An easy and versatile dish made with ground turkey, spices, beans and rice for a delicious weeknight meal.

2 tablespoons olive oil
1-1.5 pounds ground turkey (or ground beef)
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon chili powder
1 teaspoon garlic powder
1/2 teaspoon cumin
1 cup frozen corn
1 (14 oz) can fire roasted diced tomatoes
1 (4 oz) can diced green chilies
1 can black beans, rinsed and drained
1 (12 oz) jar your favorite salsa
1 handful cilantro, roughly chopped
juice from 1 lime
2.5 cups cooked rice
1 cup shredded cheese (cheddar, jack or a blend)
avocado
sour cream
cilantro
chips

Steps:

  • Preheat the oven to 375 degrees. Heat a large skillet over medium/high heat. Add the oil, ground turkey, salt, pepper, chili powder, garlic powder and cumin. Break up the meat and cook for about 5-7 minutes until meat is cooked through.
  • Add the frozen corn, fire roasted tomatoes, green chilies, black beans and salsa and cook for 3-5 minutes until warmed. Add the cilantro and the juice of 1 lime and stir to combine.
  • Transfer mixture to a large bowl and stir in the cooked rice until mixture is well combined. Pour the entire mixture into a 13×9 baking dish and top with shredded cheese.
  • Bake for 20-25 minutes until cheese is melted and bubbly. Serve with desired toppings, a squeeze of fresh lime juice and enjoy!

3 Tbsp. extra virgin olive oil, divided
1 lb. 93%-fat-free ground turkey
1 Tbsp. TACO BELL® Reduced Sodium Taco Seasoning Mix
2 fresh jalapeño peppers, divided
1 white onion, finely chopped
1 orange pepper, seeded and finely chopped
1/4 tsp. freshly ground black pepper
1 can (15.5 oz.) black beans, drained
1 can (14.5 oz.) fire-roasted diced tomatoes with green chilies
9 oz. VELVEETA, cut into 1/2" cubes
1/2 cup red salsa
8 (6-inch) white corn tortillas
1 bunch fresh cilantro, for garnish
2 avocados, pitted and thinly sliced, for serving
1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream, for serving
2 limes, cut into wedges

Steps:

  • Preheat oven to 375°F and spray a 9-x-9" baking dish with non-stick cooking spray.
  • In a high-sided sauté pan over medium high heat, heat 2 Tbsp. olive oil. Add ground turkey, breaking up the meat with a wooden spoon. Cook until no longer pink, about 5 min. Stir in taco seasoning mix; cook 1 min. Using a slotted spoon, remove ground turkey to a plate.
  • Seed and finely chop 1 jalapeño. In the same pan, add remaining 1 Tbsp. olive oil, chopped jalapeño, onion and orange pepper. Season with black pepper and cook about 3 to 4 min. Add in black beans and roasted tomatoes and stir until combined. Stir in ground turkey. Check seasoning and remove from heat.
  • In a microwave-safe bowl, add VELVEETA and microwave on HIGH for 1 min. Remove from microwave and stir in salsa. Set aside until ready to build.
  • In the baking dish, add 4 tortillas. Next, add ½ of the turkey mixture and drizzle with ½ of the salsa mix. Add another layer of 4 tortillas, the remaining turkey mixture, and rest of the salsa and bake for 25 min.
  • Thinly slice remaining jalapeño. Remove taco bake from oven and top with jalapeño, cilantro, avocados, and sour cream. Serve with lime wedges.

1 ½ pounds ground beef
1 cup chopped onion
½ cup water
1 (1 ounce) package taco seasoning mix
1 (10 ounce) can refried beans
½ cup salsa
1 (6 ounce) can sliced black olives
1 (4 ounce) can diced green chiles
15 taco shells, broken up, or more to taste
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking pan with cooking spray.
  • Cook ground beef and onions in a skillet over medium heat until beef is browned, 7 to 10 minutes; drain grease. Stir in water and taco seasoning; cook, stirring often, until thickened, about 2 minutes. Add refried beans, salsa, olives, and green chiles. Cook and stir over low heat until ingredients are warmed through, 3 to 4 minutes.
  • Place half of the taco shells in the bottom of the baking dish. Pour in half of the ground beef mixture; sprinkle with half of the Cheddar cheese. Repeat with remaining taco shells, ground beef mixture, and Cheddar cheese.
  • Bake in the preheated oven until cheese is melted and bubbly, 20 to 25 minutes.

2 cups shredded Monterey Jack cheese, divided

2 cups cooked rice (cook 1 c dry rice with 2 c water for a 2 c rice yield)
12 ounces salsa
2 tablespoons taco seasoning (about 1/2 packet of commercially prepared taco seasonings, or the whole packet if you want extra tac)
1 cup sour cream
2 cups cheese, shredded
1/2 cup cheese, shredded
1 cup diced veggies such as carrot, bell peppers, olives, mushrooms, onions (whatever you add to tacos)
beans (red, black, pinto, etc or use salsa that is corn and bean based)

Steps:

  • After cooking the rice, combine all the other ingredients with the rice in a large bowl and stir until combined.
  • Pour mixture into a foil-lined 9 x 13 pan.
  • Sprinkle remaining 1/2 shreeded cheese on top.
  • Bake at 375 F for approximately 35-40 minutes, or until cheese and the top is beginning to brown.
  • *If you added extra beans, veggies, or your salsa was watery, this could lengthen cooking time.
  • Allow casserole to rest and cool for about 10 minutes to make slicing easier.
