Ingredients

2 cups elbow macaroni
1/2 cup celery, thinly sliced
1 red bell pepper, finely chopped
2 tablespoons red onions, finely chopped
1 garlic clove, minced
3/4 cup mayonnaise
1/4 cup sweet pickle, finely chopped
1 tablespoon milk
2 tablespoons Dijon mustard
1/4 teaspoon kosher salt
3/4 cup sharp cheddar cheese, cut into small cubes
3 hard-boiled eggs, coarsley chopped
1/4 teaspoon black pepper

Steps:

Cook pasta according to package directions, drain and rinse with cold water until pasta is no longer warm.
In a large bowl, combine pasta, red peppers, onion, garlic, sweet pickles, cheese and celery.
In a small bowl, combine mustard, pepper, salt, milk and mayo, mix well.
Pour dressing over pasta, toss well to coat.
Add eggs and toss to combine.
Chill 4 - 24 hours before serving. Store leftovers in the refrigerator, covered.

1 package (16 ounces) uncooked elbow macaroni
2 cups mayonnaise
1/4 cup 2% milk
2 tablespoons cider vinegar
1 large carrot, grated
1 celery rib, finely chopped, optional
2 tablespoons grated onion
1 tablespoon brown sugar
1/2 teaspoon salt
1/2 teaspoon pepper
Chopped green onions, optional

Steps:

Cook macaroni according to package directions; drain and rinse with cold water. Cool completely., For dressing, in a small bowl, whisk next 9 ingredients. Add pasta to a large serving bowl. Add dressing; gently toss to coat. Refrigerate until serving. If desired, garnish with green onions.

Ingredients

1 cup thousand island dressing
1 tablespoon vinegar
4 hard-boiled eggs (separate the yolk from the white after they've been boiled)
1 tablespoon fresh lemon juice (not from concentrate)
1 tablespoon prepared mustard (I use dijon)
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
8 ounces elbow macaroni, cooked per package instructions,drained (shells can be used too of course!)
1 cup sliced celery
1 cup chopped green peppers or 1 cup red pepper
1/4 cup chopped onion

Steps:

Combine first 6 ingredients, in this step include only the egg yolks leaving the whites.
This is your sauce.
Chop the whites of the eggs.
Stir in remaining ingredients.
Cover, chill (I always top this with a sprinkle of paprika).
