ITALIAN DEVILED EGGS WITH GARLIC AND BASIL



Italian Deviled Eggs with Garlic and Basil image

You won't be able to eat just one of these bright deviled eggs, made with zesty garlic, fresh basil, and crunchy Parmesan breadcrumbs!

6 large eggs
1/4 cup mayonnaise
1-1/2 teaspoons extra-virgin olive oil (, divided)
1 small garlic clove (, minced)
1/8 teaspoon fresh lemon juice ((small squeeze, plus additional, to taste))
1 tablespoon chopped fresh basil
1 tablespoon unseasoned Panko breadcrumbs
1 teaspoon grated Parmigiano Reggiano
1/8 teaspoon grated lemon zest ((pinch))

Steps:

  • Place eggs in a heavy-bottomed pot and cover with cool water by 1 to 2 inches. Vent lid and bring just to a boil. Cover pot completely, lower heat, and simmer for 30 seconds. Remove from heat and let stand, covered, 12 minutes. Transfer eggs to a bowl of ice water and let stand for 10 minutes before peeling under cool running water. Slice eggs in half lengthwise.
  • Gently scoop yolks into a bowl. Set egg whites aside. Using a hand mixer or a whisk, mix in mayonnaise, 1 teaspoon extra-virgin olive oil, garlic, and lemon juice until smooth. Stir in fresh basil and season to taste with salt, pepper, and additional lemon juice, if desired.
  • In a small skillet over medium heat, warm remaining 1/2 teaspoon olive oil. Add bread crumbs and stir to combine, until crumbs are lightly toasted. Transfer to a bowl and season with a pinch of salt and a few grinds of black pepper. Let cool. Stir in Parmigiano Reggiano and lemon zest.
  • Fill egg white halves with garlic-basil yolk mixture. Sprinkle each egg with breadcrumbs just before serving and serve soon after assembling.

We took a cue from traditional Italian tonnato sauce (which uses canned oil-packed tuna) and combined it with classic deviled egg filling. Topped with crispy fried capers and salmon roe (if you're feeling fancy) for extra salty pop, they'll be the hit of any cocktail party spread.

12 large eggs
1 (6-oz.) can oil-packed tuna
2 oil-packed anchovy fillets
1/2 cup mayonnaise
2 Tbsp. fresh lemon juice
2 Tbsp. capers, drained, divided
1/2 tsp. kosher salt
4 Tbsp. extra-virgin olive oil, divided
2 Tbsp. salmon roe (optional)

Steps:

  • Bring a large pot of water to a boil over medium-high heat. Gently lower cold eggs into water. Cook 10 minutes, then drain and transfer to a large bowl of ice water.
  • Carefully peel eggs and cut in half lengthwise. (To get clean cuts, use a very sharp knife and wipe the blade between each cut.) Pop out yolks and transfer to a food processor. Arrange whites on a platter.
  • Add tuna, anchovies, mayonnaise, lemon juice, and 2 tsp. capers to food processor and purée until smooth. Add salt and 2 Tbsp. oil and pulse just until combined. Transfer to a pastry bag or resealable plastic bag and snip the corner. Pipe into egg whites.
  • Cook remaining 4 tsp. capers and 2 Tbsp. oil in a small skillet over medium heat, stirring occasionally, until capers are crispy, 3-4 minutes. Transfer to a paper-towel-lined plate and let cool.
  • Top eggs with crispy capers and salmon roe (if using).
  • Do Ahead: Whites and filling can be made 1 day ahead. Tightly cover egg whites on baking sheet or platter and chill. Store filling in tightly sealed bag and chill.

1 tablespoon spicy brown mustard
1 tablespoon Italian salad dressing
¼ cup mayonnaise
½ teaspoon ground black pepper, or to taste
½ teaspoon salt, or to taste
1 pinch paprika, for garnish

Steps:

  • Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool and peel.
  • Slice eggs in half, and remove the yolks. Place the yolks into a medium bowl, and mix with the mustard, Italian dressing, mayonnaise, and pepper. Arrange the egg white halves on a plate, and sprinkle with salt. Spoon the yolk mixture into the egg halves, or use a pastry bag and pipe the filling in for a more professional look. Sprinkle with paprika, and refrigerate until serving.

Make devilled eggs to serve at a Boxing Day buffet. They're filled with mustard, spring onions, mayo, yogurt and a pinch of cayenne. Top with chives, if you like

6 large eggs
2 tbsp mayonnaise
2 tbsp full-fat Greek yogurt
1 tsp Dijon mustard
2 spring onions, finely chopped
¼ tsp celery salt
pinch of cayenne pepper
chopped chives

Steps:

  • Put the eggs in a pan of just simmering water and cook for 10 mins. Turn off the heat, and leave the eggs to rest in the hot water for 2 mins. Drain, then transfer the eggs to a bowl of ice-cold water and leave to cool. Peel the eggs and slice in half, then scoop the yolks out into a bowl with the mayonnaise, yogurt, mustard, spring onions, celery salt and cayenne pepper. Mash everything together until smooth, then spoon into a piping bag fitted with a plain round nozzle.
  • Pipe the mixture into the hollowed-out eggs, or carefully spoon into the middles using a small spoon. Sprinkle over some chives, if using, then serve.

1 1/2 teaspoons prepared pesto sauce

Steps:

  • Peel and halve eggs.
  • Remove yolks to a small bowl and mash with a fork.
  • Add mayonnaise and mustard, blending until smooth.
  • Stir in pesto, cheese and lemon juice. Season with salt and pepper.
  • Spoon into egg white shells and garnish with parsley.
  • Refrigerate to meld flavors.
