PIZZA SHORTBREAD
Who says shortbread has to be sweet and only available at Christmas? These little appetizers from Company's Coming Gifts from the Kitchen have the same melt-in-your-mouth texture as your favourite holiday cookies, but a "mellow, buttery flavour with a hint of an Italian taste" that make them great for parties and gatherings any time of year.

Steps:
- Combine first 6 ingredients in a medium bowl. Mix until dough can be kneaded into a ball.
- Shape into 2 rolls about 1-1/2 inches in diameter.
- Cut into 1/4-inch slices and arrange on an ungreased cookie sheet.
- Sprinkle with paprika, if desired, and bake at 375F for about 10 minutes, or until golden brown.

FRUIT PIZZA EVEN BETTER
Almond extract makes all the difference in this updated version of the traditional fruit pizza. Kiwi makes the topping completely fresh and adds beautiful color. Use low-fat cream cheese for a slightly lighter version. Any clear juice (apple, pear, peach, etc.) may be substituted for the pineapple.

- Preheat oven to 350 degrees F (175 degrees C). Lightly spray a 12-inch round pizza pan with butter-flavored cooking spray.
- Combine flour and confectioners' sugar in a bowl. Cut in butter with a knife or pastry blender until the mixture resembles coarse crumbs. Press into prepared pizza pan to make a crust.
- Bake in preheated oven until very lightly browned, 12 to 15 minutes. Cool on a wire rack.
- Beat cream cheese, 1/3 cup white sugar, and almond extract until smooth; spread over completely cooled crust. Arrange strawberries, blueberries, and kiwi decoratively over cream cheese mixture.
- Mix pineapple juice, 1/2 cup white sugar, cornstarch, and lemon juice in a saucepan until smooth; bring to a boil. Cook and stir until thickened, about 2 minutes. Cool slightly and drizzle over fruit. Refrigerate until chilled.

STRAWBERRY PIZZA

Steps:
- Crust: Mix butter, powdered sugar (1/2 cup), flour - form into a ball, spread onto a pizza pan.
- Bake 15 minutes at 350 degrees and let cool. Keep an eye on the crust while cooking - you don't want to over cook it. Remove the crust when it is golden.
- Topping: Mix cream cheese, powdered sugar (1 cup), and cool whip - preferrably using electric mixer. Spread this mixture over the crust after crust is cool.
- On top of white topping, add entire container of glaze and top with sliced strawberries. (you can also mix the strawberries and glaze together and place it on top that way too.
- Serve and enjoy!

- Heat the oven 170C/150C fan/gas 3. Put the flour, butter and sugar into a mixing bowl. Use your hands to combine the ingredients until the mixture looks like breadcrumbs, then squeeze until it comes together as a dough.
- On a lightly floured surface, use a rolling pin to roll out the dough to ½ cm thick. Cut the dough into fingers and place on a lined baking tray. Use a fork to create imprints, then sprinkle with the remaining caster sugar.
- Chill the dough in the fridge for 20 mins, then bake for 15-20 mins until golden brown. Remove the shortbread fingers from the oven and leave to cool on the tray for 10 mins.

- Blitz the chickpeas, half the lemon juice, garlic, cumin and some seasoning in a food processor or mini chopper, adding a few tbsp water to get a spreadable consistency.
- Warm the flatbreads following pack instructions, then spread the chickpea hummus over them evenly. Scatter on the feta cheese, dill and half the rocket, pomegranate and onion.
- Mix together the remaining rocket, pomegranate and onion. Toss through the remaining lemon juice, olive oil and any juice from the pomegranate seeds. Serve the pizzas with the salad.
