IRISH SODA BREAD

- Preheat the oven to 375 degrees F. Line a sheet pan with parchment paper.
- Combine the flour, sugar, baking soda, and salt in the bowl of an electric mixer fitted with the paddle attachment. Add the butter and mix on low speed until the butter is mixed into the flour.
- With a fork, lightly beat the buttermilk, egg, and orange zest together in a measuring cup. With the mixer on low speed, slowly add the buttermilk mixture to the flour mixture. Combine the currants with 1 tablespoon of flour and mix into the dough. It will be very wet.
- Dump the dough onto a well-floured board and knead it a few times into a round loaf. Place the loaf on the prepared sheet pan and lightly cut an X into the top of the bread with a serrated knife. Bake for 45 to 55 minutes, or until a cake tester comes out clean. When you tap the loaf, it will have a hollow sound.
- Cool on a baking rack. Serve warm or at room temperature.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a large baking sheet.
- In a large bowl, mix together flour, sugar, baking soda, baking powder, salt and margarine. Stir in 1 cup of buttermilk and egg. Turn dough out onto a lightly floured surface and knead slightly. Form dough into a round and place on prepared baking sheet. In a small bowl, combine melted butter with 1/4 cup buttermilk; brush loaf with this mixture. Use a sharp knife to cut an 'X' into the top of the loaf.
- Bake in preheated oven until a toothpick inserted into the center of the loaf comes out clean, 45 to 50 minutes. Check for doneness after 30 minutes. You may continue to brush the loaf with the butter mixture while it bakes.

IRISH SODA BREAD FROM COUNTY CORK
This is my mother's recipe. She makes it several times a week for some function or another. My sister loves this so much she has to control herself or she would eat a whole one with a stick of butter! I usually only make this easy soda bread for events that my mother can't come to! Slice into wedges, butter, and enjoy!

- Preheat an oven to 375 degrees F (190 degrees C). Grease and flour a 9-inch round baking dish.
- In a large bowl, cut together the self-rising flour, sugar, and butter with a pastry cutter until the mixture resembles coarse crumbs. Stir in the raisins. In a separate bowl, whisk together egg with 1 cup of milk. Lightly mix the milk mixture into the flour mixture until it holds together. Place dough in prepared baking dish, and brush top with 1 tablespoon of milk for a nice golden brown crust.
- Place the bread into the preheated oven. Reduce heat to 350 degrees F (175 degrees C), and bake for 1 hour. Let cool before serving.

- Stir the milk and vinegar together, and allow to stand until curdled, about 10 minutes.
- Preheat oven to 400 degrees F (200 degrees C). Grease a baking sheet. In a bowl, mix together the flour, sugar, baking soda, and salt.
- Gradually stir the soured milk into the flour mixture until the dough just comes together, and turn the dough out onto a well-floured surface. Knead a few times, and shape into a round. Place the dough onto the prepared baking sheet. With a sharp knife, cut an X shape into the top of the dough to release steam and help the bread keep its round shape.
- Bake in the preheated oven until golden brown, about 45 minutes.

AUTHENTIC IRISH SODA BREAD-YEAST FREE
This soda bread recipe is my personal one and very simple to make. Most homes in Ireland still make this bread daily and all have slight variations in ingredients or baking times. If you have ever traveled to Ireland, this is the soda bread you ate with your seafood chowder, soup, stew and breakfasts!

- Grease and flour a 8" (20cm) cake tin (high walls are better but not necessary.).
- Preheat oven to 190°C/375°F or 180C/350F if using a fan assisted oven.
- Sieve self-rising flour with bicarbonate of soda, baking powder and salt into a large bowl. (It is important to sieve the bicarbonate of soda with the self-rising flour, if it is added at a later stage it will give the bread a greenish tinge!).
- Add the wheat flour to the bowl (no need to sieve).
- In a jug mix the yogurt, honey and olive oil then pour onto the flour mixtures in the bowl.
- Stir with a wooden spoon until well mixed and a soft sticky dough is formed.
- Flour a surface for kneading and knead lightly (20 turns max). Form into a round shape, this does not have to fit the tin as it will spread when cooking.
- Transfer to the floured cake tin and with a knife cut a cross across the top and place in the oven for 45 minutes. (The cutting of the cross helps to portion the bread for slicing in quarters.).
- Eat when cool with just real butter or your favourite topping and a cup of sweet tea. It is lovely toasted too!

TRADITIONAL IRISH SODA BREAD
This makes a fairly dense, rustic (ugly, even) loaf of bread that is tasty and not sweet. It is crusty and rough on the outside, chewy inside. Nummy hot with lots of butter! Note: sometimes (depending on humidity etc) it takes a bit more than the 1 1/2 cups of buttermilk--just keep adding a little bit at a time until it all holds together as stated in the recipe.

- Heat oven to 425 degrees F. Brush a baking sheet with melted butter or spray with non-stick spray.
- Combine dry ingredients in a deep bowl. Gradually stir in 1 cup buttermilk, beating constantly, until dough is firm enough to be gathered into a ball. If dough crumbles, add up to 1/2 cup more buttermilk, 1 tbsp at a time, until it holds together.
- Place on a lightly floured board and pat into an 8-inch flattened round loaf.

- Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5 inch loaf pan.

- Preheat the oven to 200C/gas 6/fan 180C and dust a baking sheet with flour. Mix the dry ingredients in a large bowl, then rub in the butter. Pour in the buttermilk and mix it in quickly with a table knife, then bring the dough together very lightly with your fingertips (handle it very, very gently). Now shape it into a flat, round loaf measuring 20cm/8in in diameter.
- Put the loaf on the baking sheet and score a deep cross in the top. (Traditionally, this lets the fairies out, but it also helps the bread to cook through.) Bake for 30-35 minutes until the bottom of the loaf sounds hollow when tapped. If it isn't ready after this time, turn it upside down on the baking sheet and bake for a few minutes more.
- Transfer to a wire rack, cover with a clean tea towel (this keeps the crust nice and soft) and leave to cool. To serve, break into quarters, then break or cut each quarter in half to make 8 wedges or slices - or simply slice across. Eat very fresh.

MOM'S IRISH SODA BREAD

- Preheat oven to 350 degrees F (175 degrees C).
- Grease a 9-inch deep-dish pie plate.
- Spoon 1 tablespoon of the buttermilk into a small bowl; place remainder of 1 cup buttermilk into a separate bowl.
- Stir golden raisins into the larger amount of buttermilk and allow raisins to soak while you complete the remaining steps.
- Spoon 1 tablespoon of the melted butter into the small bowl with the tablespoon of buttermilk; stir to combine and set aside. Set remaining melted butter aside.
- Whisk together flour, sugar, baking powder, baking soda, and salt in a bowl.
- Make a well in the center of the dry ingredients, pour in reserved butter, and stir until the mixture resembles coarse crumbs.
- Mix the egg into the flour mixture until thoroughly combined.
- Mix the soaked raisins with buttermilk into dough and shape dough into a ball.
- Place the ball of dough into prepared pie dish and lightly pat dough down so top is slightly domed.
- Use a sharp knife to cut two crisscrossing lines through the center of the loaf about 1/4 inch deep.
- Thoroughly brush buttermilk and butter mixture over the loaf, getting the mixture into the crevices.
- Bake in the preheated oven until loaf is golden brown and a toothpick inserted into the center comes out clean, 55 minutes to 1 hour.
