kosher salt and freshly ground black pepper
3 cups half-and-half
1/4 cup grated Parmesan
2 tablespoon chopped fresh flat-leaf parsley
10 large eggs
One 12-ounce loaf rustic Italian bread, preferably stale, cut into 1-inch cubes (about 6 cups)
2 cups shredded mozzarella

Steps:

  • Butter a 9-by-13-inch baking dish.
  • Heat the olive oil in a large skillet over medium-high heat. Add the sausage and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes; transfer to a bowl with a slotted spoon. Add the bell peppers to the skillet with 1/4 teaspoon salt and cook, stirring occasionally, until tender, about 4 minutes. Set aside.
  • Whisk together the half-and-half, Parmesan, parsley, eggs, 1 1/2 teaspoons salt and a few grinds of pepper in a medium bowl.
  • Layer half of the bread cubes in the prepared baking dish. Sprinkle with 1 1/2 cups of the mozzarella, followed by the sausage and peppers. Cover with the remaining bread cubes and pour the custard evenly over the top. Cover with plastic wrap and let soak at room temperature 30 minutes to 1 hour. (To make ahead, after adding the custard, cover with plastic wrap and refrigerate overnight and then let the strata sit at room temperature while the oven preheats.)
  • Preheat the oven to 325 degrees F. Remove the plastic and sprinkle with the remaining 1/2 cup mozzarella. Bake until slightly puffed and no longer jiggly in the center, 40 to 50 minutes. Let stand 5 minutes before serving.

2 pounds Italian sausage links, cut into 2-inch pieces
¼ cup olive oil
4 large potatoes, peeled and thickly sliced
2 large green bell peppers, seeded and cut into wedges

3 large onions, cut into wedges
½ cup white wine
½ cup chicken stock
1 teaspoon Italian seasoning
salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish.
  • Pour 1/4 cup of olive oil into the skillet, and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil in the skillet.
  • Cook and stir the green and red peppers and onions in the hot skillet until they are beginning to soften, about 5 minutes. Add the vegetables to the baking dish.
  • Pour wine and chicken stock over the vegetables and sausage, and sprinkle with Italian seasoning, salt, and pepper. Gently stir the sausage, potatoes, and vegetables together.
  • Bake in the preheated oven until hot and bubbling, 20 to 25 minutes. Serve hot.

1 yellow onion, sliced
½ red onion, sliced

1 pound Italian sausage ((sweet OR hot), cut into 2 inch pieces)
2 Tablespoons olive oil
4 medium red potatoes (, unpeeled (cut in half lengthwise, then into 1/2 inch slices (half moons))
1 green bell pepper (, seeded, then roughly chopped)
1 red bell pepper (, seeded, then roughly chopped)
1 large brown onion (, sliced thin)
1/2 cup chicken stock
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Preheat oven to 400 degrees F. Spray a 9x13 baking dish with non-stick spray.
  • Heat 2 Teaspoons olive oil on medium heat in a LARGE skillet. Add Italian sausage chunks; cook, stirring occasionally until sausages are cooked through and no longer pink (about 6-8 minutes). Remove sausage to a paper towel to absorb grease, then place in 9x13 baking dish. Drain grease from skillet (but do not wash-just wipe it down with a paper towel before cooking potatoes).
  • Add 2 Tablespoons olive oil back into skillet. Turn heat to medium. Add potato slices. Cook potatoes until light golden brown (they will be "almost tender").   • In same skillet, cook the red and green peppers, and sliced onion until they soften up and lightly brown (about 3-5 minutes). When done, remove vegetables and place them on top of potatoes in baking dish.
  • Pour the chicken stock over the sausage/potato/vegetables in baking dish, then sprinkle with Italian seasoning, salt and black pepper. Stir to combine ingredients. Cover baking dish with aluminum foil.
  • Bake at 400 degrees for 25 minutes. Remove from oven, uncover, and dish it up while hot!

3 cups Perruso's spaghetti and meatballs sauce (or your own recipe)
1 lb sweet Italian sausage link, casings removed
1 lb hot Italian sausage, casings removed
3 green peppers, cored,seeded and sliced lengthwise
1 (7 ounce) jar roasted red peppers, drained and skiced lengthwise
1 (8 ounce) package mozzarella cheese, cut into 1/2 inch cubes
1/2 teaspoon red pepper flakes (or more if you like)

Steps:

  • Butter a 13x9 baking dish.
  • In a large stockpot boil salted water.
  • Prepare pasta if using fresh and boil for 4 minutes OR boil the dry pasta for 10 minutes.
  • For either drain when done and rinse under cold water to stop the cooking process.
  • Meanwhile cook sausage over medium heat, around 8 minutes or until fully cooked.
  • Remove with a slotted spoon and add to spaghetti.
  • Add bell peppers to drippings and cook for 3 minutes.
  • Add remaining ingredients to pasta and toss well.
  • Pour into casserole dish.
  • Bake for 45 minutes in a 350 degree oven.
  • Serve with a green salad and bread sticks.

Steps:

  • In large skillet heat oil. Add both the diced onions and diced green bell peppers along with the minced garlic, and half the salt and pepper and saute until the onions and peppers are soft.
  • Add both the Italian sausage and ground chuck and brown until there is no more pink. While browning the meat make the rice to package instructions.
  • Drain most but not all of the excess grease. Add the rustic cut tomatoes, beef broth, Worcestershire sauce and soy sauce and the remaining salt and pepper. Bring to a boil and cook for 10-15 minutes.
  • Remove half the meat mixture and place in freezer bag to save for another time.
  • Pour rice into large serving bowl and pour remaining meat mixture on top. Mix well then serve.

