I made up this recipe for the students in the foods and nutrition class I teach. The kids like it so much, they often go home and fix it for their families. -Beth Hiott, York, South Carolina

ITALIAN GRILLED CHEESE WITH ROASTED PEPPERS AND SPINACH
Without a doubt, this has to be one of the best grilled cheese sandwiches I've ever had the pleasure of eating. The spinach and roasted peppers were the perfect complements to that flavorful cheese, and as it oozed from the sandwich I thought to myself, life just doesn't get much better than this. So when we talk about comfort food, we need to talk about this sandwich.

Steps:
- Preheat oven to 350 degrees F
- Place sliced peppers in baking dish and drizzle 1 tablespoon of olive oil, and a sprinkle of sea salt and black pepper. Toss peppers so all are coated with oil and seasonings.
- Bake for about 30 minutes or until the peppers start to get dark. Remove from oven and allow to cool
- In a saute pan add 1 tablespoon of olive oil, chopped garlic and spinach. Sauté until spinach is wilted and has changed to a dark green color. Sprinkle with sea salt and black pepper. Allow to cool slightly
- Start building your sandwiches by placing four slices of sourdough bread on the counter
- Cover each slice of bread with a total of 4 cheese slices on each slice of bread. ( 2 to cover the bread, and two deep)
- Divide one half of the spinach on top of two slices of bread, leaving half of the spinach for later.
- Place 6- 8 slices of roasted pepper on the bread, varying the color so when it is cut you'll see both colors of peppers.
- Top these two slices with the remaining spinach.
- Top the two finished sandwiches halves, with the other piece of sourdough that you have cheese already on, with the cheese facing the spinach. (You should have a total of 8 slices of cheese on each sandwich, 4 on the bottom and 4 on the top)
- Melt the butter in a small pan over low heat, then add the finely chopped basil. Set aside till needed.
- Heat your grill pan on the stove top until it is hot enough to leave marks on the bread.
- Using a pastry brush, brush the basil-butter onto one side of the sandwich, and sprinkle with grated Romano cheese. Place the buttered side down on the pan.
- Turn heat down to medium, and cover the sandwich with a pot lid to keep the heat in and help the cheese to melt.
- After about 3-4 minutes check the bread on the pan to see how the color is. It should be toasted a dark golden brown.
- Brush butter on the side that is up, sprinkle with grated Romano cheese and turn it over to repeat the process of toasting the bread. (Use the pot lid again to help melt the cheese)
- After 3-4 minutes check that side, to see how the color is.
- If the cheese is not fully melted, turn the heat down to low and keep the lid covering the sandwich until the cheese has melted. Just be careful not to burn the bread.
- Slice the sandwich carefully with a serrated knife and serve immediately with a side salad.

Steps:
- Slice the bread in half horizontally and spread the cut-sides with the honey mustard. Build the sandwich by layering the bottom half of the loaf with half of the provolone, followed by the ham, turkey, salami and the remaining provolone (the provolone should be touching the bread on both sides, with the meat sandwiched in between). Cover with the top half of the loaf.
- Spread some of the butter on top of the loaf, then carefully flip over and butter the bottom. Slice into the desired number of sandwiches
- Heat a large two-burner grill pan over medium heat, or heat a panini maker. Add the sandwiches to the pan and cook, pressing down with a spatula, until the undersides are golden brown, 3 to 4 minutes (see Cook's Note). Turn the sandwiches and continue to cook, pressing, until golden brown on the reverse side and the cheese is melted, another 3 to 4 minutes.
- Transfer the panini to a cutting board and slice in half. Serve immediately.
ITALIAN GRILLED CHEESE SANDWICH (PANINI)
Mmmm... mozzarella! Try this grilled cheese sandwich with the Italian twist! If you haven't tried it before, pesto is one of the best condiments to use on a hot sandwich. Instead of cooking the sandwiches in a skillet, you can use your panini press just as easily. This recipe is from a Canadian cheese magazine. Enjoy!

GRILLED ITALIAN PESTO PANINI
I took Recipe#235826 (which I LOVE!) and adapted it for one, using a George Foreman grill. Since I was heating the grill anyway, I decided to grill sliced onions and red peppers, to add to the sandwich. It turned out great, and I think it'll travel well, as I needed a sack lunch, for a field trip, tomorrow! I took a bite, and it tasted delicious!

Steps:
- Preheat your George Foreman grill, or panini maker.
- Slice the roll horizontally; spread with pesto.
- When the grill is ready, add the onion and red pepper slices (I didn't think they needed any seasoning, but you could add Italian dressing, or other seasoning to them, before grilling, if desired); grill until tender.
- Layer the grilled veggies, cheese, and lunchmeat.
- Grill until the cheese melts (you'll have to apply some pressure to the top of the grill when you first insert the sandwich, since the sandwich is pretty thick).
- Slice on the diagonal, and enjoy, now or later!

- Mozzarella and Feta Pita Grilled Cheese. OK, not all grilled cheese sandwiches are paninis, but the prominent grill marks on this sammy make it fit both categories.

- Nutella Bacon French Toast Panini. I’m sorry, we just hallucinated…what? Nutella, bacon and French toast—three brunch superheroes—unite in this incredible sweet and salty panini.
- Italian Panini Sandwiches. There are very few combinations out there that surpass that of mozzarella, tomato and basil. And although these Italian sandwiches radiate elegance, they’re seriously simple.
- Cheesy Pizza Panini. Your favorite slice meets a drool-worthy sandwich in this epic crossover. Described as “melty and gooey,” all you’ll need aside from the bread is pizza sauce, cheese, pepperoni and butter.
- Spicy Chicken Panini. Forget waiting in a drive-thru line for one of the many overrated fast food spicy chicken sandwiches. Whitney Bond’s Spicy Chicken Panini is bursting with flavor, calling for King’s Hawaiian Big Island Lava Sauce (available online), pepper jack cheese, blue cheese, carrots, green onions and celery.
- Eggplant Panini with Sun-Dried Tomatoes. Whether you’re fully vegetarian or if you’re simply looking to observe the occasional meatless Monday, these veggie-filled paninis combine salty cheese with acidic balsamic and sweet sun-dried tomatoes.

- Grilled Pesto Panini Sandwiches. Pesto is easily one of the greatest panini toppings out there—that herby flavor adds dimension, preventing a cheesy sandwich from feeling one-note.
