This isn't your Grandma's beef stew: The Instant Pot (a slow cooker, pressure cooker and stove-top stand-in, all in one) makes this hearty dish a weeknight possibility.

1 tablespoon vegetable oil
2 1/2 pounds boneless beef chuck roast, trimmed and cut into 1-inch cubes
2 tablespoons all-purpose flour
Kosher salt and freshly ground black pepper
2 tablespoons tomato paste
1/3 cup dry red wine
3 carrots, cut into 2-inch pieces
3 celery ribs, cut into 1-inch pieces
1 sprig fresh thyme
1 cup frozen pearl onions

Steps:

  • Add the oil to the Instant Pot® and set to saute (see Cook's Note).
  • Meanwhile, toss the beef with the flour, 2 teaspoons salt, and a generous amount of pepper in a medium bowl. Add the meat and all the flour to the Instant Pot® in a single layer and cook, undisturbed, until golden brown on the bottom, about 3 minutes. Stir once and allow to brown for another 2 to 3 minutes. Add the tomato paste and stir to coat. Add the wine and bring to a boil. Cook for 1 minute, scraping up browned bits from the bottom of the pot with a wooden spoon.
  • Add the carrots, celery, thyme and onions and stir to coat. Follow the manufacturer's guide for locking the lid and set to pressure cook on high for 40 minutes. After the pressure cycle is complete follow the manufacturer's guide for quick release and wait until the quick release cycle is complete. Careful of any remaining steam, unlock and remove the lid.

3 cups beef broth
1 tablespoon Worcestershire sauce
1 tablespoon tomato paste
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon dried rosemary

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Melt butter and cook beef chuck cubes in batches until browned on all sides, about 5 minutes per batch.
  • Return all beef chuck to the pot. Add potatoes, mushrooms, onion, carrots, and garlic; cover with beef broth. Stir in Worcestershire sauce, tomato paste, salt, pepper, and rosemary. Close and lock the lid. Select Meat/Stew function according to manufacturer's instructions; set timer for 35 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid.

During the pandemic of the Coronavirus and the stay-at-home order, I have been trying different ways of cooking pork shoulder. Hubby and I cook together and this is a simple but delicious recipe we made.

2 tablespoons olive oil
2 pounds pork shoulder, cut into 6 pieces
salt and ground black pepper to taste
2 tablespoons all-purpose flour
1 cup red wine
1 cup beef broth
2 tablespoons tomato paste
1 onion, cut into large chunks
4 stalks celery, cut into 1-inch pieces
½ pound baby carrots
2 cloves garlic, chopped
2 bay leaves

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Heat oil for 1 minute. Season pork with salt and pepper. Add to the pot. Cook and stir until browned evenly on all sides, 4 to 5 minutes. Add flour and cook and stir for 1 to 2 minutes. Deglaze the pot by adding wine, broth, and tomato paste, scraping up all the browned bits from the bottom.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Stir in onion, celery, carrots, garlic, and bay leaves. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 5 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes.

Instant Pot Pork Stew With Red Wine and Olives image

Pork shoulder is one of the most glorious things to cook in an electric pressure cooker. The meat becomes velvety and suffused with rich, brawny juices. Here, red wine, tomatoes, rosemary and sage perfume the pork, while olives, stirred in at the end, give it brightness. This stew is even better cooked a day or two ahead, giving the flavors time to meld. Making it in advance also gives the fat a chance to solidify, so it's easy to remove before reheating. Then, if you like, you can reheat the stew in the electric pressure cooker using the sauté setting. Serve this over polenta or rice, or with good bread, to soak up the meaty sauce.

2 pounds pork shoulder or pork stew meat, cut into 2-inch chunks
1 1/2 teaspoons kosher salt (Diamond Crystal), plus more as needed
3/4 teaspoon freshly ground black pepper, plus more as needed
6 garlic cloves, grated, passed through a press or crushed into a paste
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh sage
Large pinch of red-pepper flakes
1 teaspoon coriander seeds
Olive oil
1/2 cup dry red wine
1 (15-ounce) can whole peeled plum tomatoes
2 medium carrots, sliced 1/2-inch thick (about 1 cup)
1/2 cup pitted and torn green olives, such as Castelvetrano
Chopped parsley or basil, for serving

Steps:

  • Season the pork all over with the salt and pepper. In a large bowl, combine the pork, garlic, rosemary, sage and red-pepper flakes.
  • In a small dry skillet, toast the coriander seeds until fragrant, 1 to 2 minutes. Transfer to a mortar and pestle and coarsely crush (or do this on a cutting board with the side of a heavy knife). Add crushed seeds to the pork and toss well. Refrigerate for at least 30 minutes or overnight.
  • Set the pressure cooker to the sauté function on medium. Add 1 tablespoon oil and let it get hot for a few seconds, then add enough pork chunks to fit comfortably in one layer with a little space around each piece. Let brown for 2 to 3 minutes per side, then transfer the cubes to a plate. Add a little more oil if the pot looks dry and continue browning the rest of the pork.
  • Add the wine to the pot and let simmer, scraping the browned bits from the bottom, until it reduces by half, about 2 minutes. Using kitchen shears or your hands, break the tomatoes into pieces and add them, along with their liquid, to the pot. Return pork to the pot, stir in carrots and 1/2 cup water.
  • Seal the pot and cook on high pressure for 45 minutes. Let the pressure release naturally.
  • Using a slotted spoon, transfer pork to a serving platter. Use a fat separator to separate the fat from the juices, or just spoon the fat off the top. (There may be a lot of fat.) If the sauce seems thin, use the sauté function to simmer it until it thickens. Stir in olives, then taste the sauce and add more salt, if you like.
  • Spoon the sauce over the pork, then top with chopped parsley or basil and serve.

  • SEAR: Pat the pork cheeks dry with some paper towel, then trim off any loose pieces of fat. Cut the pork cheeks into 2 x 3 inch / 5 x 7.5 cm pieces so that they’re evenly sized.   • PRESSURE COOK: Pour the broth over the browned pork cheeks, then add the mushrooms, leek, onion, garlic and sea salt. Check the rubber seal is in place on the lid, that the shield is in place, that the float valve moves freely and that the weight is set to the “sealing” position. Pop the lid on and lock it into the closed position. Use the “Meat and Stews” setting to pressure cook for 45 minutes, until the meat is fork tender.
  • BLEND: Carefully turn the weight to the “venting” position so that the pressure is quickly released. Remove the pork cheek pieces to a chopping board and use two forks to gently shred them into bite size pieces. Carefully transfer the cooked vegetables and all of the cooking liquid from the Instant Pot to a large blender and add the lemon juice. Make sure that the blender is large enough to handle 5 cups / 1.2 l of hot liquid, making sure to leave part of the lid open to allow steam to escape when blending, covered with a kitchen towel if needed. Blend until you have a smooth, sauce like consistency, then taste and add any extra salt, if needed.
  • SERVE: Transfer both the shredded meat and the blended liquid to the insert of the Instant Pot and stir through to combine into a silky smooth stew. You can either serve it immediately, or pop the insert back into the Instant Pot and use the “warm” setting to keep it hot until you’re ready to serve.
