PINEAPPLE CRACKER SPREAD
I originally saw this in the Quick Cooking magazine and made it for a small dinner gathering. There was nothing left. I made this ahead of time. Regular cream cheese can also be used. Cook time is chill time.

Steps:
- Drain pineapple, reserving 1 tsp juice.
- In small bowl, beat cream cheese until smooth.
- Add pineapple, green pepper, onion and reserved juice, mixing well.
- Cover and chill 1 1/2 hours.
- Serve with crackers.

This is a super tasty spread for crackers that doesn't cost a lot of points! I like to bring it to party's and gatherings then I know how many points I'm eating. I put the serving size as 1 since I can't really define how many it may serve.

- Mix together all ingredients except cream cheese.
- In a microwave safe bowl, soften cream cheese and then mix in pineapple mixture.
- Mix well and chill over night.
