ASPARAGUS BUNDLES
Steps:
- Preheat the oven to 400 degrees F. Divide the asparagus spears into 12 bundles. Carefully wrap 1 piece of bacon around each bundle, starting about 1/2 inch from the bottom of the tips. Secure the bacon-wrapped spears with a toothpick. Lay the bundles in a low-sided casserole dish. In a medium saucepan, combine the brown sugar, butter, soy sauce, garlic salt and pepper. Bring the mixture to a boil. Pour the hot sugar mixture over the asparagus bundles. Transfer the dish to the oven and roast until the spears have begun to wilt and the bacon looks fully cooked, about 25 minutes. Remove the toothpicks before serving.

- Lightly coat asparagus spears in extra-virgin olive oil. Season the asparagus with black pepper. Take a quick count of the spear tips. Divide the total number by four. Gather that number of spears and use a slice of bacon to wrap the bundle and secure the spears together. Repeat with remaining ingredients.
- To grill, place bundles on hot grill and cover. Cook 10 to 12 minutes until bacon is crisp and asparagus bundles are tender.
- For oven preparation, place bundles on slotted broiler pan. Bake 12 minutes.

- Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.
- Divide the asparagus spears into 8 bundles. Wrap each bundle in the middle of the spears with one piece of bacon. Place the bundles seam-side down on the prepared baking sheet. Drizzle with the olive oil and sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper. Bake until the bacon is fully cooked, about 25 minutes.
- Melt the butter in a medium saucepan over medium-high heat. Sprinkle the flour over the butter and stir. Cook until the mixture is golden brown and has a nutty aroma, about 1 minute. Stir in the mustard powder, onion powder, nutmeg and remaining 1/2 teaspoon each salt and pepper. Slowly whisk in the milk a little at a time and continue cooking and whisking until the mixture thickens, 2 to 3 minutes. Stir in the cheese until melted, then take off the heat.
- Carefully transfer the bacon bundles to a serving platter. Pour the cheese sauce over the asparagus and sprinkle with the fried onions. Serve warm.

- Preheat oven to 450 degrees. Separate asparagus into bundles of 3 stalks each. Carefully wrap a piece of bacon around each bundle, starting about 1/2 inch from the bottom of the tip; secure with a toothpick. Transfer bundles to a rimmed baking sheet. Drizzle with oil, and sprinkle with 3/4 teaspoon salt; season with pepper. Roast, flipping halfway through, until asparagus begin to wilt and bacon is brown, 20 to 22 minutes.

- Wash and trim asparagus spears.
- Cut bacon strips in half crosswise.
- Wrap one-half strip bacon around each asparagus spear, leaving tip and end exposed.
- Lay on a cookie sheet with sides.

- Snap each asparagus stalk in two; discard the tough shorter ends. If needed, use a vegetable peeler to peel the tough outer layer from the remaining stems. Wrap each stalk entirely with bacon. In a large skillet or on a griddle, cook asparagus until bacon is just crisp and stalks are firm and bright green. Transfer to paper towels to drain. Reserve 2 teaspoons fo bacon drippings for dipping sauce. Heat the jam in a microwave for about 10 seconds or until soft. Whisk reserved bacon drippings, Dijon, honey and pinch of salt and pepper into jam until smooth. Serve asparagus with sauce for dipping.

- Now trim the ends of the asparagus and discard the ends. Those ends are very stringy and hard to chew. Then drizzle a teaspoon of avocado oil over them and season with salt and pepper to taste. Use your hands to coat them in the oil and spices.
- Now take out 10 slices of classic bacon and cut them each in half lengthwise. I usually do this with kitchen shears.