2-3 Italian sausages (cut into large bite size pieces)
3 large peppers sliced (any colour you want, although I like a mix)
1/4 teaspoon salt (or to taste)
1-2 dashes pepper or hot pepper flakes
1-2 springs rosemary
1/2-1 teaspoon oregano
1/4 cup water

Steps:

  • In a large pan add the olive oil and sliced sausage, cook turning often, for approximately two minutes on medium heat or until lightly browned.
  • Add the sliced peppers, spices and water. Cover the pan and cook on low/medium heat for approximately 15 minutes, turning occasionally.
  • Remove the cover and cook stirring occasionally (so it doesn't burn) on medium/high (not too high) heat for approximately 10-15 minutes or until cooked. Serve immediately. Enjoy!

1 lb Italian sausage links, cutting each sausage into 3 pieces
2 bell peppers, sliced
2 cups onion, sliced
1 Tbsp olive oil
1/2 tsp garlic salt
1/2 tsp ground black pepper
1/2 tsp Italian seasoning
2 cups chunky marinara sauce
1 cup mozzarella cheese, shredded

Steps:

  • Preheat the oven to 375F.
  • In a large skillet over medium high heat, add the oil to the pan.
  • Sear the Italian sausage on each side until browned, which will be about 2-3 minutes on each side. The sausage will NOT be cooked through at this point.
  • Remove the sausage from the pan and set it aside.
  • Add more oil to the pan if needed and then add the bell peppers, onion, garlic salt, and pepper to the pan. Saute until mostly soft, which took about 5-6 minutes.
  • Add the sausage back to the pan and nestle it around the onion and peppers mix.
  • Sprinkle the Italian seasoning over the top.
  • Spread the marinara sauce over the Italian sausage casserole and then sprinkle with the mozzarella cheese.
  • Bake for 15+ minutes until the sausage is cooked through and the cheese is melted. To get the crispy cheese appearance, broil the dish for 1-2 more minutes.

1 lb Italian sausage (4 to 5 links)
2 medium bell peppers, coarsely chopped (any color)
1 cup uncooked orzo pasta or 1 cup rosamarina pasta
1 (14 ounce) can beef broth
1 (8 ounce) can pizza sauce
1 cup shredded mozzarella cheese (4 oz.)

Steps:

  • Heat over to 375 deg. F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray. Cut each sausage link into 4 pieces. In 12-inch nonstick skillet, cook sausage over medium heat 10 to 12 minutes, stirring occasionally until brown; drain.
  • In baking dish, mix sausage and remaining ingredients except cheese. Cover baking dish with foil.
  • Bake 45 minutes. Uncover and stir well. Sprinkle with cheese. Bake uncovered about 10 minutes longer or until sausage is no longer pink and orzo is tender.

This is a super-easy, super-quick casserole dish that I came up with last week. I used Italian turkey sausage that my husband had grilled while we were barbecuing the day before. I also used wheat rotini pasta, but I think any kind of pasta would work. The rest of the quantities are just estimates ... you could use more or less depending on your tastes. I used whole cumin, fennel, thyme, and rosemary and lightly ground them with a pestle, but you could also use pre-ground. My husband, who is not usually a casserole lover, has been raving about this ever since, and my daughter, who usually hates zucchini, cleaned her plate without even a mention of it.

1 lb sweet Italian turkey sausage
2 tablespoons extra virgin olive oil
1 medium onion, chopped
1 red bell pepper, chopped

1 medium zucchini, sliced thin
1 tablespoon garlic, minced
1 teaspoon cumin
1 teaspoon fennel seed
1 teaspoon thyme leaves
1 teaspoon dry basil
1 teaspoon rosemary
1 (14 ounce) can diced tomatoes
salt and pepper
1 cup feta cheese

Steps:

  • Preheat oven to 350.
  • Prepare pasta as directed, rinse with cold water, and set aside.
  • As pasta is cooking, cook Italian sausage as desired. (I like to pre-cook sausages, as they are easier to cut once they are already cooked.).
  • After sausages are cooked, remove from pan and set aside.
  • In a large pan, saute onion, peppers, zucchini, and garlic in olive oil until opaque.
  • Season with cumin, thyme, basil, rosemary, salt, and pepper.
  • Slice sausages into bite-size pieces, then add sausages, tomatoes, and pasta to the vegetables and stir.
  • Spray large casserole dish with cooking spray and transfer entire mixture into dish.
  • Top with feta cheese.
  • Bake, uncovered, at 350 for 15-20 minutes, until cheese starts to melt.

1 cup diced (1/2-inch) eggplant
1 cup diced (1/2-inch) zucchini
1 cup diced (1/2-inch) red or green bell pepper
1/4 cup chopped onion
2 cloves of garlic, minced
1 can (28 ounces) Italian plum tomatoes, drained and chopped
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh basil leaves
Cayenne or black pepper, to taste
2 ounces grated mozzarella cheese

Steps:

  • 1. Melt the margarine with the oil in a nonstick pan over medium-low heat. Add the sausage meat and cook for 10 minutes, breaking up the meat with a spoon. Remove to a bowl with a slotted spoon; reserve.
  • 2. To the same pot, add the eggplant, zucchini, bell pepper, onion and garlic. Stirring occasionally, cook until softened, about 10 to 15 minutes. Stir in the reserved sausage, the tomatoes, parsley, basil and cayenne. Reduce the heat and simmer for 15 minutes.
  • 3. Spoon the mixture into an 8x9-inch, oven-to-table baking dish to fit and sprinkle with the mozzarella cheese. Bake in a 350°F preheated oven until the cheese melts, about 15 to 20 minutes.
