HONEY-RUM GRILLED BANANAS
These grilled bananas are the perfect dessert following a cookout. My family was skeptical at first, but everyone tried the recipe and they all agreed it was delicious. I use coconut rum from the Bahamas. -Lori Wendt, Mahomet, Illinois

- In a small bowl, combine rum, honey and cinnamon; set aside. Cut bananas in half lengthwise, leaving the peel on. , Place bananas cut side down on grill. Cover and grill over medium heat for 3 minutes. Turn and brush with honey mixture. Cover and grill until tender, 5-6 minutes. Peel bananas. Serve immediately with ice cream.

BAKED BANANA WITH CINNAMON & HONEY (LOW FAT / HEALTHY)
I love banana's but can't stand to eat them when they're over-ripe so I always end up binning some. In a bid to cut down on wastage I now eat this delicious baked (or you could BBQ it) banana combo for my breakfast. I like it so much now that it's gone from being a recipe I use to get rid of my over-ripe banana's to being my standard week-day breakfast! It's so versatile... great on it's own, over porridge or weetabix, on toast, with yogurt, or over ice cream... Mmmmmmm!

Steps:
- Pre-heat the oven to 200c (or get your BBQ nice and ready if you're BBQing).
- Either slice the banana up into bite-sized pieces or cut it in half lengthways if you're looking for a smarter presentation or are having an ice cream banana split.
- Place the banana on an over-sized square of tin foil and sprinkle with cinnamon (to taste).
- Drizzle 2tsp of honey evenly over the banana and gather up the corners of the foil to create a little banana parcel.
- Place the parcel in the oven (or on the barbie) and bake for approximately 15mins.
- NB. Baking time depends on how you prefer your bananas - the more you bake, the more soft and gooey they get and the more the honey caramelises onto them. Personally I don't like mine too over-baked as I prefer the banana to still be a bit hard and the honey to be liquid.

GRILLED BANANAS
Steps:
- Build a charcoal fire or preheat a gas grill.
- Slice the bananas, in their skins, in half crosswise and then lengthwise so each banana yields 4 pieces. Set aside on a clean platter. In a small bowl, combine the sugar and cinnamon. Drizzle the honey on the cut sides of the bananas and sprinkle them with the cinnamon sugar. Let the bananas sit for 5 minutes.
- Place the bananas, cut side down, on the center of grill. Grill for 2 minutes or until grill marks appear. Using a pair of tongs, turn them over and cook for 5 more minutes, or until the skin pulls away from the bananas. Remove the bananas from the grill and serve them immediately, on top of vanilla ice cream and drizzled with bourbon or liqueur, if desired.

Oh dear, even my desserts have to be cooked on the BBQ! Although I've said the recipe is two serves I must admit the photo is actually the full quantity that I managed to get through myself.

- Spoon one teaspoon of honey and sprinkle 1/4 teaspoon brown sugar over the top of each split banana piece.
- Cook on medium barbecue plate for three minutes on each side.
- Place ice-cream into bottom of bowl and top with bananas while still hot. Sprinkle with cinnamon.

- Peel bananas.
- Halve lengthways.
- Spray with the cooking spray.
- Combine honey and lime juice in a small bowl, and set aside.
- Prepare grill, and upon reaching 350 degrees, place bananas on grill cut side down.
- Grill for 2 minutes, brush with the honey lime sauce, turn.
- Grill for 2 minutes on round side, brush with remaining sauce.
- Serve and enjoy!

- Heat oven to 200C/180C fan/gas 6 (or a BBQ). Make a slit through the skin of the bananas along one side - making sure you don't cut all the way through to the other side. Poke in the chocolate buttons along the cut. Put each banana onto a sheet of foil and crimp the edges together to seal into a parcel. Transfer to a baking sheet and cook for 25 mins until the bananas have turned black (or pop straight into the BBQ embers for 15 mins).
- Serve with a scoop of ice cream and any melted chocolate that has escaped!

- Beat butter at medium speed with mixer in a large mixing bowl; add honey, beating well. Add eggs, one at a time, beating after each addition, add the banana and mix well.
- Combine flour, soda, and salt; stir in pecans. Add to the butter mixture, stirring just until the dry ingredients are moistened.
- Spoon batter into a lightly greased and floured 9 x 5-inch loaf pan.
- Bake 350°F for 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool in pan for 10 minutes; remove from pan and cool completely.

- Preheat oven to 350 degrees.
- Make a cut lengthwise on the plantain peel; open it and cut the plantain into two halves, again lengthwise.
- Grease a baking sheet or cover a sheet with foil; place the plantain over is peel on the tray.
- Insert the cloves, distributing them evenly along the two halves.
- Sprinkle some of the raw sugar and allspice over.

- Mix the butter with the sugar and treacle, then add the rum. Make a split through the inside curve of each banana skin - be careful not to cut all the way through. Spread a spoonful of the spiced butter inside each skin.
- Place the bananas, curved-side up - so the butter doesn't leak when it melts - onto individual sheets of foil large enough to wrap them completely. Crimp up the foil to make a parcel, then put onto the embers for 15 mins, turning once. The bananas should be sticky and caramelised, but check one and cook for longer if necessary. Serve with a scoop of ice cream.

- Cut 4 large rectangles of baking foil, peel the bananas (keeping them whole) and lay one on each piece of foil. Stab them carefully in several places with a small toothpick.
- Mix together rum, sugar, orange juice and cinnamon, add to each parcel and place 1/4 of the butter on top of the banana in each parcel.
- Carefully join up the long sides of the foil over the banana and fold over several times to seal, then fold up the short ends of the foil so that the liquid can not escape during cooking.
- Place the parcels on the BBQ and grill for 15 minutes, turning them over once after 7 minutes.
- Open the parcels carefully and transfer to serving dishes, pour over liquid that is left in the foil, decorate with orange slices and serve with whipped cream or icecream.

I created this recipe one day out of desperation. We had invited guests for dinner, and about a half hour before they were due to arrive, I realized I had forgotten all about preparing a dessert! - Hold banana with both ends facing up and cut through the skin down the center, lenghtwise, not piercing the banana.
- Pull the skin apart and make 8 horizontal slices into the banana, about 1/2 inch apart or so.
- Place a piece of the Hershey bar into a slice, and a Marshmallow into the next one, and so on until all slices are filled.
- Pull the skin of the banana closed again and wrap the banana in foil.
- Place banana on it's side, either on BBQ grill, with medium heat setting, this can also be done in a 350 degree oven.
- Let the banana cook for 10 minutes or until the banana is soft to the touch.
- Unwrap banana (the skin will most likely be dark in color or seem burned), let stand for 5 minutes (can be very hot), and enjoy!
