Irish Blue Cheese Tomato Soup image

A rich and tangy soup that warms your bones in the Fall and Winter. Particularly yummy with the addition of roasted fresh Roma Tomatoes and Blue Cheese.

8 large Fresh Ripe Roma Tomatoes Clean and cut in half
-or- 2 cans 15-16 oz ea Fire Roasted Diced Tomatoes
---- as needed Olive Oil To drizzle on fresh tomatoes
---- to taste Garlic Salt or Garlic Powder Sprinkle on tomatoes
6 ounces Bacon Broken into bits/can use precooked
2 or 4 tbsp Butter 4 if you use precooked bacon
1 medium Onion Roughly chopped
1 stalk Celery Roughly chopped
1 Carrot Roughly chopped
1/4 cup All purpose flour
5 cups (40 oz) Chicken stock
10 ounces Crumbled Bleu Cheese
2/3 cup No-Fat Half & Half
---- to taste Rough Ground Black Pepper

Steps:

  • To roast tomatoes: Preheat oven to 425°F. Rub a bit of olive oil on your hands, and coat each of the tomato halves. Sprinkle with garlic or garlic salt. Place them on a rimmed baking sheet, and roast in the oven for 30 minutes. I always cover pan with foil before roasting for easy cleanup. Remove from the oven, and chop the tomatoes roughly in a food processor or by hand. Bacon: May use pre-Cooked Bacon Bits or I n the bottom of your soup pot, cook the bacon over low heat until it's as crisp as you like it. Remove the bacon onto a plate covered with paper towel, and set aside. Leave Bacon drippings in the pot! Combine Soup Ingredients as follows: Over med-low heat, add the butter into the pot, along with the onion, celery and carrot. Cook, stirring occasionally, for 1-4 minutes, until the onion is translucent. Stir in the flour, and mix well until it's completely incorporated with the butter in the pot. Pour in the chicken stock (1 cup at a time), and stir well until the stock thickens slightly with each cup of stock. Add the crumbled cheese and roasted chopped tomatoes. Bring the soup to a boil over med-low heat stirring to help melt the cheese. Stir occasionally. Remove the pot from heat, and use an immersion blender to puree the soup until smooth. (Or, let the soup cool slightly, and process in batches in a blender or food processor; then, return the soup to the pot.) *Note: you do not have to do this step at all. Soup tastes the same regardless. Return the pot to the stove, and over low heat stir in the half-and-half. Cook for one minute, until the soup is hot but not yet simmering. Roughly chop/crumble the bacon. Serve the soup in individual bowls, topped with fresh ground black pepper and bacon.

I saw this recipe on my Facebook wall! OH MERCY!! I'm in LOOOOVE! A soup with BLUE CHEESE as one of the MAIN ingredients, oh, be still my heart! Adapted from Best of Irish Soups by Eileen O'Driscoll, this recipe, originally published as Rock of Cashel Soup

8 large plum tomatoes, cored, halved and seeded
6 oz crispy bacon, chopped
2 Tbsp butter
1 medium onion, chopped
1 large rib of celery, chopped
1 medium carrot, chopped
1/4 c whole wheat flour
5 c bunyan's kickin' chicken stock (recipe on j.a.p.)
10 oz danish blue cheese or gorganzola
2/3 c heavy cream
fresh cracked black pepper to taste
chopped parsely for garnish

Steps:

  • 1. Preheat the oven to 425°F.
  • 2. Rub a bit of olive oil on your hands, and coat each of the tomato halves.
  • 3. Put them on a rimmed baking sheet, and roast in the oven for 30 minutes.
  • 4. Take them outta the oven, and chop the tomatoes roughly in a food processor or by hand.
  • 5. In the bottom of your soup pot, cook the bacon over low heat until it's as crisp as you like it.
  • 6. Take the bacon outta the pot and put it on a plate covered with paper towel, and set aside.
  • 7. Over low heat, add the butter into the pot, along with the onion, celery and carrot.
  • 8. Cook, stirring occasionally, for 1-2 minutes, until the onion is translucent.
  • 9. Stir in the flour, and mix well until it's completely incorporated with the butter in the pot.
  • 10. Pour in the heated chicken stock, and stir well until the stock thickens slightly.
  • 11. Crumble the cheese into the pot, and add the chopped tomatoes.
  • 12. Bring the soup to a boil, stirring to help melt the cheese.
  • 13. Take the pot off of the heat, and use an immersion (stick) blender to puree the soup until smooth.
  • 14. Or, let the soup cool slightly, and process in batches in a blender or food processor; then, put the soup back into the pot.
  • 15. Put the pot back on the stove, and over low heat stir in the cream.
  • 16. Cook for one minute, until the soup is hot but not yet at the simmer.
  • 17. Serve the soup in individual bowls, topped with bacon.
  • 18. Garnish with the chopped parsley

I got this recipe from a bargain rack soup recipe book I found. So far everything I've tried from it is delicious. This one is my favorite so far. Great comfort food.

