2 cups 2% milk
1 ½ cups water
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 pinch salt
8 ounces sweetened condensed milk
¾ cup raisins

Steps:

  • Rinse rice until water runs clear. Strain out most of the water and add rice to a multi-functional pressure cooker (such as Instant Pot®). Add milk, water, vanilla extract, cinnamon, and salt and stir well. Close and lock the lid. Select the porridge function according to manufacturer's instructions; set timer for 20 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions for 10 minutes. Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Stir sweetened condensed milk into the rice pudding until combined. Stir in raisins and serve immediately.

2 large eggs
¼ cup raisins
1 teaspoon vanilla extract
½ teaspoon ground cinnamon

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Stir in milk and sugar. Warm the mixture, stirring continuously, until sugar dissolves, 3 to 4 minutes. Turn Instant Pot® off. Add rice. Close and lock the lid.
  • Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, at least 10 minutes.

Instant Pot Duo Nova (or other Instant Pot with porridge setting)
Silicone tipped spatula
Instant Pot hot pads
3/4 cup rice long-grain
3/4 cup of water
1/8 tsp salt
1 cup whipping cream
3 cups of milk whole
1/2 cup of white granulated sugar
1 teaspoon of vanilla extract
1 teaspoon cinnamon

Steps:

  • Pour all the ingredients into the Instant Pot. Mix to combine all rice pudding ingredients.
  • Close the lid and turn the pressure valve to sealing.
  • Select the "Porridge" mode on your Instant Pot for 20 minutes. Once it finishes cooking, allow for a 15 minute natural pressure release, and then let out any remaining pressure by turning or pushing the valve.
  • If the rice pudding is too thin for your taste, press cancel on the Instant Pot and then select sauté and cook for a short time to reduce, making sure to stir along the bottom every minute or so.
  • Top the Instant Pot rice pudding with cinnamon if desired, or even a mix of cinnamon and sugar.

3/4-1 cup sugar
1 pinch salt
1 quart milk or 1 quart half-and-half
1 (14 ounce) can evaporated milk
1 teaspoon vanilla
1 cup raisins (optional)
3 tablespoons cornstarch
3 tablespoons water

Steps:

  • In a large heavy-bottom saucepan, cook rice according to package.
  • Drain any additional liquid; add the sugar, pinch of salt, half and half, evaporated milk and vanilla.
  • Mix, and simmer on low heat for 20 minutes.
  • In a small bowl, mix the water and cornstarch together until smooth; add to the rice mixture; simmer for 20 minutes longer.
  • Let cool, add the raisins.

1 1/2 cups water
1/4 teaspoon salt
2 cups milk, divided
1/3 cup sugar
2 eggs
1/2 teaspoon vanilla extract
3/4 cup raisins

Steps:

  • In pressure cooking pot, combine rice, water, and salt. Lock the lid in place and select High Pressure and 3 minutes cook time. When beep sounds turn off pressure cooker and use a natural pressure release for 10 minutes. After 10 minutes, release any remaining pressure with a quick pressure release.
  • Add 1 1/2 cups milk and sugar to rice in pressure cooking pot; stir to combine.
  • In a small mixing bowl, whisk eggs with remaining 1/2 cup milk and vanilla. Pour through a fine mesh strainer into pressure cooking pot. Select sauté and cook, stirring constantly, until mixture starts to boil. Turn off pressure cooker. Remove pot from the pressure cooker. Stir in raisins.
  • Pudding will thicken as it cools. Serve warm or pour into serving dishes and chill.
  • Served topped with whipped cream, and a sprinkle of cinnamon or nutmeg, if desired.
  • The rice will continue to absorb liquid as it cools. Stir in additional milk or cream until your desired consistency is achieved.
