These easy Eggplant Meatballs without the meat, are a fast, easy and tasty way to use eggplant. Make them as a main dish or appetizer. Make lots because they go quick!

2 medium globe eggplants (28 ounces) ((800 grams))
1 large egg
1/2 cup freshly grated parmesan cheese ((50 grams))
1/2 breadcrumbs ((60 grams))
1 clove garlic minced
1/2 teaspoon salt
1-2 dashes pepper
1-2 tablespoons freshly chopped Italian parsley (or to taste)
1/2 teaspoon oregano
2-3 tablespoons bread crumbs (for rolling)
1-2 tablespoons olive oil
2-3 tablespoons freshly grated parmesan cheese

Steps:

  • Pre-heat the oven to 400F (200C). If Baking then lightly drizzle 1 tablespoon of olive oil on a small non-stick cookie sheet.

Eggplant parmesan takes a new shape! Easy as making meatballs, these balls are meatless. Using eggplant instead of meat. You could even shape these into patties for a vegetarian burger! Delicious!

3 Tbsp olive oil
3 clove garlic,minced
4 c eggplant,peeled and cubed
2 Tbsp water
1/2 c shaved fresh parmesan cheese
3/4 c italian style bread crumbs
2 eggs

Steps:

  • 1. Preheat oven to 350 degrees. Grease a baking sheet lightly.
  • 2. Heat olive oil in pan and sauté garlic till fragrant, about 1 or 2 minutes. Add eggplant cubes and water. Cover pot and let simmer on low, stirring occasionally so it doesnt stick. Simmer for about 20 minutes or until eggplant cubes are completely softened. I keep mushing them as I check them. If by chance it seems very liquid, drain the liquid out.
  • 3. After eggplant is soft, put to the side and let it cool off until it is room temperature.
  • 4. When cool, add the 2 eggs and mix well. Add the parmesan cheese.... and please, use fresh shaved into big shavings. It makes a big difference! Add the bread crumbs and salt and pepper and mix everything very well.
  • 5. Put mixture in the refrigerator for about 20 minutes. This will make forming the balls or patties easier.
  • 6. Form into balls or patties. Place on the greased sheet, and bake for 30 minutes turning them after 20 minutes. You could also fry them in oil for a crisper texture.
  • 7. Endless possibilities with these! Would make a perfect eggplant parmesan sandwich with the addition of mozzarella cheese slice and a bit of sauce! Can use in any recipe calling for meatballs. Could even put them in a casserole and top with sauce and more cheese.
  • 8. Delicious and simple! My step daughter brought a friend to visit who is a vegetarian who has never had eggplant! This is a very good recipe for the introduction of eggplant. The texture is much like a meatball and the flavor is subtle. She now LOVES eggplant! :) I served them with spaghetti and red sauce.

I love making a vegetarian version of a traditional meat recipe. I love it even more when my family and my students go crazy for it. Meatballs are such a familiar and popular food, I was a little unsure about how everyone would react when I subbed eggplant for ground beef. But sure enough, these eggplant "meatballs" were a huge hit! I honestly think these eggplant meatballs taste incredibly similar to regular ones, especially when covered with your favorite warm marinara sauce. They are tender enough to cut with a fork and are the perfect match with spaghetti squash for a serious veggie meal.

2 tablespoons unrefined, cold-pressed extra-virgin olive oil
6 garlic cloves, minced
1 1/2 pounds eggplant, unpeeled, cut into 1-inch cubes (you should have about 8 cups)
1 cup grated Parmesan or pecorino cheese
1/2 cup fresh flat-leaf parsley leaves and tender stems, chopped
1/4 cup fresh basil leaves, chopped
4 large eggs, beaten (you can use 2 to 4 eggs, but I like to use 4 for extra protein and to hold the meatballs together better)
1 1/2 cups regular or GF dried breadcrumbs or panko breadcrumbs (you can use as little as 1 cup, but the meatballs will be much softer)
1/8 teaspoon sea salt
A few grinds of black pepper
3 cups marinara sauce

Steps:

  • Heat a large high-sided skillet over medium heat. Add the olive oil and saute the garlic in the hot oil until just fragrant and barely starting to lightly brown, about 30 seconds. Add the eggplant and 1/4 cup of water. Lower the heat to low and cover the skillet. Allow the eggplant to steam until soft, about 20 minutes. Allow to cool slightly, if you have time.
  • Meanwhile, preheat the oven to 350 degrees F. Line a baking sheet with unbleached parchment paper.
  • Place the eggplant mixture in a food processor and pulse until well chopped, but not pureed. Or just do this on a cutting board with a knife.
  • Transfer the eggplant mixture to a large mixing bowl and add the cheese, parsley, basil, eggs, breadcrumbs, salt, and pepper. Stir the mixture well to combine, using your hands or a wooden spoon. The mixture can be refrigerated at this point, covered for up to a day. It is easier to roll into meatballs when the mixture is cooled down. (If doing so, preheat the oven 30 minutes before baking the meatballs.)
  • Roll or scoop the mixture using a 1- to 1 1/2-ounce ice cream scoop into 1 1/2-inch balls and place on the prepared baking sheet. Bake for 25 minutes, or until firm on the outside and light brown underneath.
  • Meanwhile, heat the marinara sauce in a large saucepan over low heat until simmering. Transfer the meatballs to the saucepan with marinara sauce. Toss with the sauce and serve.

