DREAM BARS
Steps:
- Line a 9 by 13-inch baking pan with foil so that it covers the bottom and overhangs 2 sides by at least 1-inch. Tuck the overlap around the outside of the pan. Coat with nonstick vegetable spray.
- Set a rack in the middle of the oven and preheat to 350 degrees F.
- In a bowl, combine 1 cup of the flour, 1/2 cup of the brown sugar, and the pecans. Work in the butter, rubbing and pinching it between your fingertips, until the mixture looks mealy and lumpy. Lightly pat the streusel onto the bottom of the pan.
- In a mixing bowl, beat together the eggs and the remaining 1/2 cup brown sugar until doubled in volume. Beat in the vanilla extract.
- In another bowl, sift together the remaining 1/2 cup flour, baking powder, and salt, then beat into the egg mixture. Spread on top of the streusel.
- Sprinkle on the coconut and the sweetened condensed milk. Bake for 25 to 30 minutes, until the first tiny bubbles come up. Set on a rack to cool. Run a knife around the 2 unfoiled pan sides to loosen, then lift the whole cake out of the pan. Cut into 2-inch bars.

Steps:
- Set oven to 350 degrees.
- Grease a 15 x 10-in pan.
- Mix cake mix with eggs, Irish cream and oil.
- Set aside 1/2 cup of prepared cake batter for swirl.
- Pour cake batter into pan.
- In a small bowl, blend all swirl ingredients, with 1/2 cup cake mixture.
- Drop large spoonfuls of this mixture over the cake batter.
- Swirl with a fork to make a marble effect.
- Bake 25-30 mins, or until bars tests done.
- Cool and cut into squares.
- Delicious!
IRISH CREAM DREAM
Steps:
- Line the ramekins with plastic wrap creating a shell and leaving long flaps to cover the ramekins later. In a food processer, pulse gingersnap cookies with melted butter until small crumbs form for the crust. Press half the cookie crumb mixture, dividing evenly, firmly into the bottom of each ramekin. Reserve the other half of the crumb mixture for the topping.
- In a large bowl, whisk heavy cream with sugar until soft peaks form. In a separate large bowl, add the espresso powder and condensed milk and blend until espresso powder is dissolved. Whisk in Irish cream then fold in whipped cream. Pour evenly into the ramekins. Top with remaining gingersnap crumbs and cover with the extra plastic wrap, pressing to compact mixture. Freeze until set, about 5 hours. To serve, remove plastic wrap from top and then gently turn ramekins over to release dessert onto a serving plate. Gently remove plastic wrap.
ORIGINAL IRISH CREAM
Irish whiskey mixed with cream and sugar with hints of coffee, chocolate, vanilla, and almond. Will keep for 2 months if refrigerated.

- Combine cake mix, pudding mix, oil, water, vodka, Bailey's and eggs in a bowl, beat until smooth.
- Pour into greased and floured 10 inch bundt pan.
- Bake 40 to 50 minutes or until done.
- Cool completely and invert onto a serving plate.
- Mix a little powdered sugar and a little Bailey's and drizzle over the top.
- Enjoy.

Found the original recipe in King Arthur Flour's Baking Companion. I reduced the sugar content and I prefer them that way. You may also melt some chocolate chips and spread over the bars. You won't regret it!

Steps:
- Preheat oven to 300F.
- Cookie Layer: In a large mixing bowl, cream butter and sugar until smooth.
- Stir in flour and salt.
- Mixture will be crumbly.
- Pat the mixture into a lightly greased 9x13 pan.
- Bake for 10 mins, while you prepare the topping.
- Increase the oven temperature to 325F.
- Topping: Combine sugar, flour and baking powder in a medium mixing bowl (I've used the same bowl without ill result).
- Stir in the eggs, mixing until smooth.
- Add coconut and nuts, mix until well-combined.
- Spread the topping onto the cookie layer, as evenly as possible (wet your fingers and spread).
- Bake the bars for 30 mins, until golden brown.
- Remove from oven and let them cool (in the pan).
- Sprinkle with confectioners' sugar, if desired.
- Or spread melted chocolate chips over the bars.
- Cut them into 2 1/4 inch bars when completely cooled.

- Heat oven to 350°F Spray bottom and sides of 8-inch square pan with cooking spray.
- In large bowl, place cookie mix and pecans. Cut in butter, using pastry blender or fork, until mixture looks like coarse crumbs. With fork, stir in egg.
- Press half of cookie mixture in bottom of pan. Bake 15 to 18 minutes or until golden brown. Reserve remaining cookie mixture.
- Meanwhile, in small bowl, stir milk, 2 tablespoons liqueur and the coffee granules until well blended. Pour evenly over warm crust. Sprinkle reserved cookie mixture over top. Bake 25 to 30 minutes longer or until golden brown. Cool 30 minutes at room temperature. Refrigerate 1 hour to cool completely. Let stand 10 minutes before cutting into bars (5 rows by 5 rows). - Just before serving, in small bowl, beat whipping cream, brown sugar, 1 tablespoon liqueur and the vanilla with electric mixer on high speed until soft peaks form.
- Top each bar with dollop of whipped cream; sprinkle with ground cinnamon. Insert cinnamon stick into each dollop of whipped cream.
