Simply irresistible: offer steaming cups of decadent mocha with hint of Irish cream, surprisingly easy when you start with instant cocoa mix.

6 cups hot strong brewed coffee
4 envelopes (1.25 oz each) Irish creme instant cocoa mix
1/4 cup powdered sugar
2 cups half-and-half
1/4 cup Irish creme-flavored syrup, if desired
Sweetened whipped cream, if desired
Chocolate shavings, if desired

Steps:

  • In 3-quart saucepan, mix hot coffee, cocoa mix and powdered sugar until blended. Stir in half-and-half and syrup. Cook over medium heat about 5 minutes, stirring occasionally, until hot.
  • Serve in mugs; top with whipped cream and chocolate shavings.

2 cups flour
4 teaspoons baking powder
1/2 cup soft brown sugar
4 teaspoons instant coffee powder
1 tablespoon boiling water
60 g butter, melted
1/4 cup bailey's irish cream
3/4 cup milk
2 eggs
2 tablespoons chopped walnuts
icing sugar, to dust tops

Steps:

  • Preheat oven to 200 C.
  • Lightly grease 12 muffin tins.
  • Sift together flour and baking powder into a bowl, stir in sugar and make a well in the centre.
  • In a cup, dissolve instant coffee in the boiling water.
  • In another bowl lightly whisk together the melted butter, Baileys, milk and eggs, and stir in instant coffee.
  • Fold Baileys mixture into dry ingredients and stir quickly to combine.
  • Spoon mixture into prepared muffin tins, sprinkle with chopped walnuts and bake for 12 - 15 minutes or until muffins spring back when lightly pressed.
  • Dust with icing sugar and serve.

2/3 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/3 cup butter
6 tablespoons baking cocoa
2 tablespoons canola oil
1/2 teaspoon instant coffee granules
1 cup sugar
2 large eggs, room temperature, beaten
1 teaspoon vanilla extract
FROSTING:
2 cups confectioners' sugar
1/4 cup butter, softened
3 tablespoons Irish cream liqueur
GANACHE TOPPING:
1 cup semisweet chocolate chips
3 tablespoons Irish cream liqueur
2 tablespoons heavy whipping cream
1/2 teaspoon instant coffee granules

Steps:

  • Preheat oven to 350°. Sift together flour, baking powder and salt; set aside. In a small saucepan over low heat, melt butter. Remove from heat; stir in cocoa, oil and instant coffee granules. Cool slightly; stir in sugar and beaten eggs. Gradually add flour mixture and vanilla; mix well. Spread batter into a greased 8-in. square pan; bake until center is set (do not overbake), about 25 minutes. Cool in pan on wire rack., For frosting, whisk together confectioners' sugar and butter (mixture will be lumpy). Gradually whisk in Irish cream liqueur; beat until smooth. Spread over slightly warm brownies. Refrigerate until frosting is set, about 1 hour., Meanwhile, prepare ganache: Combine all ingredients and microwave on high for 1 minute; stir. 1/2 cup toasted pecans, cooled and crushed
2 cups chocolate Oreo cookie crumbs
1/4 cup sugar
6 tablespoons melted butter
2 1/4 lbs cream cheese, at room temp
1 2/3 cups sugar
5 eggs, at room temp
1 cup Baileys Original Irish Cream
1 tablespoon vanilla
1 cup semi-sweet chocolate chips
1 cup chilled whipping cream
2 tablespoons sugar
1 teaspoon instant coffee powder
chocolate curls or Skor English toffee bit, for decoration on top

Steps:

  • Crust:.
  • Mix all ingredients.
  • Press into a 10" spring form pan and up the sides one inch.
  • Bake at 325 for 7-10 minute.
  • Filling:.
  • Beat cream cheese with electric mixer until smooth.
  • Beat sugar in gradually, and then add eggs one at a time.
  • Blend in Bailey's and vanilla.
  • Sprinkle half of chocolate chips over crust.
  • Spoon in filling.
  • Sprinkle with remaining chocolate chips.
  • Bake at 325 degrees approximately 1 hour and 20 minutes or until puffed, springy in center and golden brown. Place a pan of water on bottom rack of oven while baking to keep it moist.
  • Cool cake completely.
  • Coffee Cream Topping:.
  • Beat all ingredients and spread over cooled cake.
  • Top with chocolate curls or Skor bits.
  • *NOTE: Be sure to make and refrigerate at least one day before serving.
