1 tablespoon olive oil
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 sprigs fresh rosemary, stemmed

Steps:

  • Place the potatoes in a large pot of salted water and bring to a boil over high heat. Boil for 5-7 minutes, then drain in a colander.
  • Preheat the oven to 400˚F (200˚C).
  • Thoroughly dry the par-boiled potatoes with a paper towel.
  • On a cutting board, quarter the potatoes.
  • Place the potatoes in a large bowl, drizzle with olive oil, and season with salt, pepper, and rosemary, stirring until well-coated.
  • Transfer the potatoes to a parchment-lined baking sheet and spread in an even layer.
  • Roast for 35-45 minutes, until crispy.

1 teaspoon (4g) onion powder
1 teaspoon (4g) garlic powder
3 - 4 pinches coarse kosher salt
2 tablespoons (28g) unsalted butter
1 tablespoon (15ml) olive oil
1 cup (250ml) cold water

Steps:

  • Pressure Cook Baby Potatoes: Pour 1 cup (250ml) cold water, then place a stainless steel steamer basket in Instant Pot Pressure Cooker. Place 1.5 lb (680g) baby potatoes in steamer basket. Pressure Cook at High Pressure for 15 minutes, then Quick Release. *Pro Tip: This will produce creamy & soft baby potatoes. If you prefer a firmer texture, reduce the pressure cooking time by a few minutes. (See Our Roasted Potatoes Experiment Results Here)
  • Make Creamy Roasted Potatoes: Set aside the pressure cooked baby potatoes. Discard water in inner pot & towel dry inner pot. Heat up Instant Pot using "Saute" function (press "Cancel" button, then "Saute" button). Once the indicator says HOT, add 2 tbsp (28g) unsalted butter and 1 tbsp (15ml) olive oil in Instant Pot. Add pressure cooked baby potatoes in Instant Pot. With a wooden spoon, gently stir the baby potatoes to coat them with butter. Sprinkle 1 tsp (4g) garlic powder and 1 tsp (4g) onion powder on the baby potatoes. Gentle mix the baby potatoes, then allow the powder to darken & harden a little. Taste & season Instant Pot Roasted Potatoes with salt and black pepper (if desired). For reference, we used roughly 4 pinches of coarse kosher salt.

4 lbs meaty bone-in short ribs (about 6 pieces in 3-inch pieces)
kosher salt & freshly ground black pepper
2 tablespoons olive oil, plus more as necessary
2 tablespoons all-purpose flour
1 1/2 cups dry red wine
2 medium carrots, peeled and cut crosswise in half
2 stalks celery, cut into thirds
2 leeks, whites and light green parts only, cut crosswise in 3-inch pieces
1 head garlic, cut in half crosswise
1 bay leaf
3/4 teaspoon red pepper flakes
1 cup low sodium beef broth
3/4 teaspoon red pepper flakes
1 1/2 lbs fingerling potatoes, scrubbed
chopped mixed herbs, for serving, such as parsley, dill, chives, thyme, and or cilantro

Steps:

  • Preheat Instant Pot to saute setting.
  • Dry short ribs and season generously with salt. Add olive oil to pot and swirl to coat. When smoking, add short ribs, in batches, and saute until deeply golden brown, about 5 minutes per side.
  • Remove ribs to a plate as they finish and replenish or drain oil as necessary to maintain approximately 2 tablespoons per batch. Return all ribs to pot, sprinkle with flour and toss to coat.
  • Add wine and reduce by half, about 8 minutes, scraping bottom of pot to deglaze. (This can also be done in a skillet over high heat. Saute timing will be reduced. Transfer ribs and pan sauce to Instant Pot before proceeding.).
  • Arrange ribs in as even a layer as possible and disperse carrots, celery, leeks, garlic, bay leaf, and red pepper flakes throughout. Add broth, bring to a simmer, and top with fingerling potatoes. Season all vegetables generously with salt and pepper.
  • Top with lid and place on high pressure. Cook 45 minutes and then allow pressure to release naturally for 30 minutes. Uncover and remove ribs and vegetables with a slotted spoon. Tent with foil to keep warm.
  • Transfer cooking liquid to a fat separator or measuring cup and skim fat. If desired, return sauce to Instant Pot and reduce to desired consistency. Season sauce with salt and pepper.
  • Serve ribs with potatoes, vegetables, and sauce, garnished with herbs.

Steps:

  • Pour 1 cup of water into the pressure cooker pot. Add a vegetable steaming basket, then fill the basket with the fingerling potatoes. Lock the pressure cooker lid. Cook at high pressure for 6 minutes in an electric pressure cooker or stovetop PC (Use "manual" or "pressure cook" mode in an Instant Pot). Quick release the pressure. Once the pressure is released, unlock the pot, opening the lid away from you to avoid the hot steam.
  • Carefully lift the vegetable basket out of the pot and set it aside. Pour the water out of the pot, wipe dry, and return the pot to the pressure cooker base (or stovetop), and set to sauté mode (medium heat on the stovetop). Add the olive oil to the pot and let it heat until it starts shimmering, about 2 minutes. Add the potatoes and let them sit, sizzling in the oil, for about 3 minutes, until they are browned on the bottom. Sprinkle the potatoes with the salt and Herbes de Provence, then toss to coat. Pour the potatoes into a bowl and serve.

3 - 4 lbs chuck roast (trimmed)
4 c beef broth
2 T. tomato paste
1 T. Italian seasoning
1 T. cocoa powder (unsweetened 8 oz. thick-cut bacon, diced)
1½ t. garlic powder
½ small red onion (diced)
3 large carrots (diced)
1 lbs. multi-colored fingerling potatoes (halved)
1 lbs. green beans (trimmed)
3 T. fresh parsley leaves (chopped (optional))
2 T extra virgin olive oil
salt and pepper (to taste)

Steps:

  • Add the olive oil to the inner cooking pot and select the "Sauté' function. Use the "Adjust" button to select the "More" (high) setting.
  • Once hot, add the roast and season with salt and black pepper, to taste. Sear the roast on all sides, approximately 3-4 minutes per side. Remove roast from Instant Pot® and transfer to a platter. Set aside.
  • Deglaze the inner pot by adding the beef broth and gently scraping the bottom with a rubber spatula to release the brown bits. Add the tomato paste, Italian seasoning, cocoa powder, and garlic powder, and stir to combine. Push the "Keep Warm/Cancel" button to turn off the Sauté function.
  • Return the roast to the Instant Pot® and add the lid. Lock the lid into place and set the vent to "Sealing." Select the "Manual" button and adjust to the "High" setting, if necessary. Set cook time to 60 minutes.
  • When cook time is complete, allow the pressure to release naturally for 10 minutes before doing a quick release on any remaining pressure. Add onion, carrots, potatoes, and green beans on top of the roast.

  • Arrange the roast and vegetables on a serving platter.
  • Gently slice the beef roast and place the au jus into a gravy boat or other serving dish.
  • Serve.

Cook with the lid off, stirring occasionally, until the onion softens slightly. Remove the onion to a bowl; set it aside.
  • Place the remaining oil in the inner post, wait about one minute for it to warm, and then add half of the beef. Cook with the lid off, turning the beef occasionally, until it is browned on most sides, about 5 minutes. Transfer the browned beef to a plate and set aside. Repeat with the remaining beef.
  • Place the beef broth in the inner pot and use a silicone spatula or wooden spoon to scrape the bottom of the inner pot until most of the brown bits are released, about 1 minute. Add the reserved onion, browned beef, potatoes and Worcestershire sauce and stir to combine.
