An easy weeknight dinner, this quick chicken stir-fry with pineapple is as delicious as it is colorful! Serve with rice for a complete meal, or fried rice for a treat. Add red chile flakes to the mix if you want something sweet and spicy!

3 tablespoons soy sauce
3 tablespoons olive oil, divided
½ teaspoon paprika
salt to taste
1 pound boneless, skinless chicken breast, cut into strips
1 red bell pepper, cubed
1 bunch scallions, trimmed and sliced into 1/2-inch lengths
1 (12 ounce) can pineapple chunks, drained and juice reserved
1 tablespoon cornstarch

Steps:

  • Combine soy sauce, 2 tablespoons olive oil, paprika, and salt in a bowl. Add chicken strips and let marinate while preparing the remaining ingredients.
  • Heat the remaining 1 tablespoon of olive oil in a wok. Add bell pepper and stir-fry for 3 minutes. Add scallions and cook for 2 more minutes. Remove chicken from marinade and add to the wok; discard marinade. Cook, stirring occasionally, until chicken is cooked through and no longer pink in the centre, 10 to 15 minutes.
  • Combine pineapple juice and cornstarch in a bowl; mix together. Add pineapple chunks to the skillet and cook for 2 to 3 minutes. Pour in pineapple juice mixture and bring to a boil. Simmer until sauce has thickened, about 3 minutes.

2 pound boneless, skinless chicken thighs
1 cup cornstarch + 2 tablespoons cornstarch
2 cups corn oil for frying
1 1/4 cup chicken broth
1 tablespoon white granulated Sugar
4 tablespoon soy sauce
2 tablespoon rice wine vinegar
1/2 teaspoon dry mustard
1 tablespoon ground ginger
1/2 tablespoon onion powder
1 tablespoon minced garlic
2 cups pineapple chunks
1 tablespoon sesame seeds, lightly toasted
1 tablespoon sesame oil
3 cups prepared white rice

Steps:

  • Cut chicken into bite size pieces.
  • Place chicken in a large bowl and cover with 1 cup cornstarch. Toss to coat chicken pieces evenly.
  • In a medium bowl, combine chicken broth, sugar, soy sauce, rice wine vinegar, 2 tablespoons cornstarch, dry mustard, ground ginger and onion powder. Whisk together and set aside.
  • Heat oil to about 350F in a large skillet.
  • Cook chicken pieces in batches, turning once in oil, for a total of 6-8 minutes. Drain on paper towels and keep warm. Continue until all chicken has been cooked.
  • Pour off all but 2 tablespoons of oil. In remaining oil, cook minced garlic for 1-2 minutes on medium heat.
  • Add pineapple chunks and stir.
  • Stir together chicken broth and cornstarch mixture to recombined. Pour into skillet and cook for 2-3 minutes or until sauce has thickened.
  • Add chicken and toasted sesame seeds to skillet. Toss together until chicken pieces are covered and heated through.
  • Sprinkle with sesame oil and toss again.
  • Serve over rice.

1 (15 ounce) can crushed pineapple
1/4 cup butter or 1/4 cup margarine
1/4 cup sesame seeds
1/4 cup light corn syrup
2 tablespoons lemon juice
2 tablespoons soy sauce
1 teaspoon ground ginger
1 teaspoon salt
2 tablespoons cornstarch
pineapple ring (optional)
parsley (optional)

Steps:

  • Cut chicken into bitesize chucks.
  • Drain pineapple, reserving juice.
  • Melt butter in large skillet over medium heat; add chicken.
  • Saute until browned, about 5 minutes.
  • Add pineapple, sesame seeds, corn syrup, soy sauce, lemon juice, ginger and salt; mix well.
  • Dissolve cornstarch in reserved pineapple juice in a glass measure.
  • Add enough water to equal 2 cups; pour over chicken mixture.
  • Simmer mixture over low heat, stirring occasionally, until sauce is thickened and chicken is cooked through, about 20 minutes.
  • Serve over rice.
  • Garnish with pineapple rings and parsley.

1 large pineapple
2 tablespoons peanut or vegetable oil
6 boneless chicken thighs, cut into bite-size cubes
1 teaspoon salt
1 teaspoon pepper
1 tablespoon hoisin sauce
1 tablespoon soy sauce
1 tablespoon brown sugar
1 tablespoon garlic paste
½ cup chicken stock
cooked rice, for serving
sesame seed, for garnish

Steps:

  • Using a sharp knife, carefully cut the pineapple in half lengthwise. Using the knife tip, cut around the inside edge of the pineapple, being careful not to cut through the skin. Slice down and across the pineapple flesh, then scoop out the pineapple cubes with a spoon. Discard the core and set the flesh aside.
  • In a large pan, heat the oil over medium heat. Add the chicken and season with salt and pepper. Fry for about 10 minutes, until browned and cooked through. Remove the chicken and set aside.
  • Add the cubed pineapple, hoisin sauce, soy sauce, brown sugar, and garlic paste and cook for a few minutes. Stir in the chicken stock, bring to a boil, then simmer, stirring occasionally, until the sauce has reduced and thickened.
  • Add the chicken back to the pan and stir until evenly coated with the sauce. Serve in the empty pineapple halves, along with some rice and sesame seeds.
