ROSETTA'S GREEN BEAN AND POTATO SALAD



Rosetta's Green Bean and Potato Salad image

1 pound green beans, trimmed and halved crosswise
2 pounds small (not baby) red potatoes
1/2 small red onion, thinly sliced into half-moons
4 vine-ripe tomatoes, cut into 1-inch chunks
2 tablespoons red wine vinegar
1/2 cup extra-virgin olive oil
Generous pinch dried basil
Salt and pepper
Handful fresh basil leaves, torn, for garnish

Steps:

  • Put the potatoes in a large pot; add water to cover by 2 inches. Cover the pot and bring to boil over medium-high heat. Cook until the potatoes are cooked through, about 30 minutes. Drain and let cool slightly.
  • Meanwhile, bring another large saucepan of water to a boil; salt generously. Blanch the green beans until crisp-tender, 2 to 3 minutes. Drain and then shock in an ice water bath to stop cooking.
  • When cool enough to handle, cut the potatoes into 1 1/2-inch chunks and place in a large serving bowl. Add the green beans, red onions and tomatoes and toss together. In a small bowl, whisk together the vinegar, olive oil and dried basil. Pour about three-quarters of the dressing over the salad and toss to combine. (The potatoes should break up a bit and coat the salad.) Add salt and pepper to taste. Serve at room temperature, garnished with torn basil.

This is awesome! This salad will stay for several days, and improves in flavor. It may be served chilled or room temperature. Preparation time includes cooking the potatoes and beans.

2 lbs small red potatoes (cooked until tender)
1 lb small green beans, rinsed and stems trimmed (cooked until firm-tender)
1 medium sweet onion, coarsly chopped
1/4 cup fresh basil leaf
1/4 cup balsamic vinegar
2 cloves chopped garlic
2 tablespoons fresh lemon juice
1 dash Worcestershire sauce
1/2 cup olive oil
2 tablespoons Dijon mustard
salt and pepper

Steps:

  • In a large bowl, combine the potatoes, green beans, onion and basil.
  • Mix/whisk all the vinaigrette ingredients togther (I like to shake it in a small jar).
  • Add in the Balsamic vinaigrette mixture to the warm potato/bean mixture; toss well to coat.
  • Season with salt and pepper to taste.
  • Serve chilled or room temperature.

2 lbs green beans, trimmed
3 tablespoons balsamic vinegar
1 tablespoon stone ground mustard
1 teaspoon salt
9 tablespoons olive oil
1 large red onion, peeled, quartered and thinly sliced
1 cup pine nuts, toasted
salt & freshly ground black pepper
1 large head radicchio
1 large head bibb lettuce

Steps:

  • Cook beans in 2 quarts boiling, salted water until crisp-tender, about 7 minutes.
  • Drain and rinse well under cold water; drain again and pat dry.
  • Combine vinegar,mustard and salt in medium bowl.
  • Slowly whisk in oil in thin stream.
  • Combine beans, onion and 1/2 cup pine nuts in large bowl; mix in vinaigrette.
  • Season to taste with salt and pepper and let marinate 15 to 30 minutes.
  • Alternate radicchio and Bibb lettuce leaves over large platter.
  • Mound bean mixture in center, sprinkle with reserved pine nuts and serve.

  • Scrub potatoes clean. Leaving the skins on, place the potatoes in a large pot. Fill the pot with enough water so that the water is two inches higher than the potatoes. Add about a teaspoon of salt to the water. Place the pot on the stove over high heat, covered. When the water comes to a boil, lower the heat to a simmer and cover. Cook the potatoes for 20-25 minutes, checking on any smaller ones to see if they are done sooner and need to be removed from the pot with a slotted spoon. The potatoes are done when you can easily insert a fork into the center.
  • While the potatoes are cooking, cook your frozen green beans in the microwave according to the package instructions. (If using fresh green beans, rinse them and snap off the ends. Boil or steam them until they are cooked to your liking.) Drain and toss them with one teaspoon of olive oil and set them aside.
  • Carefully remove cooked potatoes with a slotted spoon and place them in a single layer on a large platter or sheet pan to cool.
