3 large eggs
1/2 cup 2% milk
1/3 cup all-purpose flour
1/4 teaspoon salt
3 tablespoons sugar, divided
1 tablespoon butter
1-1/2 cups fresh or frozen blueberries, thawed
1 medium ripe banana, sliced
1/4 teaspoon ground cinnamon

Steps:

  • Preheat oven to 400°. In a large bowl, whisk eggs, milk, flour, salt and 1 tablespoon sugar until smooth. Place butter in a 9-in. pie plate. Place in oven 2-3 minutes or until melted., Tilt pie plate to coat evenly with butter. Pour batter into hot plate. Bake 10-12 minutes or until sides are puffed and golden brown., Meanwhile, in a bowl, combine blueberries and banana. Remove pancake from oven. Top with fruit. Mix cinnamon and remaining sugar; sprinkle over top. Cut into wedges; serve immediately.

We adored this delicious tart and sweet fruit topping. If cherry pie filling is typically too sweet for you, the cranberry sauce takes the sweetness down a bit. It makes the cherries tart. Fresh blueberries push the topping over the top. This recipe is so simple and beautiful poured over pancakes. Don't limit yourself to pancakes. It would be delicious over waffles, French toast or even on top of vanilla ice cream. Something you can enjoy year around!

1 can(s) whole cranberry sauce, 14 oz.
1 can(s) cherry pie filling, 21 oz.
1 cup(s) fresh or frozen blueberries
1/4 cup(s) orange juice
1/4 cup(s) pancake syrup or (diabetic syrup)
dash(es) cinnamon, if desired

Steps:

  • Gather the ingredients.
  • Put all ingredients in a saucepan.
  • Heat through.
  • Serve warm over pancakes or waffles.
  • One more thing. If you don't like a certain fruit (say cherries) substitute can of strawberry pie filling. Don't like blueberries then leave them out. You can play around with this recipe to your liking. You can also add anything like lemon zest. Have fun with the recipe.

  • Pour into hot pie plate. Bake at 400 degrees F for 10 - 12 minutes or until edges are puffed and golden brown. Meanwhile, combine blueberries and bananas.
  • In a small bowl, combine cinnamon and remaining sugar. Spoon fruit mixture onto pancake; sprinkle with cinnamon-sugar. Cut into wedges.

More like a quiche than a pancake, this is a simple nutritious base for seasonal fruit. (Based on "Oven Puff with Fruit", from Great Good Food by Julee Rosso.)

2 eggs
2 egg whites
1/2 cup milk
1 tablespoon vanilla
salt
1/2 cup flour
lemon juice
sugar
2 cups mixed fruit (berries, melon, grapes, apple, etc.)

Steps:

  • Preheat oven to 425°F.
  • Lightly oil a 9-inch casserole and place in the oven.
  • Whisk together eggs, egg whites, milk, and vanilla.
  • Add a dash of salt.
  • Sprinkle flour over the mixture, and whisk to combine.
  • Pour the batter into the hot casserole.
  • Bake 15-20 minutes, until the top and edges are browned and beginning to crisp.
  • While the puff is baking, clean fruit and slice or shred to a consistent size, convenient for eating.
  • Remove from the oven, sprinkle with lemon juice and sugar, and fill with fruit.
  • Serve immediately. (The center will collapse soon after the puff comes out of the oven. That's fine, but the dish is not nearly as tasty if it sits and cool to room temperature.).

Pears, plums, berries, under-ripe bananas, etc. can be substituted for the apples-depending on the season. Muscovado replaced plain ol' brown sugar, honey for maple syrup, heavy cream for milk, one teaspoon ground cinnamon in original recipe was replaced with Recipe #266688-in my lame attempt to "anglicize" the recipe. For our small family, this recipe was cut in half (although with the same amount of fruit) and I also baked the pancake in an eight inch cast iron skillet instead of a pie pan. Puffy pancake pulls double duty as both a breakfast entree and dessert. Local recipe.

