INSIDE OUT SPRING ROLL SALAD

Steps:
- Soak the bean threads in warm water to cover for 10 minutes or till pliable. Drain, then cook in boiling water till the noodles expand and appear glasslike, 1-2 minutes. Drain, rinse with cold water and drain again. Cut into 4-inch lengths.
- Place in a large bowl along with the rest of the salad ingredients.
- In a small bowl whisk together the ingredients for the dressing till well combined; toss with the salad to evenly coat.
- Garnish with sesame seeds.

- 1. Mix all of the ingredients for the sauce in a bowl, set aside. 2. Cook the noodles in boiling water for 2-3 minutes or until al dente; do not overcook, or they will become mushy. Drain and run under cold water to stop cooking. 3. Toss noodles with dressing and put in freezer for 5 minutes 4. Add and toss remaining salad ingredients and enjoy!
SPRING ROLL SALAD WITH PEANUT DRESSING

- Put the noodles in a large bowl and cover with boiling-hot water; let stand 3 minutes, then drain and rinse under cold water to cool. Drain the noodles very well, then transfer them to a large mixing bowl and use kitchen shears to snip the noodles a handful of times.
- Add the carrots, bean sprouts, parsley, basil, mint, cucumber and romaine to the bowl with the noodles. Add the Peanut Dressing and toss to coat the noodles and vegetables. Transfer to a serving bowl and sprinkle with the chopped peanuts.
- Whisk together the peanut butter, lime juice, honey, vinegar, soy sauce, sesame oil, sambal oelek, ginger and garlic in a small bowl. Thin out with a little water until a nice spoonable consistency.

Steps:
- Toast the almonds in a 350 oven for 3-5 minutes, until golden brown. Set aside to cool.
- Whip the cream cheese until light and fluffy, 2-3 minutes.
- Stir in the vanilla and sugar.
- Trim a small slice off the bottom (pointed end) of the strawberry, so it will stand on a plate. Slice off the top of the strawberry. Hollow the strawberry using a small melon baller or spoon.
- Place the cheesecake mix in a ziploc bag and snip the end (or use a pastry bag). Fill the berries until the mixture pipes over the top.
- Arrange the toasted almonds over the top. Serve immediately or chill, covered, for up to two hours.

INSIDE OUT CHOCOLATE CHIP COOKIES
These chocolate chip cookies are inside-out because they're chocolate cookies with white chocolate chips. I found this recipe in a booklet at the grocery store years ago.

Steps:
- Heat oven to 350°F.
- Using a hand mixer, cream sugars, butter and shortening together until well mixed and fluffy, about 2 minutes.
- Add vanilla and eggs and mix well.
- Stir flour in it's container and spoon lightly into the measuring cup and level off when measuring.
- Stir flour, cocoa, baking soda and salt together in a bowl.
- Add flour mixture to creamed butter mixture and mix until well combined.
- Stir in white chocolate chips and nuts.
- Drop dough by rounded tablespoonfuls or a small cookie scoop about 2-inches apart onto ungreased or a parchment paper lined cookie sheet.
- Bake 10-12 minutes or until set when you touch the tops.
- Cool slightly; remove form cookie sheet.
- Cool on wire rack.
- Note: I always get better cookies that spread less when I chill my dough first.
- That's one of my cookie baking secrets.
INSIDE OUT BURGER
I came across this recipe idea when my husband & I watched "Man vs. Food" on the Travel Channel about these two restaurants in Minnesota. Anyways, it sounded so good & I was standing in my kitchen with all the ingredients so I tried to make it myself. It turned out very delicious!!!

- Heat grill to med-high heat. (We have a Jenn-Air built-in grill on our stove- great for rainy day grilling!)
- Pat ground chuck into 8 1/4-inch patties.
- Place on top of one patty 4 quarters of sliced cheese.
- Top with another patty & crimp the edges so the cheese doesn't melt out while cooking.
- Repeat Steps 3 & 4.
- Place on grill & cook 3-4 minutes, flip & cook 3-4 minutes on other side. (If you want the cool grill marks, cook for 1-2 minutes, then do a quarter turn.).
- Place burger on bun & top wih your favorite burger toppings & enjoy.

- Pour 1/4 cup dressing over shrimp in shallow dish; stir to evenly coat shrimp. Refrigerate 30 min. to marinate.
- Meanwhile, mix remaining dressing and lime juice until blended. Remove and discard seasoning mix from soup mix. Cook noodles as directed on package; drain.
- Drain shrimp; discard marinade. Add shrimp to large nonstick skillet; cook and stir on medium-high heat 5 min. or until shrimp turn pink.
- Cover platter with cabbage; top with noodles, shrimp, carrots, peppers, nuts and cilantro. Drizzle with dressing mixture.

- Wash your berries,cut off stems and hollow out a bit to resemble a small cup.
- Place chocolate chips and cream or Kahlua into a small bowl and nuke for 30 seconds on high.If not melted continue for 10 seconds each time until melted.
- Set aside until cooled just a bit.
- In a separate bowl,beat cream cheese and powdered sugar until fluffy.
- Add the chocolate mixture to cream cheese mixture and beat until combined.
- Put the finished mixture into a Ziploc bag and fill those strawberries up. Heap the chocolate onto the top a bit.
- Put them into the fridge for at least an hour and they last up to 24 hours -- if you can keep your hands off of them for that long. :).