3 tablespoons extra virgin olive oil
6 -8 garlic cloves, minced (I use food processor & finely mince garlic, onion & eggplant)
1 very large eggplant (or 2 Medium Sized Eggplants, peel 1st then dice in food processor)
1 tablespoon water
1 1/2-2 cups Italian seasoned breadcrumbs
1/2 cup fresh parsley, chopped (I mince this in food processor too)
2 eggs, beaten
1/2 cup grated mozzarella cheese
1/3 cup grated cheese

Steps:

  • In food processor, prepare the ingredients that need to be minced or diced mentioned above.
  • In a large saucepan, heat oil & gently sauté garlic until golden brown.
  • Add diced eggplant & water - then cover & simmer under low heat until eggplant is VERY soft. Drain if watery when done then transfer to large bowl.
  • Combine eggplant, breadcrumbs, parsley, eggs and cheese in large bowl. Let stand for 20 minutes.
  • Form into balls (same size as you prefer your meatballs to be) and fry in olive oil in large pan or bake in over for 30-35 minute at 325º or until brown.

The first time I tasted it I did not guess that it was eggplant. The tender pulp of the eggplant is used to make tasty croquettes. These croquettes are great as a side dish, or on an antipasto platter. After making them, I have found that I enjoy vegetarian balls even more than meat balls. I sometimes serve them with a Lebanese mezze but you can get fancy and make your own marinara and serve them over spaghetti. In both ways, they're simply delicious.

  • Preheat the oven to 350ºF (180ºC) and lightly grease 2 oven trays. Clean the eggplants, peel them and slice them into disks. Lightly drizzle with olive oil and bake them for 45 min until golden. Let them cool. In a food processor, finely chop the eggplant.
  • In a bowl mix the onion, garlic, breadcrumbs, basil, parsley, egg and parmesan cheese. Season with salt and pepper. Add the chopped eggplants.
  • Wet your hands with a little water and shape the eggplant mixture into balls. Place them on a non-stick oven tray and bake them for 25 minutes until deep golden brown and slightly crusty. Do not overbake or they will be too dry. Remove tray from oven and cover with foil to let the meatballs steam until ready to serve.

My toddler loves to eat eggplant this way. To increase the variety of foods she was eating and because I had no breadcrumbs I substituted ground almonds and couscous with good effect. I have also substituted the parsley with finely chopped up vegetables. This is a good base recipe to play around with.

  • To make eggplant balls, first wash, peel and cut the eggplant into cubes. Sauté them in a pan with 3-4 tablespoons extra-virgin olive oil and a small clove of garlic. Roast for 10 minutes with a pinch of salt. Then cover with a lid and cook for 5 minutes more. Cook in two phases if the pan isn’t large enough, but be sure to renew the olive oil and garlic! Collect the sautéed eggplant in a bowl and let cool. In the meantime, cut the stale bread into cubes and soften it in a little water: Soak the bread well, but not so much that it falls apart. Let the bread soak for about 15 minutes, squeezing the excess liquid out once finished. Transfer the soaked bread to a large bowl and crumble it using your hands for a kind of couscous texture.
  • Chop a handful of basil and parsley. Then mix 2 tablespoons with the crumbled bread. Chop the eggplant with a knife. Then add it to the breadcrumbs with the chopped green section of 1 spring onion, 1 egg, the grated parmesan cheese, salt and pepper. Mix the ingredients with your hands, working the dough until smooth. Finally, mix the ingredients with 50 more grams of breadcrumbs and let rest for about ten minutes. Prepare a baking sheet with a generous layer of breadcrumbs. Form the “meatballs” with the dough: You should have about 25 balls the size of apricots (about 4-5 cm in diameter).
  • Place the eggplant balls on the baking sheet and roll them in the breadcrumbs. Fry the meatballs in plenty of hot peanut oil for about 3-4 minutes. Fry a few at a time, so as not to lower the temperature of the oil too much and to keep them from falling apart. You can also bake them in the oven: For eggplant meatballs, frying is really the best way to make them, but you can also use the oven. They just won’t be as crunchy, but the taste will be the same! Place the eggplant meatballs on a baking sheet and grease with a drizzle of olive oil. Bake in the oven at 400°F for 15-20 minutes, turning them occasionally. A second alternative is browning them in a pan with a little extra-virgin olive oil a few at a time, turning them continuously with great delicacy to keep them from breaking. They should be ready in about 10 minutes.