1/4 cup unsalted butter (1/2 stick)
1/4 cup muscovado sugar or 1/4 cup brown sugar
1/2 teaspoon english mixed spice or 1 teaspoon ground cinnamon
1 apple, peeled, cored and thinly sliced
5 large eggs
1/2 cup heavy cream or 1/2 cup milk
1/2 cup all-purpose flour
1 dash salt
maple syrup, for serving or confectioners' sugar, for serving, honey for serving

Steps:

  • Note: the pancake will not puff up high like a Dutch baby does.
  • Heat oven to 425 degrees.
  • Place the butter, brown sugar and cinnamon in an 8-inch cast iron skillet or a 9-inch glass pie plate. Heat in the oven until the butter is melted and bubbly - 5 minutes.
  • Remove from the oven, stir well and mix in the apple slices.
  • Return to the oven and bake for 2 minutes.
  • Meanwhile, combine the eggs, milk, flour and salt in a blender or food processor and process until frothy - 1 minute. Pour over the apple mixture.
  • Bake until the cake is puffed and the center is set - 18 to 20 minutes.

3 tablespoons butter
3 eggs
3/4 cup all-purpose flour
3/4 cup milk, heated 20 to 30 seconds in the microwave
1 tablespoon sugar
2 teaspoons pure vanilla extract
Pinch salt
Confectioners' sugar, for dusting

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the butter in a large, ovenproof, nonstick saute pan and place in the oven.
  • Meanwhile, in a blender, combine the eggs, flour, warm milk, sugar, vanilla extract and pinch of salt, and blend on medium-high speed until uniform. (If mixing by hand, combine the eggs with the milk until the mixture is light yellow and no longer stringy, about 1 minute. Add the flour, sugar, vanilla, and pinch of salt, and whisk vigorously to remove the lumps, about 30 seconds.)
  • Carefully remove the hot pan from the oven. The butter should be melted. Swirl the butter around the pan to coat completely, and then pour the remaining butter into the batter and pulse to blend. Pour the batter into the hot pan and return the pan to the oven. Cook until the pancake is puffed in the center and golden brown along the edges, 20 to 25 minutes.
  • Using a spatula, remove the entire Dutch baby from the pan and place on a cooling rack for a few minutes to allow the steam to escape without condensing along the bottom and rendering the pancake soggy. Dust with confectioners' sugar when cooled slightly. Slice the pancake into 8 wedges on a serving platter or cutting board.

6 eggs
1 cup flour
1/3 cup sugar
1/8 teaspoon salt
1 cup milk
1 teaspoon almond extract or 1 teaspoon vanilla extract
2 cups peeled and sliced fresh peaches (3 medium)

Steps:

  • Heat oven to 375°.
  • Spray 2 1/2 quart casserole or 9x13 baking dish, with cooking spray.
  • Melt butter in baking dish in oven.
  • Beat eggs slightly in large bowl with wire whisk.
  • Beat in flour, sugar, salt, milk and almond or vanilla extract until smooth.
  • Stir peaches into butter in baking dish. Return to oven 2 or 3 minutes until sizzling.
  • Pour batter over peaches.
  • Bake about 20 minutes or until puffed and golden.
  • Serve with warmed Peach preserves, if desired or Maple syrup.

  • You may substitute 1 bag (16 oz) frozen sliced peaches, thawed and drained or canned sliced peaches.

Steps:

  • Preheat oven to 400°F.
  • Place a 12" skillet (with an oven-proof handle) in the oven to heat.
  • Meanwhile, make the batter. In a medium sized bowl, use an electric hand mixer to beat eggs until frothy. Beat in flour, milk and salt on medium speed for about 1 minutes.
  • Remove skillet from oven. Put butter in skillet and swirl until all of the butter has melted and coated the skillet.
  • In a small bowl, mix the sugar and cinnamon. Toss with apple slices to coat.
  • Arrange coated apple slices in skillet and pour the batter over. Bake uncovered for 25 minutes or until pancake is puffy and golden brown.
  • Cut into quarters and serve.

1/2 cup flour
1/4 teaspoon salt
1/2 cup milk
1 1/2 teaspoons vanilla

Anjou pear, 8-oz . pkg.
1/2 cup jet-puffed marshmallow creme
1 cup sliced strawberry
2 medium peaches, peeled, sliced
1 cup blueberries
cinnamon, to taste

Steps:
