Impossibly easy, this chicken sauté blends creamy cannellini beans and fresh basil plus chopped canned tomatoes. Bellissimo!

1 tablespoon olive oil
1 1/4 lb. boneless skinless chicken thighs
2 garlic cloves, minced
1 (14.5-oz.) can diced tomatoes with Italian herbs, undrained
1 (15 or 19-oz.) can cannellini beans, drained, rinsed
1 tablespoon chopped fresh basil or 1 teaspoon dried basil leaves, if desired

Steps:

  • Heat oil in large skillet over medium-high heat until hot. Add chicken thighs; cook until lightly browned on all sides.
  • Reduce heat to medium-low. Add garlic to skillet; cook about 1 minute or until tender. Add tomatoes; cover and cook 10 to 15 minutes or until chicken is fork-tender and juices run clear, stirring occasionally.
  • Stir in beans; cook until thoroughly heated. Sprinkle with basil.

SPICY ITALIAN CHICKEN CASSEROLE image

Juicy chicken with crispy skin in a spicy tomato sauce with bell peppers, olives and capers. Inspired by Mario Batali's Sicilian Chicken (but more sauce!). Feel free to dial back the spiciness. Made on the stove, this is a hearty dinner on the table in 30 minutes. Recipe VIDEO below.

Number Of Ingredients 14

5 chicken thighs , skin on, bone in (about 200g / 7 oz each) (Note 1 for breast)
Salt and pepper
2 tsp olive oil
2 garlic cloves (, minced)
1 medium onion (, finely chopped)
1 EACH red and green capsicum / bell pepper (, sliced)
½ cup / 125 ml white or red wine (any is fine, I use dry white) (Note 2 for subs)
800 g / 28 oz can crushed tomato
¾ cup / 185 ml water (, swilled in empty tomato can)
1 tsp red pepper flakes ((chilli flakes), adjust to taste)
3/4 cup black olives (, pitted (or 1/3 cup sliced))
2 tbsp baby capers
Salt and pepper to taste
¼ cup finely chopped parsley

Steps:

  • Use a small knife to prick 5 or so gashes into the skin of the chicken. Sprinkle each side with salt and pepper.
  • Place chicken skin side down in a cold large non stick skillet, then turn stove onto medium high. As it heats up, the fat under the skin will start to melt through the holes in the skin.
  • Cook for 4 - 5 minutes or until the skin is golden and crispy. Turn the chicken and cook the other side for 3 minutes.
  • Remove chicken onto a plate, discard fat (don't scrape the pan) then return to the stove.
  • Add oil, garlic and onion. Cook for 1 minute, then add capsicum. Cook for 2 minutes then add wine. Bring to a simmer and stir, scraping the pan to get those golden bits mixed in.
  • Once most of the wine is evaporated and it doesn't smell winey anymore, add the tomato, water and pepper flakes. Stir, bring to a simmer, adjust heat so it's bubbling energetically but not rapidly (and not slowly).
  • After 5 minutes (or so), stir through olives and capers. Taste the sauce and add salt and pepper.
  • Then place chicken into the sauce, being careful not to submerge the skin. Cook for another 5 minutes.
  • Sprinkle over parsley. Serve with crusty bread, or use half the sauce to toss through / pour over pasta and the other half to serve with chicken (see photos in post).

1 cup pastina pasta (or any small pasta)
2 tablespoons olive oil
1/2 cup cubed chicken breast (1-inch cubes)
1/2 cup diced onion (about 1/2 a small onion)
1 clove garlic, minced
1 (14.5-ounce) can diced tomatoes with juice
1 cup shredded mozzarella
1/4 cup chopped fresh flat-leaf parsley
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup bread crumbs
1/4 cup grated Parmesan
1 tablespoon butter, plus more for buttering the baking dish

Steps:

  • Preheat the oven to 400 degrees F.
  • Bring a medium pot of salted water to a boil over high heat. Add the pasta and cook until just tender, stirring occasionally, about 5 minutes. Drain pasta into a large mixing bowl.
  • Meanwhile, put the olive oil in a medium saute pan over medium heat. Add the chicken and cook for 3 minutes. Add the onions and garlic, stirring to combine, and cook until the onions are soft and the chicken is cooked through, about 5 minutes more. Put the chicken mixture into the bowl with the cooked pasta. Add the canned tomatoes, mozzarella cheese, parsley, salt, and pepper. Stir to combine. Place the mixture in a buttered 8 by 8 by 2-inch baking dish. In a small bowl mix together the bread crumbs and the Parmesan cheese. Sprinkle over the top of the pasta mixture. Dot the top with small bits of butter. Bake until the top is golden brown, about 30 minutes.

