WASHBOARD COOKIES
These cookies were the treat we would enjoy when we traveled on family shopping trips to Ft. Worth many years ago. My sister, Carrie, always made them and put them in a foil-covered shoe box. By the time we got to Ft. Worth, they were all gone! Now my daughter makes these cookies for me, and at the age of 90, I still think they are the greatest treat.

- Preheat oven to 325°. In a small bowl, cream butter and brown sugar until light and fluffy. Beat in egg, water and vanilla. Combine flour and baking soda; add to creamed mixture and mix well. , Shape into 1-in. balls. Place on greased baking sheets; flatten with a fork that has been dipped in water. Sprinkle with sugar. , Bake 15-20 minutes or until edges begin to brown. Cool on wire racks.

Steps:
- Preheat oven to 350°F.
- Mix the butter with 1 cup of the sugar on medium high-speed for 1 minute. Beat in the eggs, one at a time, blending well after each, until the mixture is fluffy and pale yellow, about 3 minutes. Stir in the lemon rind.
- In a medium bowl, whisk together the flour, baking powder & salt to combine. Fold the flour into the butter mixture using a spatula, mixing well. Gently knead the dough in the bowl for about 5 minutes.
- Place the remaining 1/2 cup sugar in a shallow dish. Using a small cookie scoop, shape pieces of dough into balls, then roll in the sugar. Place the cookes on a parchment lined or lightly greased cookie sheet, 2 inches apart. Flatten the cookies gently using the tines of a fork or make the horizontal lines.
- Bake for 18 - 20 minutes, or until a light golden colour. I like to rotate the cookie trays from top to bottom, halfway through the cooking process.
- Cool on the cookie trays for about 10 minutes, then transfer to a cooling rack. Enjoy.

Steps:
- Preheat oven to 350°F.
- Using an electric mixer, cream the butter and 1 C of the sugar, about 1 minute.
- Beat in the eggs, one at a time, blending well after each, until the batter is fluffy and pale yellow, about 2 to 3 minutes.
- Stir in grated lemon peel.
- In a medium bowl, wisk together flour and baking powder.
- Using a wooden spoon, fold the flour into the egg batter.
- Mix well. Gently knead the dough in the bowl for about 5 minutes.
- Place the remaining 1/2 C of sugar in a shallow dish.
- Shape pieces of dough into 1&1/2 inch balls.
- Roll in the sugar and place on parchment-lined or lightly greased cookie sheets, 2 inches apart.
- Flatten gently with tines of a fork to make horizontal lines.
- Bake for 20 minutes or until a light golden color.
STRAWBERRY SNOWBALL COOKIES
I love to enjoy a couple of these rose-tinged cookies with a cup of tea. I make the sweet pink sugar dust by pulsing freeze-dried strawberries with powdered sugar. For a less dense cookie, you can make them half as big.

- For the cookies: Beat the butter and powdered sugar with an electric mixer at medium speed until creamy. Beat in the vanilla. Combine the flour and salt in a medium bowl, then add to the butter mixture and beat until combined. Refrigerate for 30 minutes.
- Preheat the oven to 350 degrees F.
- Scoop the dough into 1-inch balls using a cookie scoop and place 2 inches apart on parchment paper-lined baking sheets. Bake the cookies until golden brown on the bottoms, 13 to 15 minutes.
- For the strawberry sugar dust: Meanwhile, pulse the strawberries in a food processor until it forms a powder. Add the powdered sugar and pulse until combined.
- Roll the warm cookies in the strawberry powdered sugar and transfer to wire racks to cool. Roll in the strawberry powdered sugar again, if necessary, after cooled.
