ITALIAN SAUSAGE MEATBALLS
I developed this recipe as I was reviewing many other meatball recipes. The spices in the sweet Italian sausage give it the extra kick. These meatballs can be frozen for use later. Or used immediately in your favorite sauce. These are also a great appetizer with dipping sauce.

Steps:
- Put all ingredients in a large mixing bowl.
- Mix together throughly.
- Using the palm of your hands. Roll into a ball shape. About one inch diameter.
- Place oil in a frying pan over medium heat.
- Place meatballs in hot oils.
- Move them around continuously to ensure that they do not burn, and are throughly cooked.
- Cook for 5 to 7 minutes (golden brown).
- Remove from oil and sit on paper towel to absorb any oil.
- Add to your favorite sauce.
ITALIAN RAGU WITH MEATBALLS AND SAUSAGE

- In a large sauce pot (8-quart size minimum), heat 1/4 cup of the olive oil on a very low flame. Add the diced onion and cook slowly until it has turned translucent. Do not brown the onion, but allow it to almost melt away. Add the garlic cloves and very lightly cook them in the oil until golden before adding the tomatoes and all their juices. Add salt and pepper to taste, and the basil leaves and set the heat on low. Allow the tomatoes to cook at very low heat for at least 2 hours before adding the meat.
- Make the meatballs: mix the ground beef and veal together in a large bowl. Combine the bread and milk and mash together to form a paste; add the bread to the ground meat. Add the eggs, garlic, parsley, cheese, salt, and pepper to the meat mixture and combine all the ingredients using your fingers to mix uniformly, but do not over mix or the meat will dry out when cooked. Pick up 2 tablespoons of the mixture and roll it into a ball shape, between the palms of your hands. Do this until you have used all the meat. This should yield approximately 24 meatballs.
- Place the remaining olive oil in a heavy skillet and heat over medium flame. Add the meatballs in 1 layer and brown on all sides before removing. Do this to the remaining meatballs until all are browned to a caramelized color. After all the meatballs have been browned and removed from the skillet, add the sausage links and brown well, following the same method as the meatballs. When all the meat has cooked, add to the tomato ragu, which has been cooking for 2 hours and cook an additional hour. Serve the tomato ragu over rigatoni pasta cooked to manufacturer's directions. Serve the meats on another plate as a second course.
THREE-MEAT ITALIAN MEATBALLS

- Preheat oven to 350 degrees F (175 degrees C).
- Combine ground meat, onion, eggs, bread crumbs, oats, and seasoning in a large bowl. Shape into 2-inch diameter balls.
- Heat enough vegetable oil in a large saute pan to be 1/2 inch deep. Brown meatballs in hot oil for about 5 minutes. Transfer to a glass baking dish.
- Bake in preheated oven for 25 minutes.

SUNDAY SAUCE WITH BRACIOLE, MEATBALLS AND SAUSAGE
This is a delicious Italian favorite. Takes about 3 hours to make but worth every minute.

- 1. For the Sauce Chop the onions and garlic in a food processor. Place oil in large Dutch oven. Cook the onions and garlic until browned. Stir in the tomato paste, oregano and red pepper flakes. cook about 2 minutes. Add the vermouth and scrap up the browned bits from the bottom of pan. Add the crushed tomatoes and 2 cups water. Stir in the basil and season with salt. Bring to a simmer on low and keep warm.
- 2. For the breadcrumbs Combine all the ingredients together and set aside.
- 3. For the Braciole Preheat oven 300 degrees. Lay the beef flat and season with salt and pepper. Sprinkle evenly with 1/2 cup of the breadcrumb mixture reserving the rest for the meatballs. Roll the beef up and tie with butchers twine. Add oil to skillet and brown the braciole on all sides. Transfer the braciole to the sauce. Cover and bake 2 hours.
- 4. For the meatballs Mix the ground beef with the eggs, milk, salt, pepper and remaining breadcrumb mixture. Shape into 1 inch meatballs. Add oil to skillet brown them in batches in the oil. Once the meatballs are all browned cook the sausages until browned on both sides. Carefully transfer the meatballs and sausage into the sauce. Cover pan and bake another 30 minutes.
- 5. To serve cook spaghetti in boiling salted water. Drain well. Serve with sauce and meat on top and sprinkle with Parmigiano
ITALIAN SPAGHETTI SAUCE WITH SAUSAGE AND MEATBALLS
This is one of my favorite recipes to make for friends when we have them over for dinner. Italian is casual, simple to make and inexpensive. Start this early in the day, let it simmer for a few hours and right before the guests arrive, boil your pasta, toast the garlic bread and toss up a Caesar salad...nothing else could be so simple. This recipe makes a full 6 quarts so it will feed an army. It freezes very well so I package the leftovers in containers for simple and delicious weekday meals.

- Cut the sausage links in half and place them into a 6 quart stock pot.
- Add the olive oil and garlic, stir to coat; brown on medium heat stirring often to keep them from burning.
- Add the tomato sauce, puree, basil, oregano and salt to the browned sausage and reduce heat to low; cover and slow simmer.
- MEATBALLS.
- Mix ground beef, breadcrumbs, milk, Worcestershire and eggs together in a bowl.
- Shape meatballs into size of your choice and place into a shallow glass baking pan.
- Preheat oven to 400°F and bake meatballs from 20-40 minutes depending upon size.
- Add meatballs to the sauce and let simmer for 3 hours;stir occasionally and skim the fat off the top so the sauce is not greasy when it is done.
- Add the tomato paste 1 hour before the sauce is done to thicken it up.
- 1/2 hour after adding the tomato paste test the sauce; if it is too sweet from the paste add the beef base to counteract the sweetness--if not, leave this out and enjoy!

- Make the meatballs: In a large mixing bowl, combine beef, bread, and milk.
- Add the cheese, basil, parsley, egg, and salt.
- Mix gently but thoroughly.
- Form into small meatballs, no more than 1 1/2 inches in diameter; set aside (can cover and refrigerate while you are making the sauce).
- Heat olive oil in a heavy-bottomed stockpot.
- Add pork chops and sausages and brown on all sides.
- Transfer pork chops to a plate to make room for the onions.
- Toss the onions into the pot with the garlic, fennel seeds, and salt.
- Saute over medium heat stirring frequently and scraping up any bits left behind by the pork and sausages, until the onions are soft and golden.
- Put the pork chops back in the pot with any juices on the plate.
- Add the tomatoes, 4 1/2 cups water, and tomato paste.
- Drop in a few cheese rinds or ends if you have any.
- Cover the pot, bring to a boil; decrease the heat, and simmer for 30 minutes.
- Gently drop in the meatballs, 1 at a time, shaking the pot a bit to encourage them to nestle in with the pork and sausage and to make room for the addition of more meatballs.
- After all the meatballs have been added, continue to simmer, covered, for 1 hour longer, or until the pork chops are very tender.
- To finish the gravy, transfer the pork chops to a cutting board.
- Remove and discard the bones, chop up the meat, and return it to the sauce.
- Keep warm over low heat while you cook the pasta.
- Bring a large pot of water to a boil.
- Generously salt the water and drop in the spaghetti.
- Cook, stirring often, until al dente; drain pasta.
- To serve--start with a large, heated deep platter or pasta bowl.
- Cover the bottom with a ladleful of gravy and a good sprinkling of Pecorino Romano.
- Top with half the pasta.
- Add more gravy and cheese, the remaining pasta, and another layer of gravy and cheese.
- Serve immediately with more grated cheese.
- Pass the meatballs, sausage, pork, and additional gravy in a bowl at the table.
