ITALIAN LAYER BAKE
Our recipe for Italian Layer Bake is a Mediterranean delight. This recipe features layers of Italian meats, peppers, and bubbly cheese under a golden crust. When you bring this dish out for lunch, everyone will be asking for seconds!

Steps:
- Preheat oven to 350 degrees F. Unroll crescent roll dough without separating triangles. Separate dough into 2 squares along center cut line.
- Place 1 square of dough into an 8-inch square baking dish. Using your fingertips, press dough to fit bottom of dish.
- Layer with half the turkey, ham, salami, Swiss cheese, and roasted peppers. Pour half the beaten eggs over the peppers and repeat the layers with remaining meats, cheese, and peppers. Place remaining square of dough over peppers. Pour remaining beaten eggs over dough and cover lightly with foil.
- Bake 20 minutes, remove foil, and bake an additional 20 to 22 minutes, or until golden and heated through. Let cool 5 minutes, then cut and serve.

- Preheat oven to 325 degrees F. Lightly spray a 2-quart round or 11x7-inch baking dish.
- In a large bowl mix all ingredients except the 2 cups pizza cheese and the Asiago cheese.
- Turn into prepared pan.
- Top with the shredded pizza cheese and the Asiago.
- Bake for 40-45 minutes or until top is nicely browned and bubbly.

- In a Dutch oven over medium heat, cook sausage, beef, onion and green pepper until meat is no longer pink; drain. Add the tomato sauce, tomato paste, water and seasonings; bring to a boil. - Preheat oven to 375 degrees F (190 degrees C).
- Remove casings from sausages and cut into 1-inch pieces. Place these into a 10x15-inch roasting pan. Layer the potatoes, carrots and onions over the sausages. Then pour the tomatoes over all. Season with salt, ground black pepper and oregano.

Some members of my family call it manicotti, some call it Italian casserole. So I call it Manicotti Italian Casserole. This is one of my all time favorite meals to make, and it's super easy! For gatherings I make the whole recipe, for my family I cut it in half.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to boil. Pour in rigatoni, and cook until al dente, about 8 to 10 minutes. Drain, and set pasta aside.

ITALIAN BAKE CASSEROLE
This casserole looks every bit as good it tastes! The aroma of the sausage and the onions, garlic and peppers all blended so well. My husband came into the kitchen and said it smelled like an Italian restaurant! I see this being a great recipe to take to a pot luck... everyone will love it!

- 1. In large skillet, cook Italian sausage until slices are no longer pink, about 10 minutes.
- 2. Remove sausage from the skillet and reserve about 2 tablespoons of the drippings.
- 3. In skillet, saute mushrooms, onions, bell pepper and garlic just under tender-crisp.
- 4. In large bowl, combine sausage, mushrooms, bell pepper mixture, stewed tomatoes, Italian seasoning.
- 5. Place a layer of pasta on the bottom of dish. Spoon mixture into a greased 3-quart or 9x13 baking dish. Add half of the mozzarella cheese and repeat layers.
- 6. Cover and bake at 350 degrees for 30 minutes. Remove from oven, sprinkle remaining cheese over top of casserole and return to oven for 5 minutes or until cheese is melted on top.
- 7. Variation: I always use spaghetti sauce instead of the Italian stewed tomatoes and season to my taste. I cook the sausage, onions, peppers and add to the spaghetti sauce. The sauce is cooked for 4 to 5 hours in the crock-pot and then layered in a casserole or 9x13 baking dish. I tend to use 2 cups of cheese because we are cheese lovers. To change the taste I will vary the cheese with the shredded Italian blend cheese along with the mozzarella cheese. I cook this until the casserole is heated throughout and the cheese is bubbling and melted.
