RICOTTA-STUFFED BACON-WRAPPED DATES
These are the new pigs in the blanket and way better. They're a classic tapas but they never get old. And I spruced them up just a bit with a touch of ricotta cheese.

Steps:
- Preheat oven to 450 degrees F.
- Cut the bacon in half lengthwise to make twice as many slices. Set aside. To remove the pits from the dates, cut the tips off each end of the dates and insert the flat end of the skewer until it pushes the pit out of the date. Repeat with remaining dates.
- Place the ricotta in the bottom corner of a strong plastic bag and seal tightly. Use scissors to cut a small hole in the tip of 1 of the corners. Now use the bag like a piping bag to fill the dates with the cheese.
- Wrap the ricotta stuffed dates with a slice of bacon and secure with a toothpick through the belly of the date. Arrange all the prepared dates on a parchment-lined baking sheet, allowing at least a little space between each one for good browning. Roast for 15 to 20 minutes or until bacon is browned and crispy. Remove from the baking sheet and gently remove toothpicks. Serve immediately.
BACON WRAPPED DATES STUFFED WITH MANCHEGO
Steps:
- Preheat the oven to 400 degrees F.
- Make an incision on one side of each date and insert a block of Manchego. Squeeze the date shut in your hand to secure. Wrap each date with a bacon strip and secure with a toothpick. Place all the dates on a sheet tray lined with a silicone mat or parchment paper. Roast the dates in the oven until the bacon on top is starting to crisp, 5 to 6 minutes. Turn the dates over and cook the other side until the bacon crisps.
- Remove the dates from the oven and brush both sides with maple syrup. Return the dates to the oven until they are really crackly and sticky, 1 to 2 minutes. Serve hot.
PARMESAN-STUFFED DATES WRAPPED IN BACON
Steps:
- Put oven rack in middle position and preheat oven to 450°F.
- Stuff 1 piece of cheese into each date, then wrap 1 piece of bacon around each date, securing it with a pick. Arrange dates 1 inch apart in a shallow baking pan.
- Bake 5 minutes, then turn dates over with tongs and bake until bacon is crisp, 5 to 6 minutes more. Drain on a paper bag or parchment. Serve immediately.
BACON-WRAPPED ALMOND-STUFFED DATES

- Cut slit in long side of each date, being careful to not cut completely through date. Remove and discard pits. Cut cheese into 16 (1x1/4-inch) sticks. Stuff each date with cheese and 2 nuts.
- Wrap 1 bacon piece around each date, completely enclosing cheese. Place on rack of broiler pan.
- Bake 14 to 15 min. or until bacon is crisp, turning after 8 min. Cool 5 min; transfer to plate. Serve warm or at room temperature.

Don't let anyone tell you otherwise...THESE ARE WONDERFUL. They are always the very first thing to go at a party. When I catered I always told my customers to order 2-3 times more of these than anything else. Most people expect scallops but are pleasantly surprised by the sweet wonderful flavor inside. A combination of sweet, crunchy, salty and smoky is a real winner! You won't be sorry you went out on a limb to try these. You can prep ahead of time, freeze and then pull them out of the freezer and bake right before the party.

Steps:
- Stuff each date with one almond.
- Cut bacon into half or thirds.
- Wrap bacon around date and secure with a round toothpick.
- Preheat oven to 400 degrees.
- Place dates on a foil lined (they are messy and this makes them much easier to clean up) baking pan and cook until bacon is crispy (around 15 minutes).
- Drain on paper towel and serve warm or room temperature.
- Watch them disappear!
DATES WRAPPED IN BACON WITH MARCONA ALMONDS

- Heat canola oil in a large, heavy-bottomed pot to 475 degrees F.
- Split each date in half and stuff with 1 almond and 1/2 teaspoon of Valdeon cheese, and close carefully. Lay a strip of bacon on a cutting board, place a stuffed date at the bottom of the bacon, and wrap with the bacon, making sure to pull the bacon tightly towards you while rolling. Add 3 dates onto each skewer. Carefully submerge the skewers one by one in the oil and fry until golden, about 1 minute. Remove to a plate lined with paper towels and allow to cool for a few minutes before serving.
BACON WRAPPED STUFFED DATES WITH BALSAMIC REDUCTION
Sinfully delicious!! Salty and sweet, crispy and gooey!! Yum! Surprisingly easy and look fantastic. I had these at a restaurant and then went on a hunt to find a similar recipe. Found one online and tweaked it some. If you use thick cut bacon, par-cook it some before wrapping dates.

Steps:
- Simmer balsamic vinegar in small saucepan until reduced by half. Syrup will be thick. Set aside.
- Mix almonds into goat cheese.
- Cut small slit in dates and stuff with small amount of cheese mixture.
- Cut each bacon slice into 3 pieces. (Par-cook if thick sliced.) Wrap piece of bacon around each date, and secure with toothpick.
- Place on foil-lined baking sheet.
- Broil for about 10 minutes, turning over when browned on first side. Be careful as they can burn quickly.
- Arrange on serving platter and drizzle with reserved balsamic reduction.

Another great Saveur recipe.The already sweet dates caramelize in the oven,inbued with the smoky goodness of the bacon..then you bite into it-it's soft,and gooey,giving way to a even gooier ,creamy center and then you get a surprising little crunch from the salty almond.MMMMM.... These went over well at my B-day even among those that claimed to dislike goat cheese.(suggestions were made about subbing cream cheese,but I didn't hear any complaints;)The goat cheese really isn't overpowering;it's tangy creaminess is what harmonizes the sweet and savory flavors.I just wish I could eat these more often !
