BLUEBERRY DELIGHT

5 ounces pecan halves (about 1 1/2 cups)
1 cup all-purpose flour
2 tablespoons granulated sugar
Pinch of fine sea salt
6 tablespoons unsalted butter, melted
1 cup confectioners' sugar
2 envelopes unflavored gelatin
1 cup heavy cream
Two 8-ounce containers cream cheese, at room temperature
1 teaspoon vanilla extract
2 pints blueberries
1/4 cup granulated sugar, or to taste
2 tablespoons cornstarch
Juice of 1/2 lemon

Steps:

  • For the pecan crust: Preheat the oven to 350 degrees F.
  • Place the pecans in the bowl of a food processor fitted with the blade attachment. Pulse until finely ground. Add the flour, granulated sugar and salt and pulse to combine. Add the butter and process until combined. Transfer the mixture to a 9-by-13-inch rectangular baking dish; press flat. Transfer to the refrigerator to chill until firm, about 20 minutes.
  • Bake until golden brown, 10 to 12 minutes. Remove to a rack to cool.
  • For the cheesecake filling: Meanwhile, place the confectioners' sugar and gelatin in a medium bowl. Add 1/4 cup cold water and stir to combine. Bring the heavy cream to just a simmer in a small pot over medium-high heat. Add the hot cream to the gelatin mixture and stir to combine and dissolve. Set aside.
  • Wipe out the food processor bowl to clean away most of the crumbs. Beat the cream cheese and vanilla in the bowl of the food processor until smooth. Add the heavy cream-gelatin mixture and process until smooth, scraping the sides of the bowl as needed. Pour into the cooled nut crust. Refrigerate until firm, at least 1 hour.
  • For the blueberry topping: Meanwhile, combine the blueberries, granulated sugar and cornstarch in a small saucepan. Stir to combine so that the blueberries are coated with the dry ingredients. Add the lemon juice and stir to combine. Bring to a simmer over medium heat and cook, stirring, until the cornstarch and sugar have melted, about 2 minutes. Set aside to cool at least 30 minutes before pouring over the chilled cheesecake filling. Chill until the topping is set, about 15 minutes, before serving.

This is a very simple recipe, which is also a great treat anytime! Whether you're on a sugar-restricted diet, or not, this is a lovely diversion. I hope you enjoy it. If you are watching your sugar, this will be allowable no more than twice per week. If you are watching your cholesterol, blueberries are known cholesterol blockers AND high in anti-oxidents [cancer cell-blockers]!

1/2 cup whole blueberries, washed and frozen or 1/2 cup fruit, of your choice diced
1 cup nonfat milk
1 dash vanilla extract

Steps:

  • Stir vanilla extract into non-fat milk.
  • Pour over frozen blueberries. Milk will freeze around blueberries upon stirring. Serve immediately.
  • Makes a great breakfast item, snack, or desert!

1 cup sugar
1 cup fresh lemon juice (about 6 lemons)
1 1/2 cups frozen blueberries

Steps:

  • Combine the sugar with 6 cups water in a medium saucepan and bring just to a simmer over medium-low heat, stirring until the sugar is dissolved. Turn off the heat and cool to room temperature, then stir in the lemon juice.
  • Add a few blueberries to each compartment of 2 ice cube trays and cover with lemonade (you will use about half the total amount). Freeze completely, about 4 hours. Refrigerate the remaining lemonade.
  • Combine the blueberry lemonade ice cubes and the cold lemonade in a blender and blend until smooth. Serve immediately.

1/2 cup margarine, melted (or butter)
1/2 cup pecans, chopped (or your favorite type of nut)
8 ounces cream cheese
1 1/4 cups powdered sugar
1 (8 ounce) container Cool Whip, like topping
1 (15 ounce) can blueberry pie filling (or your favorite flavor) or 2 cups fresh fruit

Steps:

  • mix together in 8"x8" pan the flour, margarine, and nuts.
  • bake this for 25 min @ 350 degrees F.
  • in a mixing bowl cream together the cream cheese, powdered sugar, and whipped topping.
  • when the crust is cool to the touch scoop the cream cheese mixture onto the crust.
  • top with the pie filling or fresh fruit.
  • cool in refrigerator for about 1 hour or freezer for about 30 minutes to set.
