- In a stockpot, heat butter over medium-high heat. Add onion and pepper; cook, stirring, until vegetables are crisp-tender, 3-4 minutes. Stir in flour and paprika until blended., Add potatoes; stir in broth. Bring to a boil; reduce heat and simmer, covered, until tender, 12-15 minutes., Stir in chicken, corn, sauces and salt; bring to a boil. Reduce heat and cook, uncovered, until corn is tender, 4-6 minutes. Add milk; heat through (do not boil).

- Spread about 2 tablespoons of beans on each tortilla. Combine soup and sour cream; stir in chicken. Spoon 1/3 to 1/2 cup down the center of each tortilla; top each with 1 tablespoon cheese. , Roll up and place seam side down in a greased 13x9-in. baking dish. Pour enchilada sauce over top; sprinkle with the onions, olives and remaining cheese. , Bake, uncovered, at 350° for about 35 minutes or until heated through. Just before serving, sprinkle lettuce around enchiladas if desired. Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

GINGERY CHICKEN SOUP WITH ZUCCHINI "NOODLES"
This immunity-boosting chicken noodle soup is just as comforting as your grandma's, but it's also gluten-free and paleo-friendly, thanks to a big helping of spiralized zucchini "noodles" instead of traditional wheat-based pasta. The homemade chicken broth is flavored with ginger in two ways: sliced ginger simmers slowly to lend warming background notes, while freshly grated ginger added at the end of cooking brings zippy flavor and extra health benefits.

- Scrub 2 carrots and cut into 2" pieces. Finely grate ginger to yield 1 tsp., then thinly slice remaining ginger. Place chopped carrots, ginger slices, chicken, onion, celery, garlic, peppercorns, and cilantro stems, if using, in stockpot. Fill with cold (preferably filtered) water to cover (about 4 quarts). Cover and heat over high until mixture comes to a low boil. Immediately reduce heat to medium-low and bring to a simmer. Cook, uncovered, skimming foam and fat from the surface occasionally and reducing heat if needed so mixture does not come to a boil, until chicken is just cooked through, about 30 minutes.
- Using tongs, carefully transfer chicken to a rimmed baking sheet. Let cool slightly, about 15 minutes. Remove meat from bones, discard skin, and return bones to pot. Continue to simmer until liquid is flavorful andreduced, about 2 hours. Shred chicken into bite-sized pieces and reserve.
- Peel remaining 2 carrots and cut into 1/4"-thick slices on the bias. Spiralize zucchini into noodles (alternatively, use mandoline with julienne blade). Divide zucchini noodles among bowls.
- Carefully strain broth into a large bowl or another pot (you should have about 8 cups). Return broth to stockpot and bring to a simmer. Add shredded chicken, sliced carrots, 1 tsp. grated ginger, 2 tsp. salt, and 3/4 tsp. pepper and cook until carrots are tender, 5-7 minutes. Remove from heat, taste, and adjust seasoning.
- Ladle soup over zucchini noodles and top with cilantro, if using. Serve with lime wedges alongside, if using.
- Do Ahead
- Soup (without zucchini) can be made 3 days ahead. Cover and chill, or freeze up to 6 months. When ready to serve, rewarm soup, spiralize zucchini, and divide zucchini among bowls. Ladle soup over zucchini.

ZIPPY HAMBURGER SOUP
I created this recipe 3 days ago when my cupboard was mostly bare and my 11 year old son requested a pot of soup for supper. The A1 sauce happened because I couldn't find my bottle of Worchestershire sauce, and took a chance. I only added it a touch at a time but it turned out to be one of the most flavorful and satisfying soups I've ever made, and the leftovers were even better the next day when the flavors had intensified. I used pre-browned ground beef from my freezer stash and put this soup from conception to table in 45 minutes. The A1 sauce brings a whole new depth of flavor and makes it truly delicious and satisfying. I did not have any kidney beans or I probably would have added a can. I also cannot guarantee the results using a different brand of Steak Sauce, experiment at your own risk! Of course, like any soup, you can use whatever veggies you have around, and can use any combination of fresh, canned, or frozen. This is just what I had on hand. I added the A1 at the end, and just barely allowed it to cook into the soup. You can add it earlier but it loses some of the tang, which is what we liked so much. I would suggest adding it a bit at a time, and tasting until it suits your taste. Season with salt/pepper as needed along the way. Serve this with a green salad and biscuits or your favorite crusty bread and your family will be licking the bowl :)

- Begin with ground beef (either freshly browned/drained/seasoned) or frozen, in soup pot, over medium heat.
- Add beef stock, onion soup mix, tomatoes (do not drain), Celery Salt, and 1 can of water (use empty tomato can- 28 oz, I guess). Mix well.
- Add potatoes and carrots and bring to a full simmer, until vegetables are fork tender (about 20 minutes depending on the size you cut them).
- Add drained beans/corn, and frozen peas.
- Add steak sauce at the end, allowing to cook just about 5 minutes to bring things together.
- This could easily be a crockpot recipe by putting the ground beef, onion soup, broth, tomatoes, potatoes and carrots on in the morning, and finishing by adding the other vegetables and A1 at the end.

ZIPPY CHICKEN & NOODLES CASSEROLE
Not your ordinary chicken & noodles, an unexpected ingredient really perks up this dish. What could that secret ingredient be? It happens to be one of my favorite things to sneak into a dish. FRESH LEMON JUICE! You've got to try this one. The lemon juice isn't overpowering; it just brings everything together with a snappy taste that you will love. Yes, it's just as tasty with leftover turkey! And don't worry if this makes too much for dinner. My kids always ask if there's enough left for them to take it in their lunches the next day. Some dishes just don't taste as good when you reheat them, but this one is great!

- In a large bowl, stir together the soup, mayonnaise, and lemon juice until well mixed.
- Add the remaining ingredients except for the crumbs, and GENTLY stir until combined.
- Pour into a lightly greased casserole dish, then top with potato chips or buttered crumbs.
- Bake at 350 degrees Fahrenheit, about 30 minutes or until hot throughout, and golden brown on top.
- If you like, you can make it in your microwave oven, rather than bake it in the oven.
- Here are the changes: Since I'm not going to be baking it, which would soften the veggies a bit, I microwave the onion and peppers in a glass measuring cup for just a couple minutes to make sure they're going to be tender enough in this dish.
- (Alternately, you could saute them on top of the stove) Then I combine as above, and put it in a microwaveable dish with a cover.
- I heat it on 70% for about 10 minutes, to get it hot and bubbly.
- Of course, this may take longer or shorter in your microwave, depending on starting temperature of ingredients, and the wattage of your oven.
- The last time I made this was for a church potluck dinner.
- I doubled it.
- The only thing large enough to hold it was my 5 quart crockpot, so I took out the removeable stoneware crock, greased it& filled it up.
- Mine has a glass lid, so I covered it with that and stuck the crock in the microwave oven.
- (Micro-cooking in a slow-cooker crock, stand back so you don't get sucked into the time warp!) If yours has a plastic lid, I take no responsibility if you melt it in the microwave.
- After it was good and hot, I plopped it into the electric jacket-thingy part of the crockpot cooker.
- I'm sure there's a technical name for it, but I don't know it.
- I had plugged it in and set it on low, so it was nice and warm already.
- I use a couple heavy rubber bands stretched across the handles to secure the lid.
- This whole thing I slid into a box I keep on hand for just this purpose, and cover with a towel, tucked around it.
- The crockpot fits snugly and no worries about it tipping over in the car.
- A friend once spilled an entire crockpot of french onion soup all over the floor of her minivan.
- I try to learn from OTHER people's mistakes!
