BASIC VANILLA CAKE

- Preheat the oven to 350 degrees F. Butter two 9-inch-round cake pans and line the bottoms with parchment paper; butter the parchment and dust the pans with flour, tapping out the excess.
- Whisk 3 cups flour, the baking powder and salt in a bowl until combined. Beat 2 sticks butter and the sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 3 minutes. Reduce the mixer speed to medium; beat in the eggs, one at a time, scraping down the bowl as needed. Beat in the vanilla. (The mixture may look separated at this point.) Beat in the flour mixture in 3 batches, alternating with the milk, beginning and ending with flour, until just smooth.
- Divide the batter between the prepared pans. Bake until the cakes are lightly golden on top and a toothpick inserted into the middle comes out clean, 30 to 35 minutes. Transfer to racks and let cool 10 minutes, then run a knife around the edge of the pans and turn the cakes out onto the racks to cool completely. Remove the parchment. Trim the tops of the cakes with a long serrated knife to make them level, if desired.
BASIC CHOCOLATE CAKE

- Preheat the oven to 350 degrees F. Coat two 9-inch-round cake pans with cooking spray and line the bottoms with parchment paper.
- Whisk the cocoa powder and 1 1/2 cups boiling water in a medium bowl until smooth; set aside. Whisk the flour, sugar, baking powder, baking soda and salt in a large bowl until combined. Add the eggs, vegetable oil, sour cream and vanilla and beat with a mixer on medium speed until smooth, about 1 minute. Reduce the mixer speed to low; beat in the cocoa mixture in a steady stream until just combined, then finish mixing with a rubber spatula. (The batter will be thin.)
- Divide the batter between the prepared pans and tap the pans against the counter to help the batter settle. Bake until a toothpick inserted into the middle comes out clean, 30 to 40 minutes. Transfer to racks and let cool 10 minutes, then run a knife around the edge of the pans and turn the cakes out onto the racks to cool completely. Remove the parchment. Trim the tops of the cakes with a long serrated knife to make them level, if desired.

HOW TO BAKE CAKES IN CANS- AKA TIN CAN CAKES
This is a great, easy way to bake small cakes for 2 people. They're a fun project for kids and adults alike. I have several "little" recipes for cakes and desserts for just 2 people and all of them can be baked in tin cans using this technique. - You'll need 2 cans and a good can opener. I like to use the cans that are left from pie filling (21 oz). They are kinda wide and I find them easier to work with. They must be cleaned and free of dents (dents will stop the cake from popping out).
- The important thing is to open the cans cleanly with no jagged edges which will tear the cakes when removing them and cut your hands.
- The second important thing is to grease and flour the can very well and line the bottom with a little circle of greased parchment paper. You can use the standard butter or shortening and flour but I prefer to spray them with Baker's Joy. It's just so much simpler.
- I make the recipes right in a 4 cup measuring cup and then simply pour/scrape the batter into the center of the cans. If you don't have one of those, drop the batter off of a serving spoon into the center of the can. Try to smooth the tops a little with a narrow rubber spatula. Tap the cans on the counter gently to remove air pockets. Bake according to your recipe.
- Test for doneness using a long thin skewer.
- After you bake the cake according to the recipe, let it cool on a rack for 10 minutes just like usual then run a thin knife around the edge of the cake and pop it out. Cool completely on the rack.
- If the cake gets totally stuck, cut the bottom of the can off with your can opener and push the cake gently up out of the can (sort of like a push-up pop ice cream). Gently remove the can bottom from the cake with a thin knife.
- Once the cake is cool, carefully slice it in half horizontally to make your 2 layers. Fill and frost according to your recipe.
- Be very careful during this whole process not to cut yourself on the rims of the cans and supervise children when they're handling the cans.
- Replace the cans after 2 or 3 uses or when you see any rusting or discoloration.
CAKE FORMULA
Being a baking novice, I've wondered how a baker can create a cake recipe from scratch and know that it will work. When I found this "formula" I then understood the math and balancing of ingredients by WEIGHT not volume. Having the right proportions of flour, eggs, sugar, liquid and fat makes all the difference between the "rise & fall" of baked goods. The following is an *example* of the formula at work and not meant to be a specific cake recipe.

- Basic formula, using weight, not volume:.
- Sugar = flour.
- Eggs = fat.
- Eggs + Liquid =Sugar.
- 1 teaspoon of baking powder for every 1 cup of flour.
- 1/4 teaspoon baking soda for each 1 cup of flour (baking soda is used if the recipe has a considerable amount of acidic ingredients).
- Don't forget the 1/2 teaspoon of salt as a flavor enhancer.

- Making a homemade sponge cake was never so easy. Begin by mixing sugar and butter together. Whisk well until light and fluffy with a manual whisker or a fork. Once done, add the beaten eggs and blend well. Beat further so that the mixture turns white and creamy.
- Sift together the all-purpose flour and baking soda. It is done to evenly distribute the baking soda in flour. Gradually, add this to the egg mixture. If required, add a little milk and mix till the batter is fluffy and soft. You may not add the entire milk if you feel the consistency of your cake is fine and it pours down like canned condensed milk. Add vanilla essence and blend well. Vanilla essence is important to camouflage the smell of eggs.
- Sprinkle some maida on a greased baking tin. It will prevent sticking of the cake to the base. You can also line it with a butter paper. Pour the prepared mixture into the tin and place it on a stand in a pressure cooker. Do not add water in the cooker and ensure that the tin does not touch the base of the cooker. You can also keep the baking dish on an inverted steel plate. Increase the flame and pressure cook for two minutes. Now remove the whistle and cook on low flame for 35-40 minutes. If you are using an electric oven, cook at 180 degrees for 30-35 minutes.
- Insert a knife or a metal skewer into the cake and if it comes out clean, then the cake is ready. Remove from the oven/cooker and allow to cool on a wire rack.

- Vanilla. Pure vanilla extract! Nothing else. It gives baked products a warm, zesty fragrance, and flavour. It's accessible both as paste and liquid, and a little, lasts way longer.
- Spices. Ground cinnamon is the one that every baker needs and is ready for use. A few more like allspice, ground cloves, ginger, ground nutmeg, etc. will do wonders for you!
