The cheese balls add a change to your pasta dinner. This is a great recipe that I got from my father. He made these while I was growing up and I loved them, now I want to share this with everyone.

1 pound ricotta cheese
1 (8 ounce) package cream cheese
¼ cup all-purpose flour
½ teaspoon salt
½ teaspoon vanilla extract
2 teaspoons grated lemon zest
2 eggs, beaten
4 egg whites
¾ cup white sugar

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C).
  • In a medium bowl, mix together the ricotta cheese, cream cheese, flour, salt, vanilla, lemon zest and eggs. In a separate bowl, whisk together the egg whites and sugar. Pour into the cheese mixture, and mix until well blended. Roll into balls about the size of a golf ball, and place in a glass baking dish.
  • Bake for 45 minutes in the preheated oven, or until golden brown on top.

1 cup shredded part-skim mozzarella cheese
1/2 cup chopped green onions
1 jar (2 ounces) diced pimientos, drained

1 cup finely chopped walnuts

Steps:

  • 1. Stir the seasoning packet (you can also use the generic brands) into the softened cream cheese, roll into a ball, then roll in chopped scallion greens or chopped nuts. Refrigerate for at least an hour before use.
  • 2. Serve with an assortment of crackers or breads or with veggies.

1 (5 Ounce) Container of Boursin Garlic & Herb Cheese
1 (8 Ounce) Cream Cheese At Room Temperature

3/4 Cup Grated Parmesan Cheese
2 Large Plum Tomatoes, Cored & Seeded, Then Chopped
1/2 Cup Chopped Sun-Dried Tomatoes Packed In Oil, Drained & Chopped
1/2 Cup Fresh Basil Leaves
1 Large Garlic Clove, Minced
1/2 Teaspoon Red Chili Flakes
1 Teaspoon Black Pepper
2 Long Skinny Baguette Breads, Cut Into 1/2 Inch Slices
Extra Virgin Olive Oil

Steps:

  • Place the cheese spread ingredients into a food processor and pulse until mixed. (Do not mix until completely smooth)
  • Scoop the mixture out onto a sheet of plastic wrap, and shape into a ball or oval.
  • Refrigerate for 6 hours or overnight.
  • Just before serving, heat the olive oil in a skillet over medium heat and add the breadcrumbs.
  • Cook the crumbs until golden brown, stirring continually, about 4 to 5 minutes.
  • Allow to cool to room temperature.
  • Remove the cheese ball from the refrigerator, unwrap, and roll in the breadcrumbs.
  • In a small bowl, mix together the garnish ingredients.
  • Place the cheese ball onto a large platter and then spoon the garnish on top.
  • Grill the bread slices until lightly browned on both sides, then brush with olive oil.
  • Arrange the bread slices around the cheese ball and serve immediately.

I just plain love good meatballs!, and mine are pretty darn good! *Omit the parmesan cheese when using for other recipes that are not italian-style.

1 1/3 lbs lean ground beef
1/2 cup dry breadcrumbs
1/4 cup ground parmesan cheese
1/2 teaspoon italian seasoning
1/4 cup milk
1 1/2 teaspoons dried onion flakes
1 teaspoon salt
1/2 teaspoon Worcestershire sauce
1 egg, beaten
1/4 teaspoon garlic powder
pepper

Steps:

  • In large bowl, mix all dry ingredients.
  • Add rest of ingredients and lightly mix, but mix well, with hands. Form into 20 meatballs.
  • Place them on lightly oiled cookie sheet.
  • Sprinkle tops lightly with coarse ground pepper.
  • Bake in 400º over for 20-25 minutes. *Mine always take 22 minutes in my oven.
  • If they are still just a little pink inside, it's ok if they are to simmer in a sauce, otherwise bake til done.
  • Simmer in spaghetti sauce on low for 5-10 minutes.
  • *You can omit the parmesan and use parsley instead if italian seasoning, and use these meatballs for other recipes.

12 oz shredded cheese (I used a Mexican blend)
1/4 cup milk
3 green onions (thinly sliced (optional))
2 tbsp Worcestershire sauce (optional)

Steps:

  • Preheat the oven to 300F.
  • Line a baking sheet with parchment paper.
  • Combine all of the ingredients in a large mixing bowl. You will need to use your hands to really thoroughly combine all of the ingredients.
  • Use a cookie scoop and then roll mixture in the palm of your hands to form into 1-inch balls.
  • Place on prepared baking sheet leaving a little room in between balls to allow for expansion.
  • Bake for 17-20 minutes or until lightly browned and cooked through.
  • Serve immediately with ranch, marinara, or bbq sauce.

