A spicy, easy to prepare side dish to accompany any mexican dish. White rice is standard, but you can use any type of rice you like for this yummy recipe. You can even adapt this recipe for couscous by omitting the cooking in the rice cooker. UPDATED to account for error in rice and water proportion. Note that the type of rice you use and the type of rice cooker may require further adjustment.

1 1/2 cups rice (rice cooker cups)
2 cups water
1 tomato-flavored bouillon cube
1 teaspoon cumin
1 teaspoon garlic powder
2 tablespoons dried onion or 2 tablespoons diced onions
1 teaspoon cayenne pepper
1 teaspoon chili powder

Steps:

  • In a medium bowl, mix together rice, cumin, garlic powder, diced onion or dried onion, cayenne pepper, and chili powder.
  • Place in rice cooker.
  • Boil water; add bullion cubes and stir until dissolved.
  • Pour water over rice; stir briefly to combine.
  • Set rice cooker to cook.
  • When done, let sit approximately 10 minutes.

3 1/8 cup low sodium chicken broth (use 1/4 to 1/3 cup less liquid for drier rice)
4.5 oz. can tomato paste
3 Tbsp. butter
1/2 cup onion, finely diced
4 oz. can diced green chilies
Fresh black pepper
Pinch of red pepper flakes
Cilantro for garnish
Salt as needed

Steps:

  • Add all ingredients to the rice cooker. Stir well. Cook according to manufacturer's instructions. Let rest for 3 minutes after cooking or longer to thicken and then stir. Garnish with cilantro before serving.

3 cups chicken broth
1 ½ cups converted long-grain white rice
½ large white onion, sliced
1 (24 ounce) jar salsa
1 (4 ounce) can chopped green chilies
1 (1 ounce) packet dry taco seasoning mix, divided
2 skinless, boneless chicken breast halves
1 (15 ounce) can black beans, drained

Steps:

  • Pour the chicken stock into a slow cooker, and stir in the rice, onion, salsa, green chilies, and half the taco seasoning. Rub the remaining taco seasoning over the chicken breasts, and place into the cooker. Place the lid on the cooker, and set to high setting.
  • Cook until the rice is thickened and most of the liquid has been absorbed, about 3 hours. About 20 minutes before serving time, turn the cooker to warm setting. Remove the chicken breasts, and slice them. Stir the chicken and the black beans into the slow cooker. Return lid to cooker, allow the beans to heat, and serve.

Substitutions for spices and vegetables are fine -- add the tastes that your family likes most. You can make this on the stovetop in a skillet with a lid, as well. Bring all ingredients to a boil and stir well; cover and simmer for 25 minutes or until rice is soft. If you add some of the optional ingredients, this can be an excellent main dish. Try adding chopped green chile peppers. Tastes great with the Enchilada II recipe.
