This is a delicious brown bread closest to what we ate while in Ireland. It isn't Irish soda bread, which has a completely different taste and texture. We LOVE this recipe!

1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 ½ tablespoons butter
2 cups whole wheat flour
¼ cup quick-cooking oatmeal
1 ½ cups nonfat plain yogurt
1 teaspoon milk, or more as needed

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Lightly grease a baking sheet.
  • Mix all-purpose flour, sugar, baking powder, baking soda, and salt in a bowl.
  • Cut butter into flour mixture with a pastry blender or 2 knives until the mixture forms fine crumbs.
  • Stir whole-wheat flour and quick-cooking oatmeal into the butter mixture.
  • Gently stir yogurt into the oatmeal mixture. If mixture is too dry to hold together, add 1 teaspoon milk at a time, just until dough holds together; it should not be sticky.
  • Turn the dough out onto a lightly floured work surface; knead gently about 5 times to form a ball.
  • Place the dough in the center of the prepared baking sheet; cut a large 'X' in the top of the loaf.
  • Bake in preheated oven until well browned, about 40 minutes; transfer to a rack to cool. Bread can be served warm or cold.

1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
3 (6 ounce) containers vanilla-flavored yogurt (such as Yoplait®)
1 cup white sugar
2 eggs
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan with cooking spray.
  • Combine flour, baking powder, baking soda, and salt in a small bowl.
  • Mix yogurt, sugar, eggs, and vanilla extract together in a large bowl. Stir in flour mixture a little at a time, mixing well between each addition to avoid lumps. Pour batter into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes.

1 3/4 cups Gold Medal™ all-purpose flour
1/2 cup currants or raisins
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 container (6 oz) Yoplait® lemon, orange or plain low-fat yogurt
2 tablespoons vegetable oil

Steps:

  • Heat oven to 375°. Lightly grease bottom and side of round pan, 9x1 1/2 inches, with shortening.
  • Mix flour, currants, baking powder, baking soda and salt in medium bowl. Mix yogurt and oil; stir into flour mixture just until flour is moistened. Spread dough in pan.
  • Bake about 20 minutes or until toothpick inserted in center comes out clean. Cut into wedges. Serve warm or cool.

1/2 cup plain yogurt
1 package (1/4 ounce) active dry yeast
1 cup warm water (110° to 115°)
1 cup whole wheat flour
1/4 cup toasted wheat germ
1 tablespoon sugar
1 tablespoon olive oil
1 teaspoon salt
1-2/3 to 2 cups bread flour

Steps:

  • Let yogurt stand at room temperature for 15 minutes. In a large bowl, dissolve yeast in warm water. Add the whole wheat flour, wheat germ, sugar, oil, salt and yogurt. Beat until smooth. Stir in enough bread flour to form a firm dough., Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with cooking spray, turning once to coat the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; shape into a loaf. Place in a 9x5-in. loaf pan coated with cooking spray. Cover and let rise until doubled, about 40 minutes., Bake at 375° for 35-40 minutes or until golden brown. Remove from pan to a wire rack to cool.

My mother-in-law was born in Ireland and this is her recipe, which was only shared with the family. My husband would make 20 loaves for St. Patrick's Day to give to friends but he would never give the recipe. When asked for it, he would make the person a loaf and tell them that the recipe was a secret. Now that both he and his mother have passed, I think she would like to share it. I make 4 loaves each year for our church bake sale. They sell for $17.00 each and people come to the early mass just to get one.

1 cup raisins
1 cup dried currants
4 cups all-purpose flour, or more if needed
1 cup white sugar
2 teaspoons salt
1 teaspoon baking soda
1 ¾ cups buttermilk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch cast iron skillet.
  • Pour hot water over raisins and currants in a bowl and let soak. Whisk flour, sugar, salt, and baking soda in a separate bowl until well combined; whisk in buttermilk.
  • Drain raisins and currants and pat dry with paper towels; fold into dough. Turn dough out onto a floured work surface and knead gently until it holds its shape; if dough is too sticky, knead in more flour. Form into a round and place into prepared cast iron skillet. Flatbreads consisting of natural yoghurt and flour. Adjust quantities for smaller or larger batches. Equal quantities of both flour and yoghurt. The following recipe is good for one person with a side salad when rolled thinly.

70g Self-Raising Flour (plus more for dusting)
70g Natural Yoghurt
Tbsp Oil

Steps:

  • Sieve flour into a mixing bowl.
  • Add natural yoghurt and spoon of oil and mix together until a dough is formed.
  • Flour the worktop and roll dough into desired shape. A thinner dough is best as it takes less time to cook.
  • If they are intended to be eaten by themselves, fry in Fry Light in a frying pan till golden brown.
  • If intended as a pizza base, cook in a preheated oven at 200°C for 5 minutes. Remove from oven, turn upside down and add toppings. Place back in oven and cook for a further 10-15 minutes until the dough has browned and any cheese has melted. Serve with side salad and enjoy!
