A Cajun classic, meal in one pot! Have the hot sauce ready to splash on. Serve with some crusty french bread, a nice crisp salad, and some of your favorite wine. :)

2 tablespoons extra virgin olive oil
1 1/2 lbs boneless skinless chicken thighs
1 lb andouille sausage, cut into 1/4 inch slices
1 large onion, chopped
2 celery ribs, diced
1/2 green bell pepper, diced
1/2 red bell pepper, diced
1/2 teaspoon dried thyme
1/4 teaspoon dried oregano
1/4 teaspoon sweet paprika
1/2 teaspoon salt
1/4-1/2 teaspoon cayenne pepper (optional)
1 1/2 cups long grain rice
1 (14 ounce) can tomatoes, chopped,with juice
2 cups chicken broth or 2 cups stock
8 ounces medium shrimp, peeled and deveined
2 tablespoons chopped fresh parsley
3 green onions, finely chopped

Steps:

  • Preheat oven to 350 degrees F.
  • In a large pan or Dutch oven, brown chicken in hot oil on both sides; remove and drain.
  • Add andouille, onion, celery, bell pepper, thyme, oregano, paprika, salt, and cayenne pepper to the pan, cooking and stirring for about 5 minutes until onions are tender.
  • Add rice, tomatoes with juice, and broth; bring to a boil.
  • Place rice mixture in a baking dish or oven-proof casserole; top with chicken; cover (can use foil) and bake at 350 degrees F for 40-45 minutes or until rice and chicken are done and tender.
  • Stir in shrimp, parsley, and green onions; cover and cook 5-8 minutes longer or until shrimp curl and turn bright pink and serve.

A spicy rice one-pot, inspired by Cajun and Creole cuisine with sweet, smoky paprika

6 good-quality pork sausages (we used pork & chilli)
sunflower oil , for frying
1 onion , chopped
1 red pepper , chopped
2 garlic cloves , crushed
1 tbsp sweet smoked paprika
250g easy-cook long grain rice
400g can chopped tomato with garlic & herbs
400-500ml chicken stock
260g pack cooked and peeled king prawn

Steps:

  • Fry the sausages in a large, deep, lidded frying pan until golden all over, then remove and set aside. Heat a little oil (unless there is enough fat from the sausages already in the pan) and gently cook the onion for 5 mins until soft.
  • Add the pepper, garlic and paprika, and cook for a few mins more, then stir in the rice, mixing to coat all the grains well. Tip in the tomatoes and enough stock to just cover the rice. Simmer with the lid on for about 10-12 mins until the rice is tender. Add more stock if you need to during cooking.
  • About 5 mins before the end of the cooking time, slice the sausages and return them to the pan. Cover and continue to cook until the rice is tender. Stir through the prawns, put the lid on and leave to heat through. Season and serve immediately.

1 small onion, chopped
1 garlic clove, minced
1 tablespoon butter
1/4 pound fully cooked smoked sausage, cut into 1/2-inch slices
1/2 cup chicken broth
1/2 cup canned diced tomatoes with juice
1/4 cup chopped green pepper
1 bay leaf
1/8 teaspoon dried thyme
Dash cayenne
1/4 cup uncooked long grain rice
1/2 cup cubed cooked chicken breast
1/4 pound uncooked medium shrimp, peeled and deveined

Steps:

  • In a skillet, saute onion and garlic in butter until crisp-tender. Add the sausage, broth, tomatoes, green pepper, bay leaf, thyme and cayenne. Bring to a boil; add rice. Reduce heat; cover and simmer for 15 minutes. Add chicken and shrimp; cook 5-10 minutes longer or until shrimp turn pink and rice is tender. Discard bay leaf before serving.

A Cajun-inspired rice pot recipe with spicy Spanish sausage, sweet peppers and tomatoes

1 tbsp olive oil
2 chicken breasts, chopped
1 onion, diced
1 red pepper, thinly sliced
2 garlic cloves, crushed
75g chorizo, sliced
1 tbsp Cajun seasoning
250g long grain rice
400g can plum tomato
350ml chicken stock

Steps:

  • Heat 1 tbsp olive oil in a large frying pan with a lid and brown 2 chopped chicken breasts for 5-8 mins until golden.
  • Remove and set aside. Tip in the 1 diced onion and cook for 3-4 mins until soft.
  • Add 1 thinly sliced red pepper, 2 crushed garlic cloves, 75g sliced chorizo and 1 tbsp Cajun seasoning, and cook for 5 mins more.
  • Stir the chicken back in with 250g long grain rice, add the 400g can of tomatoes and 350ml chicken stock. Cover and simmer for 20-25 mins until the rice is tender.

