INFINITY POOL (BATCHED MEZCAL COCKTAIL WITH CELERY AND LILLET)
This easy large-format pitcher drink has savory mezcal, celery juice, fruity Lillet blanc, and lemon.
Provided by Maggie Hoffman
Yield Makes about 10 cocktails in a 2-quart pitcher
Number Of Ingredients 8
Steps:
- Up to 1 day before serving, make the batch. Pour chilled mezcal, chilled Lillet blanc, chilled simple syrup, celery bitters, and water into a 2-quart pitcher and stir to mix. Seal well, covering with plastic wrap if needed, and refrigerate.
- Up to 2 hours before serving, prepare celery and lemon juices and stir into pitcher mix. Reseal and return to refrigerator if not serving immediately.
- To serve, stir mixture well. Place a large ice cube in each rocks glass, then pour in cocktail and garnish with a small pinch of smoked salt and a lemon wheel, if desired.
EVERYTHING GOOD COCKTAIL
This make-ahead cocktail, created by San Francisco bartender Gillian Fitzgerald, is lightly smoky and wonderful with dessert. The chocolate bitters make the drink-and they're available online. Adding water along with the ingredients, then freezing the batched drink, means you won't need to shake it over ice.

Steps:
- Mix honey and 2 Tbsp. boiling water in a quart-size jar. Stir to dissolve honey; let cool. Stir in mezcal, orange liqueur, bitters, and 1/2 cup plus 1 Tbsp. water. Seal and freeze at least 2 hours and up to 2 weeks.
- To serve, turn jar gently to mix. Place ice in a rocks glass and pour in cocktail. Squeeze oils from orange twist over, rub peel around rim of glass, then garnish glass with peel.
ARINATO (LILLET AND MEZCAL COCKTAIL)
I created the Arinato to be a lighter stirred drink and to celebrate the more delicate sides of mezcal. I use the 80-proof Ilegal Joven; paired with floral fortified wines, it makes for an easy-sipper that proves how elegant mezcal can be.

- Mezcal Cocktail with Hibiscus and Cilantro. Steeping hibiscus flowers (or hibiscus tea) gives you a liquid that's tart, tangy, and tannic—ideal for mixing with mezcal, fresh lime, and cilantro for a bit of savory complexity.
- Oaxaca Old Fashioned. If we had to select just one essential agave spirit-based cocktail to try, it would be this riff on the Old Fashioned, made with aged tequila, mezcal, and agave nectar.
- Mezcal Mule. If you like you drinks gingery—and who doesn't?— then you'll love this fresh spin on the Moscow Mule. Using mezcal instead of vodka means a much more flavorful beverage.
- Killer Bee. This spin on the Bee's Knees comes from Nopalito in San Francisco (and their cookbook by the same name.) The mezcal adds a savory note that really works with the earthy honey.
- Marrakesh Express. In this mezcal cocktail from The One-Bottle Cocktail, fresh pomegranate juice truly shines, with a backdrop of savory harissa heat. Get This Recipe.
- Mezcal Sour. This cocktail gets its lofty, fluffy froth from egg whites and two-step mixing technique. The first shake, without ice, helps create the foam.
- La Pina. Smoky mezcal, fresh pineapple juice, serrano chile, and cilantro make for a wonderfully well-rounded, refreshing drink from Amá: A Modern Tex-Mex Kitchen.
- Paloma. Squirt soda makes a great Paloma, but this version starts with fresh grapefruit. You can make it with tequila, but we really recommend trying it the mezcal way.
- Infinity Pool. If you have a juicer at home, put this savory and refreshing celery and mezcal cocktail on your happy hour menu tonight. A bit of Lillet fills out the drink nicely, and smoked salt makes it even better.
