INSTANT POT BOLOGNESE SAUCE

1 Tbsp olive oil
1 lb. lean ground beef ((I use 90/10))
1/2 lb. Italian sausage
4 oz pancetta (diced)
1 medium yellow onion (minced)
1 - 2 medium carrots (peeled and minced)
1 stalk celery (minced)
7 cloves garlic (minced)
1/2 cup dry red wine
28 oz crushed tomatoes
1/4 cup tomato paste
2/3 cup beef broth - reduced sodium preferred ((or water))
1 Tbsp balsamic vinegar
1 1/2 Tbsp dried parsley
1 tsp kosher salt
1 tsp granulated sugar
1 tsp dried oregano
1/2 tsp dried thyme
1/4 tsp crushed red pepper flakes
1/4 tsp black pepper
1/4 cup heavy cream
1/4 cup chopped fresh basil

Steps:

  • Turn your Instant Pot on to "Saute", then add olive oil to the pot. Add the beef, Italian sausage, and pancetta and cook until browned, breaking up the meat with a wooden spoon as it cooks. Drain if needed, then return to pot.
  • Add onion, carrot and celery and cook for 4 more minutes, or until softened. Scrape the bottom of the pot with a wooden spoon as the onions, carrots and celery cook and give off liquid.
  • Add garlic and cook, until fragrant, about 30 seconds. Pour in red wine and cook, stirring often, until reduced, about 2 minutes.
  • Add all remaining ingredients (except for heavy cream and basil) and stir, scraping the bottom of the pot to ensure no browned bits remain.
  • Cancel the saute function, and secure Instant Pot lid, making sure the valve is set to "sealing". Press the Pressure Cook or Manual button and use the +/- buttons to set the timer for 20 minutes.
  • Once the timer beeps, let out the pressure by carefully moving the valve to "venting" to perform a quick release. When the pin drops, remove lid and set aside.
  • Select "saute" and select LOW. Stir in heavy cream and basil and simmer, uncovered, stirring often, until thickened to desired consistency, about 5-10 minutes.
  • Taste and adjust seasoning if necessary. Serve over pasta with grated Parmesan cheese and additional chopped basil if desired.

This Instant Pot meat sauce is thick, hearty, and flavorful. Make this pasta sauce recipe tonight for a quick and easy family favorite meal.

1 ½ tablespoons olive oil
½ cup white onion (diced)
1 cup carrot (diced)
½ cup celery (diced)
½ cup pancetta (diced)
2 pounds grass-fed ground beef
½ tablespoon clove garlic - minced
1 ½ tablespoon tomato paste
1 teaspoon dried basil
1 ½ teaspoons Italian Seasoning
1 teaspoon salt
black pepper to taste
½ cup beef stock
28 oz 1 can crushed tomatoes
2 cups any tomato sauce you prefer
2 bay leaves
2 tablespoons chopped fresh parsley leaves

Steps:

  • Set a 6-qt Instant Pot® to the high saute setting. Add olive oil, onion, carrot and celery. Cook, stirring occasionally, until onions in the pot are translucent, about 4-5 minutes.
  • Add pancetta and cook for 2 minutes or so. Add ground beef and cook it until it's browned about 7-10 minutes. Don't forget to use a wooden spoon to break the meat up into small pieces in the pot; drain excess fat.
  • Stir in garlic, tomato paste, dried basil, Italian seasoning, salt and black pepper.
  • Stir in beef stock, scraping any browned bits from the bottom of the pot. Stir in crushed tomatoes, tomato sauce and bay leaves.
  • Put on the lid, lock it and check to see if the vent is at sealing. Then, select manual setting; adjust pressure to high, and set time for 20 minutes. Mine took about 15 minutes to reach pressure. After the 20 minutes is up, do a Quick Release, which means move the valve to venting to release the steam.
  • Select low sauté setting and simmer the sauce uncovered for about 5 minutes. Don't forget to stir often. Garnish with fresh chopped parsley and serve immediately.

1 tablespoon olive oil
2 bone-in beef short ribs (about 2 pounds)
2 country-style pork ribs (about 1 pound)
1 large onion, finely chopped
6 cloves garlic, finely chopped
1/2 cup tomato paste
1/2 cup dry red wine
One 28-ounce can whole peeled tomatoes
4 links sweet or hot Italian sausage
Kosher salt and freshly ground black pepper
Crushed red pepper flakes, optional
1 pound ground beef sirloin
1/2 cup grated Parmesan
1/4 cup plain breadcrumbs
1/4 cup milk
1/4 cup chopped flat-leaf parsley
2 cloves garlic, grated
1 large egg
Kosher salt and freshly ground black pepper
Serving suggestions: pasta or polenta

Steps:

  • For the sauce: Add the oil to a 6-quart Instant Pot® and set to saute (see Cook's Note). Add the short ribs and brown well. Transfer to a plate, then add the pork ribs and brown well. Transfer to a plate. Add the onions and garlic and cook, stirring often, until the onions are golden and the garlic is soft, about 5 minutes. Add the tomato paste and stir well to coat all the onions. Pour in the wine and scrape up any browned bits on the bottom of the pot. Bring to a boil and let cook until reduced by half, about 2 minutes.
  • Stir in the tomatoes, then add the beef, pork, sausages, 1 tablespoon salt, several grinds of black pepper and a pinch of red pepper flakes if using.
  • Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on manual high setting for 50 minutes.
  • For the meatballs: Meanwhile, combine the sirloin, Parmesan, breadcrumbs, milk, parsley, garlic, egg, some salt and a few grinds of pepper in a medium bowl and mix well with a wooden spoon. Form into 1- to 2-inch balls.
  • After the pressure cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick release cycle is complete. Be careful of any remaining steam and unlock and remove the lid.
  • Carefully remove the beef, pork and sausage. Skim any excess fat from the sauce and discard. When cool enough to handle, remove and discard any bones and excess fat from the meat. Chop the meat and sausage into bite-size pieces. Return the meat to the sauce and add the meatballs to the pot. Seal the pot and cook at manual high pressure for 5 minutes.
  • After the pressure cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick release cycle is complete. Be careful of any remaining steam and unlock and remove the lid. Season with salt and pepper. Serve over pasta or polenta.
