- In a large bowl, combine the first 7 ingredients. Crumble beef and sausage over mixture and mix well. Shape into 8 burgers. , On a lightly oiled rack, grill burgers, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 165° and juices run clear. , Sprinkle burgers with cheese; cook 2-3 minutes longer or until cheese is melted. Remove and keep warm., Grill or broil rolls for 1-2 minutes or until toasted. Serve burgers on rolls with spaghetti sauce.

ITALIAN MEATBALL BURGER
For lighter grilling try this spicy burger which freezes well. This came from Cooking Light. I always have leftover Italian turkey sausage after making a batch of these for my freezer, so I use the leftover sausage to make Recipe#244750.

Steps:
- Prepare grill.
- Remove casings from sausage. Combine sausage, oregano, basil, salt, fennel seeds, and ground sirloin. Divide beef mixture into 6 equal portions, shaping each into a 1/2 inch patty.
- Place patties on a grill rack coated with cooking spray; grill 5 minutes. Turn patties over; grill 2 minutes. Divide fresh mozzarella cheese evenly over patties, and grill an additional 5 minutes or until a thermometer registers 165 degrees. Remove from grill; let stand 5 minutes.
- Place rolls, cut side down on grill rack; grill 1 minute or until toasted. Place 1 patty on bottom half, top with 2 tablespoons of sauce, and top with other half of roll.
- Raw burgers freeze well.
SMASHED MEATBALL BURGERS
Steps:
- In a large bowl, mix together the egg, breadcrumbs, milk and Parmesan and set aside.
- Heat the oil in a skillet over medium-high heat and add the onion and a pinch of salt. Cook, stirring, until softened, 5 to 7 minutes. Add the garlic and fennel seeds and cook for another minute. Set aside to cool.
- Add the ground beef and ground pork to a medium bowl, spreading it out, and sprinkle the surface evenly with 1 teaspoon salt, a few turns of black pepper, a good pinch of crushed red pepper, the oregano and the parsley. Add the cooled onion mixture to the meat mixture. Mix with your hands quickly until just combined (don't overmix). Divide into 6 parts and shape into balls. Sprinkle with salt and pepper.
- Heat a large cast-iron skillet or a griddle over medium heat and add a thin layer of oil. Cook the meatballs on one side until a brown crust is formed, 1 to 2 minutes, then flip and cook for 2 minutes; then smash with a big metal spatula. Top each with a slice of cheese and cook until the cheese is melted and the internal temperature is 160 degrees F, about 5 more minutes.
- Toast the rolls or focaccia either in a skillet or the oven, then spread each side with marinara sauce. Top each with a patty and 2 big leaves of basil. Enjoy!
ITALIAN BURGERS

- Preheat a grill to medium high. Heat the olive oil in a skillet over medium-high heat. Working in batches, add the salami in a single layer and cook, turning once, until crisp, about 1 minute per side. Drain on paper towels.
- Add the mushrooms to the skillet and cook, undisturbed, until browned, about 2 minutes. Stir and continue to cook until tender, about 5 more minutes. Season with salt and pepper.
- Form the beef into four 6-ounce patties, about 3/4 inch thick; press the center of each patty with your thumb to make a 1/2-inch-deep indentation. Season the patties on both sides with salt and pepper. Lightly brush the grill grates with vegetable oil, then grill the patties, indentation-side up, until marked on the bottom, about 5 minutes. Flip and cook until marked and slightly firm, about 3 more minutes for medium doneness. Remove the patties to a plate and let rest 5 minutes. Grill the rolls, cut-side down, until lightly toasted, about 1 minute.
- Toss the arugula, vinegar, and olive oil to taste in a bowl; season with salt and pepper. Spread the ricotta on the bun bottoms and top with the burger patties, salami, mushrooms and arugula salad. Cover with the bun tops.
AUTHENTIC ITALIAN MEATBALLS
Meatball recipes are often challenged by chefs who claim, "Mine are the best!" Even though my meatballs ARE the best, I will make no such claim. Try them for yourself! This meatball recipe was given to me by my father who got it from a little old lady from Italy that he knew. It's amazing that she gave up her recipe to him, but I sure am glad she did!

- Mix all ingredients in a large bowl by hand.
- Use your bare hands for best results.
- Roll meatballs to about the size of a golf ball. (wet your hands to prevent the meat from sticking to them while rolling the meat balls).
- Drop raw meatballs into large (I use a stock pot) pot of sauce.