1/2 teaspoon dried oregano
3/4 teaspoon dried thyme
3/4 teaspoon garlic powder
3/4 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon ground white pepper
1/4 teaspoon cayenne pepper
500 g (1 lb 2 oz) boneless, skinless chicken thighs, cut into quarters
2 tablespoons oil
250 g (9 oz) chorizo, cut into 1 cm (½ inch) slices
1 large onion, chopped
2 celery stalks, sliced
1 large green capsicum (pepper), cubed
4 garlic cloves, crushed
2 teaspoons thyme
400 g (14 oz) tin chopped tomatoes
2 bay leaves
1/4 teaspoon Tabasco sauce
200 g (7 oz/1 cup) long-grain rice
875 ml (30 fl oz/3½ cups) hot chicken stock
450 g (1 lb) raw prawns (shrimp), peeled and deveined
5 spring onions (scallions), thinly sliced
3 tablespoons chopped parsley

Steps:

  • 1. Combine the oregano, thyme, garlic powder, onion powder, paprika, white pepper, cayenne, ¾ teaspoon salt and ½ teaspoon black pepper in a bowl. Add the chicken and mix to coat well. 2. Heat the oil in a wide, heavy-based frying pan over medium heat and cook the chorizo for 5-6 minutes, or until lightly browned. Remove with a slotted spoon, leaving as much oil in the pan as possible. Add the chicken in batches and cook over medium heat for 6-8 minutes, until lightly browned, adding a little more oil if necessary. Remove the chicken from the pan with a slotted spoon, leaving as much oil in the pan as possible. 3. Add the onion, celery, capsicum, garlic and thyme to the pan and cook over medium heat for 6-8 minutes, stirring often with a wooden spoon to lift any sediment from the base of the pan. When the vegetables begin to brown, add the tomatoes, bay leaves and Tabasco sauce and simmer for 2-3 minutes. 4. Return the chorizo and chicken to the pan. Add the rice, stir briefly, then pour in the stock. Don't stir at this point. Reduce the heat and simmer, uncovered, for 25-30 minutes, or until all the liquid has been absorbed and the rice is tender. Remove from the heat and add the prawns. Cover and leave for 10 minutes, then fluff the rice with a fork, season well and stir in the spring onion and parsley.

1 medium celery rib, cut crosswise into quarters
1 medium red bell pepper, stem removed, seeded, and quartered lengthwise
5 garlic cloves, peeled
2 teaspoons vegetable oil
4 chicken thighs, bone-in skin-on
8 ounces andouille sausages, halved lengthwise and cut into 1/4-inch pieces
1 1/2 cups long grain white rice (10 ounces)
1 teaspoon salt
1/2 teaspoon fresh thyme leave, minced
1/4 teaspoon cayenne pepper (see note)
1 (14 ounce) can diced tomatoes, drained 1/4 cup juice reserved
1 cup clam juice (bottled)
1 1/2 cups low sodium chicken broth
2 bay leaves
1 lb shrimp, shelled
2 tablespoons fresh parsley leaves, minced

Steps:

  • In food processor, pulse onion, celery, red pepper, and garlic until chopped fine, about six 1-second pulses, scraping down sides of bowl once or twice. Do not overprocess; vegetables should not be pureed.
  • Heat oil in large heavy-bottomed Dutch oven over medium-high heat until shimmering but not smoking, about 2 minutes. Add chicken, skin-side down, and cook until golden brown, about 5 minutes. Using tongs, turn chicken and cook until golden brown on second side, about 3 minutes longer.
  • Transfer chicken to plate and set aside. Reduce heat to medium and add andouille; cook, stirring frequently, until browned, about 3 minutes. Using slotted spoon, transfer sausage to paper towel-lined plate and set aside.
  • Reduce heat to medium-low, add vegetables, and cook, stirring occasionally and scraping bottom of pot with wooden spoon, until vegetables have softened, about 4 minutes.
  • Add rice, salt, thyme, and cayenne; cook, stirring frequently, until rice is coated with fat, about 1 minute. Add tomatoes, reserved tomato juice, clam juice, chicken broth, bay leaves, and browned sausage to pot; stir to combine.
  • Remove and discard skin from chicken; place chicken, skinned-side down, on rice. Bring to boil, reduce heat to low, cover, and simmer for 15 minutes. Stir once, keeping chicken on top, skinned-side down. Replace cover and continue to simmer until chicken is no longer pink when cut into with paring knife, about 10 minutes more;.
  • Transfer chicken to clean plate and set aside. Scatter shrimp over rice, cover, and continue to cook until rice is fully tender and shrimp are opaque and cooked through, about 5 minutes more.
  • While shrimp are cooking, shred chicken. When shrimp are cooked, discard bay leaves; off heat, stir in parsley and shredded chicken, and serve immediately.