4 boneless skinless chicken breasts
1 cup dry breadcrumbs
1/2 cup grated romano cheese or 1/2 cup parmesan cheese
2 tablespoons chopped parsley (fresh is best but dried works in a pinch)
1/2 cup flour
salt and pepper
1/4 teaspoon garlic powder
1 egg
2 -3 tablespoons olive oil

Steps:

  • Clean breasts of visible fat and tendons. Pound each with the flat side of a mallet until evenly 1/4 inch thick. (You may want to cut large cutlets in half).
  • Mix breadcrumbs in flat bowl with cheese and parsley.
  • Mix flour in another flat bowl with salt, pepper and garlic powder.
  • Beat egg and water in another flat bowl.
  • Dredge each piece in flour, then egg, then dip in egg and coat with breadcrumbs. Set on a piece of wax paper for 5 minutes to let breading adhere.
  • Heat olive oil in pan over medium heat. Add chicken cutlets and cook about 4 minute per side until nicely browned.

1 pound ditalini pasta (a very short macaroni-type pasta)
2 tablespoons olive oil
1 fryer chicken, cut into pieces
8 cups low-sodium chicken broth
2 green bell peppers, diced
2 stalks celery, diced
2 fresh jalapenos, diced
1 medium onion, diced
1/2 teaspoon dried oregano
One 28-ounce can diced tomatoes
2 cups heavy cream
Parmesan shavings, for serving
Crusty Italian bread, for serving

Steps:

  • Bring a large pot of water to a boil and add salt. Cook the pasta in the boiling water according to the package directions; do not overcook. Drain and rinse in cold water to cool. Toss in 1 tablespoon of the olive oil and set aside.
  • Put the chicken pieces in a large pot or Dutch oven and cover in the chicken broth. Bring to a boil, lower to a simmer and cook, covered, for 45 to 50 minutes.
  • Remove the chicken pieces from the pot, shred the meat and set aside. Discard the bones and skin. Skim the fat from the stock, then strain the stock and set aside.
  • In a new pot, add the remaining 1 tablespoon olive oil and saute the bell peppers, celery, jalapenos, onion and oregano over medium heat until the vegetables are tender and golden brown, about 10 minutes. Add the tomatoes with their liquid and the reserved chicken stock and shredded chicken. Bring to a boil, then reduce to a simmer. Add the cooked pasta and cream and stir to combine. Turn off the heat.
  • Serve with lots of Parmesan on the top--the more the better--and crusty Italian bread is good too.

1 cup grated Parmesan cheese
7 ounces seasoned bread crumbs
6 skinless, boneless chicken breast halves
1 tablespoon vegetable oil
12 ounces pasta sauce
6 slices Monterey Jack cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Pour beaten eggs into a shallow dish or bowl. In another shallow dish or bowl, mix together the grated Parmesan cheese and bread crumbs. Dip chicken breasts into beaten egg, then into bread crumb mixture to coat.
  • In a large skillet, heat oil over medium high heat. Add coated chicken and saute for about 8 to 10 minutes each side, or until chicken is cooked through and juices run clear.

2 boneless skinless chicken breasts, pounded to 1/2-inch thickness
2 tablespoons flour
2 teaspoons italian seasoning
1/4 teaspoon salt
1/4 teaspoon black pepper, freshly ground
2 tablespoons olive oil
1/4 cup scallion, sliced thin
1 garlic clove, minced
1/4 cup white wine
1 tablespoon lemon juice
1 (28 ounce) can diced tomatoes (with olive oil and garlic if available)

Steps:

  • To prepare chicken breasts, season both sides with Italian seasoning, salt and pepper. Then lightly dust with flour on each side.
  • In a large skillet at medium-high heat, saute scallions and garlic in 1 tbs. olive oil until tender. Remove from skillet and set aside, covered.
  • Add remaining 1 tbs. olive oil to skillet and brown chicken breasts for 5 minutes on each side.
  • Add scallions and garlic back to skillet. Then add tomatoes, white wine and lemon juice. Simmer on medium-low heat for 15-20 minutes until tomato mixture is reduced by half and chicken is cooked through.
  • Serve each chicken breast topped with tomato mixture.

