These traditional Italian Mostaccioli di Mamma cookies are a must for your Christmas holiday cookie platter. They are an almond based, soft,chocolaty, spicy, honey-flavored cookie.

5 1/2 cups all purpose flour (780 grams)
4 teaspoons baking powder
1 teaspoon cloves
1/2 teaspoon cinnamon
2 oz unsweetened cocoa powder (2/3 cup )
1 pound coarsely ground almond (3 1/2 cups)
6 eggs (extra large, room temperature)
1 pound honey (1 1/3 cups, slight warmed)
1 cup granulated sugar
zest of 2 oranges
juice of 1 orange
1 teaspoon pure vanilla extract
Good quality chocolate for glazing. (I prefer a bittersweet chocolate...at least 70%)

Steps:

  • Preheat oven to 350° F. Position rack in the center.
  • Line baking sheet with parchment paper.
  • In a large mixing bowl, sift together dry ingredients. (flour, baking powder, cloves, cinnamon, and cocoa).
  • Add ground almonds and incorporate with the dry ingredients. Set aside.
  • In a large mixing bowl or the bowl of an electric mixer fitted with the whisk attachment, beat the eggs for 2-3 minutes.
  • Add honey. Continue to whisk until well thickened.
  • Add sugar. Beat well.
  • Add orange zest, juice and extract.
  • Switch to paddle attachment. Add flour mixture until just combined. (Dough will be soft and sticky).
  • Working with dough in small batches, place on well-floured wooden board and roll out to 1/4 - 1/2" thick.
  • With a rhombus-shaped cutter or with a knife cut dough (I use a 2-inch cutter).
  • Place on cookie sheets.
  • Continue until all the dough has been shaped. Leftover dough trimmings can be re-rolled.
  • Bake at 350° F for about 15-18 minutes or until firm to touch.
  • Let cool completely before glazing with chocolate.

1 1/2 cups all-purpose flour
3/4 cup cake flour
1/2 cup almond flour
1/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon fine sea salt
1/4 teaspoon ground nutmeg
Zest of 1/2 large lemon
Zest of 1/2 small orange
2 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter
1 cup sugar
1/4 cup whole milk
2 tablespoons dark rum
1 large egg, at room temperature
1 1/2 cups semisweet chocolate chips (9 ounces), such as Ghirardelli
1/4 cup heavy cream

Steps:

  • Position a rack in the center of the oven and preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper or silicone liners.
  • For the cookies: In a food processor, pulse together the flours, cocoa powder, baking powder, cinnamon, salt, nutmeg and the lemon and orange zests. Add the olive oil and butter and pulse until blended.
  • In a large bowl, whisk together the sugar, milk, rum and egg until smooth. Gradually stir the flour mixture into the egg mixture until a stiff dough forms. With damp fingers, shape the dough into 1-inch balls and place about 1-inch apart on the prepared baking sheets. Bake until the cookies are firm to the touch, 10 to 11 minutes. Cool for 10 minutes, then transfer the cookies to wire racks to cool completely, about 15 more minutes.
  • For the icing: Put the chocolate chips and cream in a heatproof medium bowl and place the bowl over a pan of barely simmering water. Stir frequently until the chocolate has melted and the mixture is smooth.
  • Dip the cookies halfway into the icing, then return them to the racks and let set at room temperature until firm, 1 1/2 to 2 hours.

Mostaccioli are typical Neapolitan cookies, also common through Southern Italy. The name of these cookies comes from the Latin mustacea, a cake made out of "must," or unfermented grape juice. Cato, the anciant Roman philosopher, describes a cake made of combination of rye flour, cumin, cheese, anise, and eggs, wrapped in bay leaves. In the modern traditional recipe, there is not much left of the ancient Roman one, other than a similarity in the name. But mostaccioli have been traditionally very popular all throughout central and southern Italy for centuries. There are many different versions, some containing honey or chocolate, some harder or softer, but all very rich in spices. Mostaccioli can become very tough if they become dry, but the chocolate icing help keep them soft for a longer time.

2 cups flour
1/2 cup cocoa
1/2 cup roasted almonds, ground
1/2 cup butter
1 cup sugar
1 egg
1/3 cup milk
1/4 teaspoon cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground black pepper
1/2 teaspoon baking powder
1/2 teaspoon baking soda
3 tablespoons unsweetened cocoa
1 1/4 cups confectioners' sugar
candy sprinkles

Steps:

  • Directions.
  • 1. Prepare Dough: Preheat oven to 400 degrees F. In medium bowl, combine flour, cocoa, roasted almonds, cinnamon, nutmeg, cloves, baking powder, baking soda, and pepper. In large bowl, with mixer at low speed, beat granulated sugar with butter until blended, occasionally scraping bowl with rubber spatula. Increase speed to high; beat until light and creamy. At low speed, beat in egg. Alternately beat in flour mixture and milk, beginning and ending with flour mixture, just until combined, occasionally scraping bowl.
  • 2. With cocoa-dusted hands, shape dough by level tablespoons into 1-inch balls. Place balls, 2 inches apart, on ungreased large cookie sheet. Bake cookies 7 to 9 minutes or until puffed (they will look dry and slightly cracked). Transfer cookies to wire rack to cool. Repeat with remaining dough.
  • 3. Chocolate Glaze: When cookies cool, in medium bowl, with wire whisk or fork, gradually mix cocoa with 1/4 cup boiling water until smooth. Gradually stir in confectioners' sugar and blend well. Dip top of each cookie into glaze. Place cookies on wire rack set over waxed paper to catch any drips. Immediately sprinkle cookies with decors. Allow glaze to set, about 20 minutes. Store cookies, with waxed paper between layers, in tightly covered container at room temperature up to 3 days, or in freezer up to 3 months.

COOKIE DOUGH
3 eggs
1 c sugar
3/4 c cream
1/2 c oil
3 Tbsp baking pow
1 1/2 tsp ground cloves
1/2 tsp cinnamon
1/4 tsp nutmeg
8 Tbsp unsweetened cocoa powder
1 Tbsp pure vanilla extract
5 c all purpose flour
1/4 c chopped nuts (walnuts or almonds are traditional) (the nuts are optional)
1 c mini semi-sweet chocolate chips (optional and not traditional)
CHOCOLATE COOKIE GLAZE-YOU CAN ALSO JUST MAKE IT AS A SIMPLE WHITE GLAZE AS WELL
1 Tbsp unsweetened cocoa powder (optional)
1 tsp pure vanilla extract
2 Tbsp milk
enough powdered sugar to make a drizzle consistency glaze
non pariels for decorating (optional)

Steps:

  • 1. Preheat oven to 375'F
  • 2. In a bowl, blend all the ingredients EXCEPT flour. Beat with an electric mixer, then slowly add the flour and stiff dough will form, you may want to do the rest by hand if you don't have a stand mixer. Add nuts which are optional but recommended which are traditional. Also this is where you would add the mini semi-sweet chocolate chips, which aren't traditional but add some decadent chocolate flavor.
  • 3. Roll into 1 1/2 teaspoon balls and place on parchment lined cookie sheets. Bake for about 7-10 minutes just when cookies look like they begin to crack. Make sure not to over bake or they will dry out.
  • 4. Remove cookies when done and place on a cooling rack or cooling sheet until completely cool and then begin next step to glaze cookies.
  • 5. Mix ingredients for glaze until you get a glazey spreading consistency. Dip top part of cookie into glaze and place on lined cookie sheets, you may leave them as is or sprinkle with colored non pariels. Leave cookies so that the glaze may thoroughly dry. Store in an airtight container until ready to serve or place on platters.
