2 pounds potatoes, washed and halved
1 bay leaf
1 tablespoon freshly grated horseradish (or prepared)
1 cup sour cream
1/4 cup chives, chopped
Kosher salt and freshly ground black pepper
1 tablespoon olive oil

Steps:

  • Preheat oven to 400 degrees F.
  • Wash and boil potatoes in salty water with bay leaf until fork tender. Drain potatoes and mash along with horseradish, sour cream, and chives. Season with salt and pepper.
  • Put mixture into a 10-inch skillet with 1 tablespoon olive oil and bake until golden and crispy. To serve, invert onto a plate and cut into pieces.

1 sheet frozen puff pastry, (thawed)
4 tablespoons butter
7 slices bacon ((thick-cut slices), chopped)
5 potatoes, ((or 4 large) peeled and sliced thin)
1 onion, (peeled and sliced thin)
1 tablespoon fresh dill
1/2 cup heavy cream (or half & half)
Salt (and pepper)
Chive (or scallion for garnish)

Steps:

  • Preheat the oven to 350 degrees F. Place the thawed puff pastry in a 8- or 9-inch tart pan and crimp the edges. Remove the excess dough and piece it along the rim if needed to make the rim even in some places. Refrigerate the crust until ready to fill.
  • Place the butter and bacon in a large skillet over medium-high heat. Sauté until the bacon is crispy then toss in the onions, followed by the potatoes and dill. Season with 1/2 teaspoon salt and 1/4 teaspoon ground pepper. Gently stir 3-5 minutes,to mix the onions and potatoes and coat in bacon grease. (The potatoes don't need to be cooked through.) Then spoon the mixture into the crust and drizzle with heavy cream.
  • Bake on the low rack in the oven for 35-45 minutes, until the potatoes are fork-tender and the crust is golden. Rest for 10 minutes, then sprinkle with chopped chive and cut.

My sister gave me this recipe years ago and it has become a staple of our holiday or 'company is coming' type of dinner. It's easy to assemble and can be prepared ahead of time. It pairs well with beef, ham, or chicken. Leftovers, if there are any, reheat well. Everyone always loves 'The Irish Potatoes.' Yes, I know 'The Irish Potatoes' are fattening, but without the butter, whipping cream, and half and half it is just not as good. Substituting margarine or frozen hash browns would be a travesty.

8 large russet potatoes
1 tablespoon butter
½ small onion, minced
salt and ground black pepper to taste
½ cup butter, melted
½ cup heavy whipping cream
½ cup half-and-half
¼ teaspoon paprika
2 tablespoons chopped fresh parsley

Steps:

  • Place the potatoes into a large pot and cover with salted water; bring to a boil. Cook the potatoes at a boil for 10 minutes; drain. Set potatoes aside to cool.
  • Once potatoes are cool enough to handle, slide the skin from the potatoes and discard; refrigerate peeled potatoes until completely cold, about 1 hour.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Grease a 9x13-inch baking dish with 1 tablespoon butter.
  • Grate 2 of the potatoes into the bottom of the prepared baking dish. Sprinkle about 1/4 of the minced onion over the layer of potato; season with salt and black pepper. Repeat layering until all ingredients are used and dish is full.
  • Drizzle melted butter, whipping cream, and half and half over the potato mixture; season with paprika.
  • Bake in the preheated oven until the top is bubbling, about 30 minutes.
  • Garnish with chopped fresh parsley to serve.

1 cup onion, chopped
2 garlics, minced
1 lb ground beef
2 teaspoons dried parsley
1 teaspoon dried rosemary
1 teaspoon dried thyme
½ teaspoon salt
½ teaspoon ground black pepper
1 tablespoon worcestershire sauce
3 tablespoons tomato paste
2 tablespoons all purpose flour
1 cup beef broth, or red wine
1 cup mixed peas and carrots, frozen or canned
1 cup diced tomato, canned, drained and rinsed
½ cup frozen corn kernels, or canned
½ cup shredded sharp cheddar cheese
2 cups chicken broth
4 tablespoons butter
¼ teaspoon salt
½ cup sour cream
1 ½ cups potato flakes
2 green onions, stems sliced very thin
½ teaspoon pepper, garnish

Steps:

  • Preheat the oven to 400°F.
  • Melt butter in a skillet over medium-high heat. Cook the onions for 5 minutes. Then, add garlic and cook for 1 minute.
  • Set onions and garlic aside and in the same skillet, add ground meat. Cook and stir for 6-8 minutes until thoroughly browned. Drain & rinse meat in a colander.
  • Add meat back in the skillet over medium-low heat. Stir in parsley, rosemary, thyme, salt, pepper, and Worcestershire sauce. Then, stir in flour, and tomato paste. Stir until completely well incorporated
  • Stir in broth (or wine), peas, carrots, tomatoes and corn. Simmer for 5 minutes.
  • Evenly smooth meat mixture onto bottom of the skillet (or press into the bottom of a 9x9"inch baking dish). Sprinkle cheddar cheese over the top.
  • Potatoes: Heat broth, butter, and salt in a bowl in the microwave until hot. Stir in sour cream and potato flakes and mix with a fork. Let sit until liquid has been fully absorbed. (Note: the potatoes need to be thick to pipe perfect peaks.
  • Use a "star tip" on a piping bag (or a Ziploc bag with corner snipped). Fill bag and pipe potatoes into skillet or baking dish, covering the meat.
  • Sprinkle chopped onions & pepper on top.
  • Bake uncovered for 30 minutes.
  • Serve hot.

This recipe [sans the garlic and parsley] is from Elswet's grandmother's recipes and is quite old, as she got it from her grandmother. This is really good most anytime, but it's especially good when it's cold outside. This goes great with a potato/cheddar soup, for lunch, or with a green salad and jello with pear halves for dinner. This type of food is typically a bit bland. So we spice it up the tiniest bit to suit our more eclectic palates.

6 -8 potatoes, peeled
6 bacon, strips
4 green onions, sliced paper thin
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon parsley flakes
1 cup grated cheddar cheese
8 drops green food coloring

Steps:

  • preheat oven to 400°F
  • cook the potatoes in boiling water with the green food coloring added to the water, until tender and drain.
  • in a skillet, fry bacon until crisp and lay out on paper towels to drain.
  • trim onions so that you have the white part and about half of the green, wash well, and slice paper-thin.
  • add onions to skillet and sauté in bacon grease over medium heat until soft.
  • slice the boiled potatoes, and arrange half in the bottom of a pie plate.
  • season with salt and pepper, 1/2 the garlic and 1/2 the parsley.
  • layer with bacon, onion and one half of the cheese. cover with remaining potatoes and season again.
  • cover with remaining cheese.
  • bake for 30 minutes or until top is browned and cheese is melted.
  • you can also layer in 1/2 pound of browned ground meat on top of each potato layer, if cooking for someone who won't eat a meatless meal.

12 good quality thick pork sausage links
4 ounces unsalted butter
2 large onions, finely sliced
6 ounces bacon, lardons
8 ounces savoy cabbage, finely shredded
3 lbs baking potatoes, peeled and finely sliced
2 tablespoons fresh thyme leaves
1 pint double cream
3/4 pint beef stock
2 bay leaves

Steps:

  • Heat oven to 325°F.
  • Heat a nonstick fry pan.
  • Add the sausages and gently fry for about 10 minutes, until almost cooked through and golden brown.
  • Remove from the pan and slice into three, lengthwise on the diagonal.
  • Heat the frying pan once more.
  • Add half the butter, and when melted add the onions.
  • Cook gently for 10 minutes until soft and translucent.
  • Remove from the pan and set aside.
  • Add the bacon lardons to the pan and cook over a high heat for 3 to 4 minutes until golden and crispy.
  • Remove and drain on paper towel.
  • Add the cabbage and 2 TBS water.
  • Quickly cook for 2 to 3 minutes until the cabbage is just beginning to wilt.
  • Drain off any fat, remove from the pan and set aside.
  • Grease a large gratin dish with 1 oz. of the butter.
  • Place a layer of sliced potatoes in the bottom of the dish.
  • Season with salt, freshly ground black pepper and a sprinkling of the thyme.
  • Top with a layer of sliced sausages, then a layer of onion.
  • Spoon over the cooked cabbage and bacon.
  • Top with another layer of potato, season again as before, then add another layer of sausage, then onion and finally sliced potato.
  • Season again with the salt, pepper and thyme.
  • Gently heat the cream, stock and bay leaves until almost boiling.
  • *DON'T BOIL! Pour over the sausage and potato pie, just to cover the top layer of potatoes.
  • Dot with the remaining butter and cover with foil.
  • Place on a baking sheet and bake in the oven for 1 3/4 hours.
  • Remove foil, increase oven temp to 400°F and bake for a further 15 minutes until golden.