4 cups broccoli florets (2 lg stalks)
4 cups cauliflower florets (about a half head)
1 large onion, diced
15 snow peas, halved
2 garlic cloves, minced
1 1/2 teaspoons Italian salad dressing mix (dry)
2 tablespoons butter
2 tablespoons olive oil
1/4 cup parmesan cheese
salt & pepper
2 tablespoons water

Steps:

  • Cut broccoli and cauliflower into bite sized pieces. Peel and slice broccoli stalks and cut into 1/4 inch thick coins. Steam or boil for 3 minutes. Drain and set aside.
  • in large saute pan, saute onion and garlic in butter and oil for 2 minutes. Add 2 tablespoons of water, snow peas, broccoli and cauliflower to pan. Sprinkle with seasoning blend, toss to distribute seasonings, cover and saute an additional 5 to 7 minutes.
  • When vegetables are heated through and still tender crisp add 1/4 cup grated parmesan cheese.
  • Season to taste with salt & pepper. Toss and serve hot.

A wonderful quick and easy meal. I came up with this because I always have a ton of canned tomatoes on hand and a bunch of chicken. I wanted something different and low calorie. Once I snuck a bunch of broccoli VERY chopped up in here. I had to cook it forever so the husband couldn't tell it was in the dish, but it work like a charm! He still loved it!! Enjoy! (Pasta is included in the nutritional information, so cut back on that if you are watching your weight.)

1 whole boneless skinless chicken breast, cut into small cubes
1 tablespoon olive oil
1 (14 1/2 ounce) can chopped tomatoes
6 -8 cloves garlic, chopped
1 tablespoon parsley
1 teaspoon Italian spices
1/2 teaspoon red pepper flakes (more if you like it hotter)
salt and pepper
1 tablespoon chopped onion
1 tablespoon tomato paste
1/4 lb penne pasta, cooked

Steps:

  • Cut raw chicken into small cubed pieces.
  • Place into skillet with Tbsp of olive oil.
  • Cook until the chicken is almost done.
  • Then add the chopped garlic and onion and continue to cook until the meat is completely cooked.
  • Add tomatoes, Italian spices, red pepper flakes and salt and pepper to taste.
  • Continue to cook for about 3-7 minutes more.
  • Then add in the tomato paste.
  • Cook about 5-7 minutes more to complete.
  • Meanwhile, heat the pasta according to the package directions.
  • After cooking the pasta, drain but do not rinse.
  • Serve the sauce over the pasta and enjoy!

CHICKEN DRUMSTICK SAUTé

1 lb chicken drumstick, skin and fat removed
5 tablespoons olive oil (plus 2 more for sautéeing)
7 tablespoons white wine vinegar
1 tablespoon fresh parsley, chopped
1 large garlic clove, minced
salt & freshly ground black pepper
1 fresh lemon

Steps:

  • In a bowl, whisk together 5 tablespoons olive oil, the vinegar, parsley, garlic, and salt and pepper to taste. Pour over chicken and allow to marinate 10 minutes or so.
  • Heat 2 tablespoons olive oil in a large skillet heated over medium heat. Brown chicken on all sides, reduce heat to low and add marinade from step 1. Cover pan and cook until juices run clear, about 15 - 20 minutes, turning at least once. Remove cover and cook until sauce is desired consistency.
  • Squeeze the juice of one lemon over top, stir gently, and serve.

ITALIAN SAUTEED ROSEMARY BASIL CHICKEN

2 sprigs of chopped fresh rosemary
2 boneless chicken breasts sliced around 1/2 inch thick
3 cloves minced fresh garlic
2 tablespoons chopped fresh basil
olive oil for cooking
canola oil for cooking
salt, black pepper and cayenne pepper to taste
1/4 cup lemon juice
3 tablespoons olive oil
1/4 teaspoon dried oregano
1/2 teaspoon dried or fresh parsley

Steps:

  • Place sliced chicken breasts in a zip lock bag, add the lemon juice, 3 tablespoons olive oil, oregano, basil, and parsley.
  • Marinate overnight or at least 3 hours. Pour out the lemon juice best as you can before saute the chicken.
  • In a large fry pan, add 1 tablespoon olive oil and 2 tablespoons canola oil. Add the garlic, chicken, and rosemary.
  • Saute chicken on both sides until nicely browned around 5 minutes on each side or until juices run clear.
  • Add the fresh basil and toss. Sprinkle with salt, pepper, and cayenne to taste. Drizzle with rest of olive oil and seasonings you like.
  • Perfect to top a garden salad, chicken salads or as your entree with a side of vegetables.

