According to Wikipedia, A farl is a term used in Northern Ireland and Scotland for some roughly triangular flat breads and cakes, traditionally made by cutting a round into four pieces. This recipe is from my old Irish Grandma.

4 medium potatoes, peeled and halved
1 pinch salt
1/4 cup all-purpose flour, plus extra for dusting
1 tablespoon butter

Steps:

  • Bring potatoes to a boil on high heat. Simmer on medium-high heat until the center of the potatoes are tender when pricked with a fork. This should take about 20 minutes.
  • Turn off heat. Drain the potatoes and return them to the pot and allow to completely dry out over remaining heat. Mash the potatoes until smooth.
  • Place warm mashed potato into a medium bowl. Stir in the flour, salt and melted butter. Mix gently until a soft dough forms.
  • On a well floured surface, knead the dough gently. The dough will be sticky. Use a (floured) rolling pin to flatten into a circle about 9 inches in circumference and 1/4 inch thick.
  • Cut into quarters using a floured knife.
  • Heat a skillet to medium high heat. Once hot, melt the butter in the skillet.
  • Sprinkle a little flour into the base of the skillet and cook the farls for 3 minutes on each side or until evenly browned.
  • Season with salt and serve right away.

A super easy recipe for Irish Potato Cakes also known as Potato Farls. Yukon gold potatoes are mashed with butter and flour then formed into triangles and fried to perfection. These Potato Cakes are incredibly creamy on the inside and super crispy on the outside, making for an exceptional side dish for almost any occasion.

2 pounds potatoes (such as Russets or Yukon gold)
1 cup all-purpose flour
½ teaspoon salt (or to taste)
½ teaspoon black pepper (freshly ground)
3 tablespoons butter
3 tablespoons butter

Steps:

  • Prepare potatoes. Make sure all the potatoes are cut into equal size pieces so that they all cook at the same time. Place the potatoes into a large pot and fill it with cold water, enough to fully cover the potatoes. Add about 1 tsp of salt to the water and stir.
  • Boil potatoes. Bring the potatoes to a boil over high heat, then reduce the heat to a medium and cook for about 15 minutes or until the potatoes are fork tender.
  • Drain and add the rest of ingredients. Drain the potatoes. Put the potatoes through a potato ricer, press them through a sieve or simply use a potato masher to get them as fluffy as possible. To the mashed potatoes add the flour, 3 tablespoons of butter, salt and pepper and mix thoroughly until you form a dough.
  • Form into potato farls. Flatten the dough into an 8-inch disk on a lightly floured surface, about 1-inch thick then cut into 8 triangles, like cutting a pizza.
  • Fry potato cakes. Melt remaining 3 tablespoons of butter in a large skillet. Add the potato cakes and cook for about 4 to 5 minutes per side, over medium heat, until gold and crispy.

The word farl originates from the Gaelic word fardel meaning four parts. These potato griddle breads can be made with leftover mashed potatoes too. Serve hot with a little butter and salt, or fry them alongside soda bread as part of an Ulster Fry-up.

Steps:

  • Melt the butter and mix into the potatoes with the salt.
  • Work in the flour quickly but thoroughly and knead lightly.
  • Divide in two and roll out each half on a floured board to form a circle about the size of a large dinner plate.
  • Cut in quarters (farls) and cook for about 3 minutes on each side in a heavy frying pan in a little bacon fat.