3 tablespoons snipped fresh basil
2 tablespoons snipped fresh parsley
1 (8 ounce) package cream cheese, softened

2 ounces finely chopped hard salami
2 tablespoons finely chopped roasted red peppers
1/4-1/2 teaspoon cracked black pepper (to taste)
1 garlic clove, minced

Steps:

  • In a shallow dish combine 1 tablespoon of the chives, 1 tablespoon of the basil, and the parsley; set aside.
  • In a medium bowl beat cream cheese and Fontina cheese with an electric mixer on medium speed until smooth.
  • Beat in the salami and finely chopped roasted red sweet pepper and remaining 2 tablespoons chives, remaining 2 tablespoons basil, the pepper, and garlic.

all-purpose flour
2 eggs, beaten
breadcrumbs
oil for frying
more tomato sauce, to serve (optional)
basil leaves, for garnish
3 Tbsp extra virgin olive oil
4 oz white wine
approximately 30 oz chicken or vegetable stock
salt
1 egg
2 cups (15 oz) Carnaroli or Arborio rice (the best rice to use is Carnaroli)
meat sauce or tomato sauce (as in spaghetti sauce, not raw tomato sauce for vegetarian)
4 oz mozzarella, cut into 1/2″ to 3/4″ cubes
3 oz cooked peas (optional)

Steps:

  • Make the risotto by adding the rice to the heated oil in a large saute pan, and stirring quickly for one or two minutes. Quickly add the white wine while stirring. With the heat on medium high, begin adding the chicken stock a little at a time, and continuously stirring, until all the stock has been used and the rice is cooked, yet still al dente (I have a risotto recipe here on my blog). Taste; adding salt if necessary. Remove from heat and set aside to cool.
  • Add an egg to the risotto and mix well, then refrigerate for a few hours, or overnight.
  • To make the arancini:
  • Place some rice in your hand and flatten it into your cupped hand, but don't make it too thin, or the filling will ooze out. Place a piece of mozzarella, and/or a little tomato sauce (and peas, if using) in the center of the cupped rice. Next, close the rice around the filling and shape into a ball.
  • If you'd like to make conical shapes, flatten the bottom of the ball, and make the top more pointed.
  • Now, roll the shaped arancini in flour, then roll them in the beaten egg, and finally the breadcrumbs. Set aside until all of the rice has been used.
  • Heat some oil in a deep fryer, pot or wok until it is very hot. Add the arancini, and cook quickly, turning often so they don't brown too much on one side. If serving immediately, fry for a few minutes, so the cheese will melt in the center. Remove from oil and place on paper towel lined plate or tray. (If you'd like to serve them at a later time, remove them quickly after just browning; then, just before serving, place them on a baking sheet and re-heat in the oven at 400ºF for 5 to 10 minutes.)
  • Serve plain, or place on tray with a little tomato sauce and garnish with basil. You can also serve them with a little extra sauce on the side, although this isn't done in Italy.

  • In a small bowl soak the bread in the milk for about 5 minutes, then squeeze out moisture and crumple into small bits.
  • In a medium bowl combine the bread with ground beef, eggs, parmesan and spices gently mix to combine well (I use my clean hands, its the best way to do it). Form into small balls ( I form the meatballs into the size of a golf ball). In a medium frying pan on medium heat, add the olive oil and the meatballs, brown them on all sides.
  • While meatballs are browning, in a separate, large deep pan add the olive oil, the tomato puree (or peeled tomatoes), spices and water, stir until well combined. Add the browned meatballs. Over medium heat, heat to boiling, then lower heat to medium low and simmer for approximately 20 minutes (covered), then raise the heat to medium, (leave pan slightly uncovered 1/3 uncovered) and cook an additional 20 minutes, until sauce has thickened and meatballs are cooked through. Serve immediately, top with freshly grated parmesan cheese if desired. Don't forget some crusty Italian bread to soak up the delicious sauce. Enjoy!

  • Pour the whole container of oil into your pan. Start heating it up to 350 degrees or until a few bread crumbs turn brown. DO NOT GET RID OF THE BOTTLE.