- Combine the ground turkey and the first 9 ingredients well - then, divide evenly and shape into burger patties, cover with plastic wrap and set aside.
- Cover a cookie sheet with tin foil, or - place a silpat on a cookie sheet & preheat oven to 325 degrees. Place the salami slices evenly (but not touching) on the covered cookie sheet. Bake salami in the 325 degree oven for 15 minutes - then, transfer salami slices to a plate covered with paper towels to absorb the excess oils.
- Grill burgers either on a hot outdoor grill, or cast iron stove top grill - approximately 5 minutes per side for medium rare - longer for well done (whatever your preference may be). Slice the Italian bread or Ciabatta into even slices - enough for 2 slices per patty & brush or use your 'misto' sprayer on one side with E.V.O.O. (Extra Virgin Olive Oil)& grill (oil side down) to get the grill prints on the bread. Once Burgers are cooked, remove to a platter where they can rest for approximately 5 minutes. Remove grilled Bread and place 1/4 cup of the shredded light Mozzarella cheese, then the Burger, then the Salami (2 slices per burger). You can then serve the burgers with either a very good prepared Marinara Pasta Sauce or your favorite condiment.

- Tip the mince, onion, egg, breadcrumbs, nutmeg and garlic powder into a large bowl and generously season with black pepper. Mix everything together using your hands, then shape the mixture into six patties. Transfer to a plate, cover and chill for 1 hr or up to a day.
- Heat a barbecue to medium or until a thin layer of coals has turned grey. Cook the burgers for 10 mins, turning occasionally, until lightly charred and cooked through. Top with sliced cheese during the final 2 mins of cooking time, if you like.

- This recipe uses Bubba's Frozen All-Beef 1/3 lb Hamburger patties made from U.S.D.A. Choice Beef Chuck cooked on an indoor electric grill. You can use smaller patties, but you will need to adjust your cooking time accordingly. Burgers with fillers or lesser quality beef are not recommended. You'll be rewarded for spending a bit extra for quality hamburger patties.
- Spray your electric grill with garlic flavored cooking spray. Close and heat for 5 minutes.
- After 5 minutes, place your frozen patties on your grill. Close and cook for 3 minutes.
- While your burgers are cooking, cover the insides of each bun with butter and garlic. Place your buns buttered sides up in an un-greased non-stick baking pan and set them aside for the moment. If you prefer, you can use sliced Italian Bread instead of Hamburger Buns.
- When your burgers have cooked for 3 minutes, open your grill, season both sides of each pattie with Italian Seasoning. Close your grill and cook 3 more minutes.
- After the additional 3 minutes have passed, open your grill and place a whole onion slice over each burger. Sprinkle a bit more Italian seasoning over each onion slice. Close your burger and cook for a final 2 minutes.
- While your burger is finishing off, heat your sauce in a glass cooking bowl in your microwave for about 2 1/2 minutes. Any good quality sauce will work. I used Classico Four Cheese Sauce.
- Take the baking sheet your hamburger Buns are on and insert it into your oven. Toast the buns with the broiler for a few minutes until the butter melts.
- When your burgers are done and your sauce is heated, remove your patties from your grill and place them in your sauce. Top each pattie liberally with shredded Italian cheese. Spoon sauce over the patties until they are covered, then place the bowl in the microwave and heat on high for about 1 minute (until the cheese melts).
- When your cheese is melted, lift each burger from your sauce, allow excess sauce to drip off, then place each on the bottom portions of your buns and sprinkle with grated Parmesan Cheese. Lightly spoon about a teaspoon of sauce on the inside top portion of your bun. Serve your Sandwiches open-faced with a few celery sticks (no fries or potato chips), fresh spring onions, and/or Roma Tomato slices on the side. Your guests can put their sandwiches together as they marvel about the savory aroma and your artful presentation. Have extra patties available. Your guests will want more.

- Beat the egg in a small bowl.
- Blend in the wine and tomato paste and set aside.
- Place the ground beef and italian sausage in a large bowl and blend with your hands.
- Add the bread crumbs and dry ingredients.
- Slowly blend in the egg mixture with the hamburger mixture until it is mixed well.
- If it is too dry, add more tomato paste or wine.
- Shape into 2 to 3 inch meatballs.
- Place meatballs on a baking sheet.
- Bake in a preheated oven 400 degrees for 20 minutes, turn meatballs at 10 minutes.
- Add them to your tomato sauce (see Simple Tomato Sauce Recipe) and cook approximately 30 minutes or longer for more flavor.
