ITALIAN SAUSAGE & CARAMELIZED ONION PIZZA
This Italian Sausage & Caramelized Onion Pizza is totally worth skipping take out for! It's a great recipe to make any day of the week!

Steps:
- Melt butter in a large skillet over medium heat. Add onion slices; stir to separate the slices into individual pieces. Cook until onions just begin to brown - about 5 minutes stirring occasionally. Reduce heat to medium-low and cook until onions are tender and caramelized, about 15 to 20 minutes. Remove to a bowl; set aside.
- Preheat oven to 500 degrees F.
- Using the same skillet, add Italian sausage and return heat to medium. Cook until sausage is browned and cooked through, about 5 to 8 minutes. Drain; set aside.
- Roll out pizza dough to a 14 to 16" round {depending on your baking sheet/pizza stone size}, and place on baking sheet or pizza stone.
- Bake dough for 5 mins. Carefully remove crust from oven.
- Top with a thin-ish layer of marinara to within 1/2-inch of the dough edge.
- Then top with sausage and almost all the onions. Sprinkle pizza evenly with cheese, and the remaining onions.
- Bake for another 8 to 12 minutes until cheese is bubbly, crust edges are golden brown and the bottom is crispy. Remove from oven, slice, and eat!
ITALIAN SAUSAGE AND CARAMELIZED PIZZA

- For the dough:
- To a bowl add the warm water, honey and olive oil. Mix until the honey is dissolved.
- Add the flour, baking powder and salt to a large mixing bowl. While drizzling in the water, mix with a fork until the dough comes together. If it is too dry, add a little more water until it holds together to form a ball. You can switch to using your hands.
- Flour your counter and turn out the dough. Knead, sprinkling lightly with flour so it doesn't stick to your hands. Knead for 3-4 minutes until the dough is no longer sticky.
- Coat the mixing bowl with a little oil and put the dough back in the bowl and cover with a towel. Place in a warm place. This can be the microwave or oven (both turned off) for 30 minutes to allow the dough to rest after kneading and make it easier to roll and keep the dough tender. Remove from the oven after 30 minutes.
- Position the oven rack on the top ¾ portion of the oven and preheat to 450°F/230°C.
- Place the dough onto a 12-inch (31 cm) round pizza pan or large baking sheet. Use your hands to press into a pizza shape.
- For the toppings:
- Spread the mozzarella all over, top with the cherry tomatoes, crumble the Italian sausage all over and finish with an even layer of caramelized onions.
- Bake for 20 until the crust is golden brown and the sausage is cooked.

- Put an oven rack in the center of the oven. Preheat the oven to 475 degrees F. Sprinkle a heavy baking sheet (without sides) with cornmeal and set aside.
- In a large skillet, melt 3 tablespoons of olive oil and the butter over medium-low heat. Add the onions, salt and pepper. Cook, stirring occasionally, until golden and caramelized, about 20 minutes. Increase the heat to medium-high and add the sausage. Using a wooden spoon, break up the sausage and cook, stirring constantly, until cooked through, about 8 minutes. Set aside to cool slightly.
- On a lightly floured work surface, roll out the dough into a 13-inch diameter circle, about 1/4-inch thick. Transfer the dough to the prepared baking sheet and drizzle with olive oil. Spread the onion mixture evenly over the dough, leaving a 1-inch border. Sprinkle the cheese on top. Bake until the crust is golden and the cheese has melted, about 15 to 17 minutes. Remove from the oven and sprinkle with chopped basil. Cut the pizza into wedges and serve.
CARAMELIZED ONION, DATE AND SAUSAGE PIZZA
ETA: Help! I need help developing this recipe. I made it but the sauce needs help. Any chefs out there willing to help me with stronger sauce ideas? Something needs to balance the sweetness of the dates a bit more. Maybe a denser balsamic-based sauce? I picked up some dates at Trader Joe's yesterday and thought they'd be really good on a pizza, so this is what I'm going to use them for this Pizza Friday. This (doubled) is The Best pizza dough to use for any pizzas and will certainly compliment mine: Recipe #301703 from I Can't Believe It's Healthy. Be sure to double or triple it. We're too wimpy for gorgonzola and don't like feta or goat cheese, but if you want to bump the sophistication level of this pie to lofty heights...

- Preheat oven to 425 (or temp recommended by pizza dough manufacturer if using store-bought, and skip pre-bake steps).
- Roll-out and pre-bake in preheated oven for 4-5 minutes.
- While baking, whisk 1 Tbs Olive Oil, 1 Tbs Balsamic and 2 tsp of brown sugar in small bowl. Drizzle evenly over dough once pre-baked.
- In med saucepan heat 1 tsp Olive Oil over medium heat. Add sausage coins and cook through.
- Remove coins, but leave the fat in the pan and add sweet onion rings to pan. Carmelize onions by cooking 8-10 minutes or until browned, stirring frequently.
- Add dates during last 3 or so minutes of cooking to heat through. Remove and pat with paper towels to absorb some of the oil.
- Spread onions and dates on dough & sauce, sprinkle cheese on pizza dough, followed by sausages.
- Bake until crust is browned and cheese melted, about 15-20 minutes.

"Ready, Set, Cook! Hidden Valley Contest Entry" Recently we ordered a pizza at a local restaurant that featured pine nuts and fresh figs as two of the ingredients. I loved the combination of these flavors and textures! Their pizza was seasoned with a spicy Italian dressing. I decided instead to add that spicy kick with little bites of hot Italian sausage which is a perfect compliment to the Hidden Valley Original Ranch Dressing, caramelized onions, figs and pine nuts!

- Preheat oven to 425°F Spray a large rimless baking sheet with no-stick olive oil spray. Set aside 2 tablespoons of the Parmesan cheese. Mix together the remaining Parmesan cheese and bread crumbs. Sprinkle sprayed baking sheet with 1 tablespoon of the cheese and breadcrumb mixture.
- In a skillet over medium-high heat, warm the olive oil. Add the onion, salt and pepper. Cook, stirring often, until the onion is soft and caramelized, 12 to 15 minutes. Stir in the vinegar. Transfer the onion to a plate and let cool.
- Meanwhile, sprinkle the remaining 4 tablespoons of the cheese and breadcrumb mixture on work surface. Roll dough in mixture to coat. Gently knead dough, working crumb mixture into dough. Pat and gently stretch the pizza dough into a 14-inch circle; transfer to prepared baking sheet. Bake at 425° for 6 - 8 minutes or until light golden brown.
- Drizzle ranch dressing over dough. Top with onions, figs, pine nuts and crumbled Gorgonzola cheese. Break up sausage into small bite-size pieces and sprinkle over top.
- Bake for an additional 8 - 10 minutes or until the cheese has melted, the sausage is cooked through and the crust is golden, rotating the pizza occasionally to ensure even browning.
- Transfer the pizza to a cutting board and sprinkle with reserved 2 tablespoons of the Parmesan cheese. Cut into slices and serve immediately.
