INSIDE OUT S'MORE BROWNIES
Inside Out S'more Brownies are the perfect solution for when you are craving a s'more but don't have a campfire handy!

Steps:
- In a medium saucepan melt butter and chocolate. Slightly cool.
- Preheat oven to 350 degrees.
- Line an 11x7 pan with parchment paper.
- Add sugar and eggs into butter and chocolate mixture and stir until combined.
- Add in vanilla.
- Add in in flour.
- Spread half of mixture into bottom of pan.
- Top with graham crackers. Breaking as necessary to fit into pan.
- Sprinkle with marshmallows.
- Carefully spread remaining batter onto of marshmallows.
- Bake for 25 minutes or until set.
- Cool on wire rack.
- Remove brownies from pan by lifting paper.

- Preheat oven to 350°F. Line a 11x7x1 1/2-inch baking pan with parchment paper or lightly grease the pan. Set pan aside.
- In a medium saucepan melt the butter and chocolate over low heat. Remove from heat. Stir in sugar, eggs, and vanilla until combined. Stir in flour.
- Spread half the batter in the prepared pan. Top with graham crackers (divide as needed to evenly top the batter). Sprinkle marshmallows on the graham crackers, but do not let them touch the sides of the pan. Carefully spread the remaining batter on the marshmallows and graham crackers, covering them completely.
- Bake brownies for 25 minutes or until set. Cool completely on a wire rack. Cut into bars.

- Preheat oven to 350
- Prepare brownie batter according to recipe
- Prepare an 8x8 pan by greasing the bottom and sides
- Pour half of the brownie mix into the pan
- Layer graham crackers evenly over the top of brownie mix
- Cover graham crackers with marshmallows, ensuring even layer
- Sprinkle chocolate chips over the top of the marshmallows
- Pour remaining brownie batter on top of the chocolate chips
- Bake for 35-40 minutes, or until brownies are done
- Cool for 20 minutes

S'MORES BROWNIES
Steps:
- For the graham cracker layer: Preheat oven to 350 degrees F. Grease and line an 8-inch square baking pan with parchment, leaving a 1-inch overhang on each side.
- Add the graham crackers, cinnamon, chili powder and salt to a food processor and pulse to break up. Add the butter and pulse until the ingredients are combined and the mixture resembles sand. Press the mixture into the prepared baking pan. Refrigerate while you make the brownie layer.
- For the brownie layer: Combine the eggs, sugars and vanilla extract in a large bowl. Mix until well combined. Add the melted butter, cocoa powder, flour, baking powder, cinnamon, ancho chile powder and salt. Stir to combine, but take care to not overmix. Add the chocolate chips and fold in.
- Spread the entire brownie layer mixture over the top of the graham cracker crust. Bake until the top is dry and firm, about 40 minutes. (A cake tester will not come out clean because the brownies are so fudgy!) Let them cool completely.
- For the marshmallow frosting: Turn the oven to the broil setting. Adjust the oven rack so it's 6 inches from the heat source.
- Spread the mini marshmallows on an unlined sheet tray, then broil until toasty and charred, about 1 minute. (As an alternative, use a kitchen torch and char until you have your desired level of darkness.) Let cool to touch.
- Add the butter and powdered sugar to a bowl and beat until fluffy and well mixed. Add the marshmallow creme and vanilla and stir until combined. Set aside.
- Spread the marshmallow frosting over the top of the cooled brownie. Add the charred mini marshmallows all over.
- Remove from the pan and cut into squares.

- Position a rack in the lower third of the oven and heat oven to 325 degrees F. Line an 8 by-8-inch square baking pan with foil so it hangs over the edges by about 1 inch.
- For the crust: Lightly butter the foil with some of the melted butter. Stir the rest of the butter together with the crumbs, sugar, and salt in a medium bowl. Press the crumb mixture evenly over the bottom of the pan. Bake until golden brown, about 20 minutes.
- Meanwhile, make the brownie. Put the butter and chocolate in a medium microwave-safe bowl. Melt in the microwave on 75 percent power for 2 minutes. Stir, and microwave again until completely melted, about 2 minutes more. Alternatively, put the butter and chocolate in a heatproof bowl. Bring a saucepan filled with 1 inch or so of water to a very slow simmer; set the bowl on the pan without touching the water. Stir occasionally until melted. Stir the light brown and white sugars, vanilla and salt into the melted chocolate. Add the eggs and beat vigorously to make a thick and glossy batter. Add the flour and stir until just incorporated.
- Pour batter into the prepared pan. Bake until the top is crispy and a toothpick inserted into the middle comes out mostly clean, with a few crumbs, about 40 to 45 minutes.
- Remove from the oven and carefully position a rack about 6 inches from the broiler and preheat on low. Layer marshmallows across the top and toast under the broiler until golden, (keep an eye on it, it can go quick), about 2 minutes. Cool on a rack, gently removing the brownies from the pan using the aluminum flaps. Carefully separate any marshmallow from the foil and fold away. Cut into 12 (2-inch) squares.