3 lbs ripe tomatoes, peeled, quartered, and seeded
2 garlic cloves, minced
2 tablespoons vegetable oil or 2 tablespoons butter
1 leek, chopped
1 carrot, chopped
1 1/4 quarts unsalted chicken stock
4 ounces blue cheese, crumbled
3 tablespoons whipping cream
fresh basil (several large leaves)
crumbled bacon (to garnish)
salt and pepper

Steps:

  • turn oven to 400°F Spread tomatoes in shallow baking dish with garlic and salt and pepper. Place in oven and roast for 35 minutes.
  • Heat oil or butter in large saucepan. Add leek and carrot. Cook over low heat for about 10 minutes until soft.
  • Add stock and roasted tomatoes and bring to a boil. Lower heat, cover, simmer for about 20 minutes.
  • Add blue cheese, cream and basil. Transfer to food processor or blender and process until smooth, working in batches if necessary.
  • Reheat to serve (don't boil). Garnish with bacon and fresh basil.

3 lbs ripe plum tomatoes, cut in half
1/4 cup olive oil, plus
2 tablespoons olive oil
1 tablespoon kosher salt
1 1/2 teaspoons fresh ground black pepper
2 cups chopped yellow onions (2 onions)
6 garlic cloves, minced
2 tablespoons unsalted butter
1/4 teaspoon crushed red pepper flakes
1 (28 ounce) canned plum tomatoes, with their juice
4 cups fresh basil leaves, packed
1 teaspoon fresh thyme leave
1 quart chicken stock or 1 quart water
3/4 cup jameson Irish whiskey
1 cup heavy cream

Steps:

  • Preheat the oven to 400 degrees F. Toss together the tomatoes, 1/4 cup olive oil, salt, and pepper. Spread the tomatoes in 1 layer on a baking sheet and roast for 45 minutes.
  • In an 8-quart stockpot over medium heat, saute the onions and garlic with 2 tablespoons of olive oil, the butter, and red pepper flakes for 10 minutes, until the onions start to brown. Add the canned tomatoes, basil, thyme, and chicken stock. Add the oven-roasted tomatoes, including the liquid on the baking sheet. Bring to a boil and simmer uncovered for 40 minutes. Add Whiskey and Cream, and let simmer 10 minutes, working the tomatoes with a spoon to break them up in the mixture.

1 tablespoon olive oil
2 garlic cloves, minced
1/2 cup chopped red bell pepper
1/4 cup large red onion, chopped
1/4 cup crumbled blue cheese
4 ounces cream cheese, softened
1/4 cup heavy cream
1/4 cup milk
14 1/2 ounces diced tomatoes
1 1/2 cups tomato juice
2 teaspoons dried basil
1/4 teaspoon ground black pepper

Steps:

  • Heat the olive oil in a saucepan over medium heat.
  • Stir in the garlic, bell pepper, and onion.

2 tbsp olive oil
2 onions , chopped
2 carrots , chopped
2 garlic cloves , crushed
2 red peppers , chopped
1 large sweet potato , peeled and chopped
2 x 400g cans tomatoes
1 low-salt veg or chicken stock cube
1 tsp dried oregano
3 rosemary sprigs , leaves picked and chopped
70ml double cream

Steps:

  • Heat the oil in a large pan and cook the onion for 8-10 mins until softened and starting to take on a little colour. Add the carrots, garlic, peppers and sweet potato. Cook for a further 10 mins, stirring often and taking care not to burn the garlic. Add the tomatoes, stock, herbs and 1 litre of water. Bring to a simmer. Cover and cook for 20 mins until the sweet potato is soft.
  • Use a hand blender to whizz the soup until smooth. Stir in the cream and season to taste. Can be chilled for three days or frozen for up to three months.

3 ounces cream cheese, softened
2 to 4 ounces crumbled blue cheese, divided
1 small onion, coarsely chopped
1 tablespoon Worcestershire sauce
1 tablespoon sugar
2 teaspoons lemon juice
1/2 teaspoon pepper
1/4 teaspoon salt
Toasted garlic bread, optional

Steps:

  • In a blender, combine 2 cups tomato juice, cream cheese, half of the blue cheese, onion, Worcestershire sauce, sugar, lemon juice, pepper and salt; process until smooth. Pour into a large bowl; stir in remaining tomato juice. Chill at least 1 hour. Top with garlic bread if desired and remaining blue cheese.
