ITALIAN-STYLE MONTE CRISTO SANDWICHES

- Heat a large griddle or cast-iron skillet over medium heat.
- Prepare the sandwiches by spreading 4 slices of the bread with preserves. Top with a slice of cheese, 2 slices of folded prosciutto, then another slice of cheese. Spread the remaining bread slices with Dijon and set in place over the cheese.
- In a large shallow bowl, beat the eggs with the milk or cream, Parmesan, and parsley. Nest the butter in a paper towel and wipe it across the hot pan. Dip the sandwiches into the egg mixture and cook the sandwiches until deep golden, about 3 to 4 minutes on each side.
- Toss the arugula with the lemon juice, extra-virgin olive oil, and salt and pepper, to taste, in a large serving bowl. Cut the sandwiches from corner to corner and serve alongside the salad.

- Spread each slice of bread with Dijon mustard on one side and the softened butter on the other. With the mustard side facing up, layer a slice of swiss, turkey, ham, and top with another slice of swiss.
- Top each with the remaining bread slices, buttered-side up. Press down on the sandwiches to set.
- In a wide, shallow dish (like a pie plate) combine the cream, eggs and pepper, using a whisk. Set aside.
- Heat a large, heavy-bottomed sauté pan or griddle over medium heat. When the pan is ready, dip the sandwiches in the cream mixture to coat well. You will have bits of egg clinging to the bread's surface.
- Cook the sandwiches for 3 - 4 minutes on each side or until browned and crisp. Serve immediately.

- For each sandwich use 3 slices of bread. Butter one side of bread first, then cover with a slice of ham and a slice of turkey or chicken.
- Butter both sides of the second slice of bread and spread with a little mustard or other dressing, if desired.
- Place on top of turkey or ham slice and top with 2 thin slices of cheese.
- Butter third slice for top; press sandwich lightly and trim crusts.
- Cut into halves diagonally and secure with toothpicks.
- Beat eggs with milk and salt.
- Dip sandwich halves into the egg mixture and fry on a hot skillet or griddle in butter or margarine.
- Brown on all sides, adding more butter when necessary.
- Dust lightly with powdered sugar & remove toothpicks before serving.

MONTE CRISTO SANDWICH
A great brunch item! One of my husbands favorite filling, baked, french toast style, sandwiches filled with cheese, ham, turkey & mustard. Raspberry preserves is a must for him. Could be eaten for breakfast, lunch or dinner. This is a LESSER FAT Monte Cristo recipe being baked and not fried full of flavor! I also like to buy the low salt cold cuts or use fresh baked turkey leftovers sliced thin.

- Heat oven to 425°F.
- Lightly butter a baking sheet pan. I use the spray.
- Spread 1/2 teaspoon mustard on each slice of bread.
- Layer between mustard sides of two slices of bread, 1 slice cheese, 2 slices ham, 2 slices turkey, and another slice of cheese.
- Repeat to make four sandwiches. Whisk eggs, flour, butter, salt and pepper in a shallow dish until smooth.
- Blend in milk.
- DIP both sides of sandwiches into egg mixture until bread is lightly soaked.
- Place on baking sheet; drizzle any remaining egg mixture over top of sandwiches.
- Bake 8-10 minutes until bottom is golden brown.
- Turn with wide spatula and continue baking 8-10 minutes or until second side is golden brown.
- Serve warm dusted with powdered sugar and dip or spread raspberry preserves on sandwiches.
- Garnish with fresh raspberries.

MONTE CRISTO SANDWICH FROM MAMA'S
I got this off of the Food Network, courtesy of Mama's on Washington Square, San Francisco. I tweaked it, swapping ham steaks for the turkey, taking it down from a triple-decker sandwich to a double and adding the must-have powdered sugar. Makes 4 sandwiches. Really really good, my 2 year old ate it up!

- On a work surface, spread each slice of bread with mayonnaise. Top four slices with the 1 slice of Gouda and several pieces of fried ham steak. Use remaining slices to top ham and cheese slices to make four sandwiches.
- Using a knife, cut the crusts off the sandwich (this helps to pinch and seal the ends). Press sandwich flat with hands and wrap tightly with plastic wrap.
- Refrigerate for at least 30 minutes and up to 6 hours. (Wrapping the sandwich in plastic wrap, compacts it, and prevents the egg batter from seeping in.).
- Heat the oil and butter in a skillet over medium-high heat.
- Combine the eggs and milk in a bowl.
- Unwrap the sandwiches and dip them in the egg batter, to coat evenly.
- Gently place each sandwich in the skillet (one or two at a time), and fry, turning once, until golden brown and hot, about 5 minutes total.
- Cut the Monte Cristos in 1/2, transfer to a place, and sprinkle with powdered sugar.
- Spoon some jam on the side and serve immediately.