1/2 teaspoon dried orégano, crumbled

1/4 teaspoon sugar
3/4 pound spaghetti
1/4 cup heavy cream

Steps:

  • In a large saucepan sauté the onion, the garlic, and the bell pepper in the oil over moderately high heat, stirring, until the vegetables begin to brown. Add the chicken, the sausage, the tomatoes with the juice, the wine, the orégano, the basil, and the sugar and boil the mixture gently, stirring occasionally, for 10 minutes. While the mixture is boiling, in a kettle of boiling salted water boil the spaghetti until it is al dente and drain it well. To the tomato mixture add the cream and salt and pepper to taste and simmer the sauce for 3 minutes, or until it is thickened slightly. Divide the spaghetti between 2 plates and spoon the sauce over it.

Salt and pepper
12 ounces Sauteed spinach
1 red pepper, roasted, peeled and quartered
12 ounces goat cheese
8 ounces Parmesan
6 ounces flour
2 eggs
1/2 cup milk
Bread crumbs
4 teaspoons chopped Italian parsley
4 ounces Romano
2 teaspoons granulated garlic
6 ounces olive oil

Steps:

  • Preheat oven to 350 degrees F. Pound chicken and season each breast with salt and pepper. Top chicken with spinach, red pepper, goat cheese, Parmesan, salt and pepper, to taste. Roll chicken with ingredients inside. Lightly dust each piece of chicken with flour. Whisk eggs and milk in bowl. Roll chicken in milk-egg mix. Combine bread crumbs, parsley, Romano, garlic, salt and pepper in a separate bowl. Roll chicken in bread crumb mixture. Heat skillet to low-medium and add olive oil. Lightly saute the chicken until golden brown on both sides. Bake for 12 to 15 minutes or until done.

SAUTE OF CHICKEN AND BROCCOLI - ITALIAN STYLE

2 cups broccoli florets
8 ounces penne
3 tablespoons olive oil
1/4 cup minced onion
12 ounces skinless boneless chicken breast, cut into small dice
2 tablespoons white wine
1/2 teaspoon oregano
1 to 1 1/2 cups tomato sauce
2 tablespoons minced fresh parsley
Salt and freshly ground pepper

Steps:

  • Bring salted water to a boil. Parboil the broccoli for a minute and remove. Add the penne and cook for 8 to 10 minutes or until al dente.
  • In a large skillet heat the olive oil. When hot, add the onion and saute for 3 to 4 minutes. Add the chicken and saute, stirring continuously until no longer pink. Add the garlic and saute a few moments, then add the white wine, oregano and tomato sauce. Add the parboiled broccoli and simmer just to reheat. Season to taste with salt and pepper and garnish with Italian parsley. Drain penne and transfer to a bowl. Top with chicken and broccoli saute and serve.

Yield Makes 6 servings

Number Of Ingredients 8

6 large chicken breast halves with skin and bones
4 tablespoons olive oil
1 pound mushrooms, thickly sliced
2 cups chopped onions
1 large red bell pepper, cut into 1-inch pieces
1 cup dry white wine
1 cup canned low-salt chicken broth
1 1.42-ounce package spaghetti sauce seasoning mix

Steps:

  • Preheat oven to 350°F. Sprinkle chicken with salt and pepper. Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add 3 chicken breasts, skin side down; sauté until skin is brown, about 3 minutes. Transfer chicken, skin side up, to 15x10x2-inch glass baking dish. Repeat with remaining chicken.
  • Heat remaining 2 tablespoons oil in same skillet over medium-high heat. Add mushrooms, onions and bell pepper. Sauté until vegetables are tender and mushrooms begin to brown, about 12 minutes. Add wine; boil 2 minutes. Add broth and seasoning mix and bring to boil. Pour sauce over chicken.
  • Cover dish with foil. Bake chicken 25 minutes. Uncover and bake until chicken is cooked through and sauce thickens, about 15 minutes longer.
